INDIAN - PILAU RICE
An easy rice recipe to serve with any Indian curry dish. It's important to rinse the rice thoroughly and not skip the 30 minutes soaking time. From Cooking School India Cookbook

Steps:
- Rinse the basmati rice for several changes of water, until the water runs clear.
- Leave the rice to soak for 30 minutes. Drain and then set aside until ready to cook.
- Heat the ghee in a large heavy-based saucepan.
- Add the cardamons, cloves and peppercorns. Fry, stirring for one minute.
- Add the rice andstir-fry for a further 2 minutes.
- Add theremaining ingredients to the rice mixture and reduce the heat.
- Cover the saucepan and leave to simmer over a low heat for 20 minutes, until all the water has evaporated.
- Transfer the rice to a large, warmed serving dish and serve hot.

- Bring water and chicken broth to a boil.
- Combine rice, curry powder, garlic powder, cinnamon, paprika, and cloves in a bowl; stir to mix. Add spiced rice and onion to the boiling broth. Cover and cook until rice is tender, 20 to 25 minutes.

Steps:
- Preheat the oven to fan 160C/conventional 180C/gas 4. You will need a medium casserole with a lid. Rinse the rice well in a large bowl of water, then drain.
- Melt two-thirds of the butter in the casserole and sauté the onion for about 5 minutes. Add the rice, stir well, then add the herbs, whole spices and lemon zest and cook for a minute. Now pour in the boiling stock or water and mix into the rice, along with 1½ tsp sea salt and ground black pepper to taste.
- Cover and bake for 25 minutes. Leave to stand for 5 minutes, then remove the lid and fork through the remaining butter until the rice is fluffy and separated.
