INDIVIDUAL ORANGE CRANBERRY BISCUITS



Individual Orange Cranberry Biscuits image

An apple a day may or may not keep the doctor away, but apples do add wonderful flavor, moisture, and sweetness to these delicious pancakes. Try them topped with homemade applesauce.

Yield 12 biscuits

Number Of Ingredients 12

1 1/4 cups (150 g) whole wheat flour, preferably homemade
1 cup (125 g) unbleached all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 1/4 cups (300 ml) plain 0% Greek yogurt, stirred
1/4 cup (60 ml) fresh orange juice
1/3 cup firmly packed (73 g) light brown sugar
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1 cup (100 g) frozen cranberries, coarsely chopped
1/4 cup (60 ml) reduced-fat (2%) milk

Steps:

  • 1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • 2. Combine the flours, baking powder, baking soda, and salt in a medium bowl.
  • 3. Place the yogurt, orange juice, brown sugar, orange zest, and vanilla into the Vitamix container in the order listed and secure the lid. Select Variable 1. Turn the machine on and slowly increase the speed to Variable 10, then to High. Blend for 20 seconds.
  • 4. Pour the yogurt mixture into the flour mixture and fold in the cranberries.
  • 5. On a floured surface, pat the dough into a 9-inch (23-cm) round about 1/2 inch (1.3 cm) thick. Cut into 12 wedges.
  • 6. Place the wedges on the baking sheet and brush the tops with the milk. Bake for 30 to 35 minutes, until lightly browned.
  • 7. Remove from the baking sheet and cool on a wire rack.

Number Of Ingredients 15

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon grated orange zest
1/2 teaspoon ground cinnamon
1/4 cup shortening
1/4 cup cold butter
3/4 cup 2% milk
1/4 cup orange juice
1 cup dried cranberries
1/2 cup white baking chips
DRIZZLE:
1-1/2 cups confectioners' sugar
2 tablespoons orange juice
1/4 teaspoon orange extract

Steps:

  • In a large bowl, combine the first five ingredients. Cut in shortening and butter until mixture resembles coarse crumbs. Stir in milk and orange juice just until moistened. Stir in cranberries and baking chips. , Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll out to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter., Place 2 in. apart on a greased baking sheet. Bake at 400° for 12-16 minutes or until lightly browned. In a small bowl, combine the confectioners' sugar, orange juice and extract; drizzle over biscuits. Serve warm.

  • Pre-heat the oven to 425°F and arrange a shelf slightly below the center of the oven. Line a buttered 8-inch square cake pan with parchment paper or a silicone liner.
  • Combine the self-rising flour and sugar in a large mixing bowl. Grate the butter into the flour and stir it in to coat evenly. Stir in the chopped cranberries, zest of 1 orange and pecans. Gently stir in the buttermilk. The dough should be quite wet.
  • Spread the all-purpose (not self-rising) flour out on a small cookie sheet. With a spoon, scoop evenly sized balls of dough into the flour, making sure they don’t touch each other. With floured hands, coat each dough ball with flour and toss them gently from hand to hand to shake off any excess flour. Place each floured dough ball into the prepared pan, right up next to the other. This will help the biscuits rise up, rather than spreading out. You might need to do the above in batches.
