CINNAMON LATTE

These have become a Sunday morning favourite for us. Heavenly coffee to warm your tummy! The original recipe calls for ground cinnamon, but it also works very well if you put a couple whole cinnamon sticks or pieces of cinnamon bark in the cold milk. It will infuse the milk as it comes to a boil.

400 ml strong coffee
1 teaspoon ground cinnamon
2 tablespoons sugar
1 1/4 liters 1% low-fat milk

Steps:

  • In a large pan, mix the cinnamon and sugar with a bit of milk.
  • Add the rest of the milk and bring to a boil.
  • Just as the mixture comes to a boil, take it off the heat.
  • Split your hot coffee between 4 mugs.
  • Pour in the milk and serve immediately.
  • Another variation is to leave out the ground cinnamon, but instead put a large cinnamon stick, some cloves and green cardamom pods in the milk. Leave as it comes to a boil, set aside and let it infuse for a couple minutes. Then strain out the seasonings and pour into the coffee.

A combo I came up with this morning from the syrups I had on hand. I use recipe #37023 and store bought Irish cream syrup. You could even use Baileys & have this as a nightcap.

10 ml irish cream syrup (1/3 ounce)
1/4-1/3 cup freshly brewed espresso

6 cups brewed coffee, double strength (see Note)
2 cups half-and-half cream
1 cup sugar
1 teaspoon vanilla
3 cinnamon sticks, plus additional for garnish
whipped cream

Steps:

  • Blend coffee, half-and-half, sugar, and vanilla in a slow cooker. Add cinnamon sticks. Cover; cook on high for 3 hours.
  • Remove cinnamon sticks. Serve latte in tall coffee mugs with dollop of whipped cream and cinammon sticks if desired.
  • NOTE: Double the amount of coffee grounds normally used to brew coffee, or substitute 8 teaspoons instant coffee dissolved in 6 cups boiling water.

2 -3 ounces espresso, freshly steamed
1 1/2 cups milk
1 teaspoon cinnamon, ground
1 teaspoon brown sugar
1 teaspoon white sugar
2 tablespoons chocolate syrup
whipped cream, for topping

Steps:

  • Evenly distribute chocolate between two coffee mugs. I like to be very generous.
  • Steam milk, cinnamon and sugars until temp reaches between 150-160 degrees.
  • Pour evenly into mugs.
  • Steam espresso and pour about an ounce (or more if you like) into each mug.
  • Stir and top with whipped cream.
  • Garnish with cinnamon sugar if desired.
