CAMPARI SORBETTO (INTERMEZZO) FROM THE HAGS



Campari Sorbetto (Intermezzo) from the Hags image

Sorbetto is a dessert -- intermezzo is a palate cleanser. This sharp-tasting ice is a bit of both, and highlights Italy's love of Campari and citrus flavours. Enjoy it between courses, or let it be a light touch to finish off an opulent and rich meal. The jovial and playful Bum Bag Hags created this Italian-type dish for the Zaar World Tour in mid-2008. Recipe can easily be halved.

Number Of Ingredients 4

4 to 5 pink grapefruits, juice of
120 g caster sugar (4 ounces)
1/2 cup campari
4 -5 drops Angostura bitters

Steps:

  • Mix together all ingredients until sugar dissolves.
  • Churn in an ice cream maker, according to manufacturer's instructions.

CUCUMBER AQUAVIT GRANITA

This granita is not particularly sweet and is best served as a first or intermezzo course. Try it on top of raw oysters or thick tomato slices.

Yield Makes about 6 cups

Number Of Ingredients 6

3 large English cucumbers, peeled and seeded
1/2 cup superfine granulated sugar
1/4 cup water
1/2 cup aquavit
1/2 teaspoon fresh lime juice
1/8 teaspoon salt

Steps:

  • Coarsely chop enough of cucumbers to measure 4 1/2 cups and purée in a blender with remaining ingredients in 2 batches until smooth. Pour into an 8- to 9-inch baking pan.
  • Freeze, stirring and crushing lumps with a fork every hour, until evenly frozen, about 4 hours total. Scrape with a fork to lighten texture, crushing any lumps.
  • Serve immediately or freeze, covered, up to 3 days (rescrape to lighten texture again if necessary).

Pair this refreshing granita with fresh fruit for a light dessert, or serve it as a palate cleanser, or intermezzo, between courses.

2 large cucumbers (about 1 3/4 pounds)
1 1/4 cups Riesling or other sweet white wine
2 teaspoons superfine sugar
1/2 teaspoon salt
Pinch of freshly ground pepper

Steps:

  • Wash cucumbers, and pass through a juicer. Place in an 8-inch square metal baking pan, and add remaining ingredients. Stir to combine, and place in the freezer, uncovered, 1 hour; remove from freezer, and stir with a fork.
  • Return to freezer until mixture is frozen and granular, about 3 hours, stirring every 30 to 45 minutes. Serve, or cover with plastic wrap, and store in the freezer up to 2 weeks.

300 ml lime juice, freshly squeezed
700 ml water
300 g sugar
200 g pomelo fruit
3 whole limes, frozen

Steps:

  • Boil sugar, lime juice and water.
  • cool & pour mixture into ice cream maker and let it run for 20mins.
  • when it is ready, transfer it into container, fold in pomelo and fill it into mould in the shape of the lime.
  • put it into freezer.
  • to serve, take out sherbet from the mould & place on top of frozen whole lime.

  • In the sauce pan, bring the sugar and water to a boil over medium high heat, just until the sugar dissolves. Remove from heat.
