Amazingly Easy Irish Soda Bread image

A good old fashioned soda bread with just the basic ingredients. Buttermilk gives this crusty loaf a good flavor. The best Irish soda bread around!

4 cups all-purpose flour
4 tablespoons white sugar
1 teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
½ cup margarine, softened
1 cup buttermilk
1 egg
¼ cup butter, melted
¼ cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet.
  • In a large bowl, mix together flour, sugar, baking soda, baking powder, salt and margarine. Stir in 1 cup of buttermilk and egg. Turn dough out onto a lightly floured surface and knead slightly. Form dough into a round and place on prepared baking sheet. In a small bowl, combine melted butter with 1/4 cup buttermilk; brush loaf with this mixture. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Check for doneness after 30 minutes. You may continue to brush the loaf with the butter mixture while it bakes.

Number Of Ingredients 9

4 cups all-purpose flour, plus extra for the currants
4 tablespoons sugar (if you like your bread less sweet, use just 2 or 3 tablespoons)
1 teaspoon baking soda
1 1/2 teaspoons kosher salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
13/4 cups cold buttermilk, shaken
1 extra-large egg, lightly beaten
1 teaspoon grated orange zest
1 cup dried currants

Steps:

  • Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
  • Combine the flour, sugar, baking soda and salt in the bowl of an electric mixer fitted with a paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
  • With a fork, lightly beat the buttermilk, egg and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
  • Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
  • Cool on a baking rack. Serve warm or at room temperature.

1/4 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup cold butter, cubed
2 eggs, lightly beaten
1 cup buttermilk
1/2 cup raisins or 3 tablespoons caraway seeds

Steps:

  • Preheat oven to 375°. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until crumbly. In a small bowl, whisk eggs and buttermilk; stir into flour mixture just until moistened. Fold in raisins. Turn onto a lightly floured surface; gently knead 5-6 times., Divide dough in half; shape each portion into a round loaf. Place 6 in. apart on a greased baking sheet. , Bake until golden brown, 30-35 minutes. Transfer to a wire rack to cool.

2 cups whole wheat flour
2 teaspoons baking soda
1 tablespoon baking powder
2 tablespoons brown sugar
2 1/2 cups buttermilk

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Grease two loaf pans.
  • Sift all-purpose flour, whole wheat flour, baking soda and baking powder together into a large bowl.
  • Add brown sugar and stir well to incorporate, being very careful to break up any lumps of brown sugar.
  • Add buttermilk and stir well.
  • Divide the dough between the two prepared loaf pans.

2 tablespoons melted unsalted butter (plus softened butter for greasing the baking sheet)
1 1/2 cups whole-wheat flour, plus more for the baking sheet
3/4 cup flour
1 tablespoon dark or light brown sugar
2 teaspoons caraway seeds
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon molasses
1 cup buttermilk

Steps:

  • 1 Position a rack in the middle of the oven; preheat to 375 degrees
  • 2 Lightly grease a rimmed baking sheet with softened butter, then sprinkle lightly with whole-wheat flour; tap to discard any excess flour
  • 3 Combine both flours, brown sugar, caraway seeds, baking soda and salt in the large bowl of a stand mixer or hand-held electric mixer
  • 4 Mix to combine on low speed; add the melted butter
  • 5 Combine the molasses and the buttermilk, then add to the mixer bowl, on low speed; beat for a minute or two, until a soft dough forms
  • 6 Gather the dough into a ball and roll it around in the palms of your hands to smooth it; the dough will not be perfectly smooth
  • 7 Form into an 8-inch long oval and place on the prepared baking sheet
  • 8 Use a smooth-edge knife to cut a slash about 5 inches long and about 1 inch deep along the length of the loaf
  • 9 Bake for 30 to 35 minutes, until the bread feels firm and crisp and you can see that the bottom has browned when you lift it carefully
  • 10 Transfer to a wire rack to cool

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.
