This is a really good recipe for spicy Indian chicken curry. It's pretty easy to make and tastes really good!

2 pounds skinless, boneless chicken breast halves
2 teaspoons salt
½ cup cooking oil
1 ½ cups chopped onion
1 tablespoon minced garlic
1 ½ teaspoons minced fresh ginger root
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon water
1 (15 ounce) can crushed tomatoes
1 cup plain yogurt
1 tablespoon chopped fresh cilantro
1 teaspoon salt
½ cup water
1 teaspoon garam masala
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lemon juice

Steps:

  • Sprinkle the chicken breasts with 2 teaspoons salt.
  • Heat the oil in a large skillet over high heat; partially cook the chicken in the hot oil in batches until completely browned. Transfer the browned chicken breasts to a plate and set aside.
  • Reduce the heat under the skillet to medium-high; add the onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture; allow to heat together for about 1 minute while stirring. Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.
  • Cover the skillet and simmer until the chicken breasts are no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle with lemon juice to serve.

INDIAN CHICKEN CURRY (URBAN RAJAH)

This is a modified version of an authentic curry from the Urban Rajah's web site. It also works great with fish, too. To make it a little more carb friendly, I serve it on steamed baby spinach, rather than rice. When using fish, I will add in a little light cream during the simmer time; with chicken, I add in a little chicken stock.

2 lbs chicken parts
2 medium onions, chopped
2 medium tomatoes, chopped
1 tablespoon coarsely chopped garlic
1 tablespoon grated fresh ginger
3/4 teaspoon turmeric powder
2/3 cup plain yogurt
3 green chilies, chopped
1 teaspoon coriander seed
1 teaspoon cumin seed
3 geen cardamom pods
6 cloves
1 teaspoon garam masala
salt and pepper
ghee or butter
1 1/2 cups coriander leaves

Steps:

  • For the marinade, mix the yoghurt, salt, turmeric and the chopped chillies. Chop up or joint the chicken and coat it in the marinade and leave covered to stand at room temperature for an hour (to prevent it from splitting when cooked). Chop the onion and tomatoes into small chunks and reserve. In a large pan over a medium melt your ghee or butter until it begins to sizzle, and pop in the coriander and cumin seeds plus the cardamom, cloves, a little salt and onions, frying until the onions brown a little.
  • Next, drop in the ginger and garlic and cook for approximately 5, gently stirring then add the chopped tomatoes and garam masala, stirring for another 5 minutes or so until the mix is bubbling gently and on the verge of being a little sticky. Now it's time for the chicken to join the party, (but hold back 2 tbs of the yoghurt mix) so add the pieces and fry on high for 3/4 minutes until the meat has turned from raw to white. Turn the heat down to low, cover and cook for a further 25 minutes, adding a little water to stop it from sticking, check regularly and fold in the rest of the yoghurt after 10 minutes. Keep an eye on this dish and make sure that you regularly stir it to keep the yoghurt from splitting. Either serve straight away, (or keep for the next day, tends to taste better) garnishing with coriander.
  • Ravish the chicken curry with rice or chapattis.

4 boneless skinless chicken breasts
4 garlic cloves, finely chopped
2 tablespoons fresh ginger, finely chopped
1 medium yellow onion, julienned
4 tomatoes, diced
2 teaspoons cumin
2 teaspoons turmeric
2 -6 teaspoons curry powder
2 -6 teaspoons garam masala
1 stick cinnamon
1 cup tomato sauce

Steps:

  • Cut the chicken breasts into cubes. Sear the meat on all sides in a hot skillet. Add the ginger, onions and garlic and cook until the onions are tender. Add the cumin, tumeric, curry powder, garam marsala and cinnamon and stir to coat the chicken thoroughly. Add oil to the pan if necessary to keep the spices from sticking. Add the tomatoes and tomato sauce. Bring the mixture to a boil. Cover and simmer for 45 minutes. Serve over rice with unleavened bread for a delicious meal.
  • For a different flavor, you may substitute beef or lamb for the chicken. Bring the final cooking time up to one hour to tenderize the meat and ensure flavor infusion.
  • The curry and garam marsala will both add heat to the dish, so add with caution.

Your house will be filled with the aromas of Eastern spices when you make this dish! This recipe is one of my favorite ways to eat chicken. I got this recipe from one of my dorm-mates when I was in college. It is very spicy and goes well with other Indian dishes. It is not a hot curry, so people who don't care for mouth-burning dishes might like this.

5 lbs chicken, cut into serving pieces (or use 6 chicken breast halves)
2 tablespoons margarine or 2 tablespoons vegetable oil
4 medium onions, chopped
3 garlic cloves, minced
4 bay leaves
1 teaspoon ground cinnamon
6 whole cloves
2 medium tomatoes, peeled and quartered
1 tablespoon salt
3 tablespoons curry powder
1 tablespoon paprika

Steps:

  • Brown chicen in a non-stick skillet, using a little vegetable oil or margarine. Remove to paper towels and drain. Discard oil or margarine, retaining any browned bits of the chicken.
  • Heat the 2 TB margarine or oil in the same skillet. Add onions and garlic and saute until browned.
  • Add bay leaves (crush them between your fingers first), cinnamon and cloves. Cook, covered, for 5 minutes.
  • Add remaining ingredients to skillet and stir frequently.
  • Return the chicken to the skillet and spoon the spicy sauce over it. Cover tightly and cook over medium heat until tender.
  • NOTE: I just use a 14.5-oz can of diced tomatoes, or a quart of whole home-canned tomatoes, drained.

My friend's mom comes to visit him each year from India and is a super cook. This is an amazing recipe which, once you have the ingredients in your spice collection and have done it once or twice, it is a breeze to make. Most of these ingredients can be stored for a long time. Buy them if possible from an Indian grocery store because they are usually cheaper and fresher than a supermarket. I have wowed many guests with this dish and it is time that this recipe goes into the public domain.

4 tablespoons ginger (you can easily make this if you want, far better than the jar variety) or 4 tablespoons garlic paste (you can easily make this if you want, far better than the jar variety)
3 tablespoons coriander powder (toasted seeds and ground in the blender is best but fresh powder will work fine)
2 teaspoons cumin powder (toasted seeds and ground in the blender is best but fresh powder will work fine here too)
salt & fresh ground pepper (to taste)
1 teaspoon turmeric
8 whole cloves
8 whole cardamom pods
1 cinnamon stick
4 tablespoons vegetable oil (your favorite)
1 teaspoon cayenne pepper (or to taste) or 1 hot chili pepper
1 1/2 lbs boneless chicken
1 large onion (diced)
1 tomatoes (diced)
2 tablespoons butter (optional)
hot water

Steps:

  • Ginger/Garlic Paste: In a blender add peeled ginger and peeled garlic in equal parts and a little water and blend into a paste. You can also buy this in the Indian market, but it is much better when made fresh.
  • Meat Prep: Cut chicken into bite sized pieces.
  • In a bowl, mix chicken, salt, pepper, turmeric, cayenne (if using cayenne), cumin powder and coriander powder.
  • Set Aside.
  • Cooking: Use medium heat! Lower heat and longer cooking time gives the best results.
  • In a deep wide pan (using medium heat) heat oil till it's hot and add Cloves, Cardamom (give a small smack on each Cardamom pod to open up the pod just a little bit) and Cinnamon stick.
  • Move it it around for several minutes.
  • At this point, I remove the clove and cardamom because I hate biting into them later.
  • Add onions and saute until they are soft and golden.
  • Take your time on this as this is what makes the gravy creamy, (you don't want burned onions).
  • Add Ginger/Garlic paste and lower the heat to medium low and cook for several minutes scraping the bottom often.
  • If you have enough oil in the pan you will not have that much of a problem. Hey! it's Indian food, so oil is necessary evil :)
  • Add chicken mix from the bowl and cook till the chicken turns color.
  • Add butter if desired.
  • Keep stirring so that bottom is not sticking. This will take about 8-10 minutes or so.
  • Add tomato and cook for another 2 minutes
  • Then add hot water to the pan till it barely covers the chicken.
  • Cook on medium high till you see a lot of bubbling.
  • Lower the heat to medium/low and cover the pan and let it cook for about 25-30 minutes, stirring occasionally.
  • When done, you should have smooth dark brownish gravy that is not runny and the chicken should be tender. Eat it with hot rice.

TRADITIONAL CHICKEN CURRY

1 tablespoon fresh lemon juice
salt and pepper to taste
3 tablespoons olive oil
1 teaspoon cumin seed
1 large onion, finely chopped

1 (8 ounce) can peeled, chopped tomatoes
1 teaspoon chili powder
½ teaspoon ground turmeric
1 teaspoon garam masala
½ teaspoon ground cumin
1 pinch ground coriander
½ teaspoon paprika
3 tablespoons plain yogurt
2 medium potatoes, peeled and cut into 1 inch cubes
1 ½ cups water
1 (5.5 ounce) can tomato juice
fresh chopped cilantro, for garnish

Steps:

  • In a large bowl, toss the chicken pieces with lemon juice, salt, and pepper to coat. Set aside.
  • Heat oil in a large, heavy saucepan over medium heat. Stir in cumin seed and cook 1 minute, until lightly toasted. Mix in onion, garlic, and ginger. Cook until onion is tender. Add tomatoes, and season with chili powder, turmeric, garam masala, ground cumin, coriander, and paprika. Continue to cook and stir 2 minutes.
  • Mix yogurt into the saucepan until well blended. Add chicken pieces, and potatoes. Mix in water and tomato juice. Reduce heat to medium-low. Cover and simmer about 40 minutes. Adjust seasonings to taste and garnish with fresh cilantro before serving.
