IMPOSSIBLE TORTILLA CASSEROLE
Have not tried this yet, but it sounds good and easy. Serve with chopped tomatoes, shredded lettuce and sour cream.

Steps:
- Preheat oven to 375°.
- Line greased 9x13" pan with flour tortillas, bringing the edges of the tortillas up and even with the edges of the pan.
- Cook ground beef and onion together in skillet, stirring frequently until browned, then drain.
- Stir in dry taco mix and tomato sauce.
- Spoon beef mixture onto tortillas in pan and sprinkle with the cheese.
- Beat eggs, milk and bisquick on high speed of blender or with wire whisk for 1 minute until smooth.
- Pour over beef mixture.
- Bake for 35 to 40 minutes or until done.
- Cool 10 minutes before serving.

IMPOSSIBLE CHICKEN ENCHILADA CASSEROLE
Great recipe from my friends in Albuquerque, New Mexico.

Steps:
- 1. Heat oven to 400^. Generously grease a 9x13-inch baking pan.
- 2. Combine enchilada sauce and sour cream in a medium bowl. Set aside
- 3. Combine chicken, onion and garlic in a large skillet and saute until tender. Stir in oregano leaves and chilies. Sprinkle crushed tortilla chips evenly in prepared pan.
- 4. Spread with 1/3 of the enchilada mixture. Top with 1 cup of the cheddar cheese. Spread with 1/2 the chicken mixture. Repeat.
- 5. Beat milk, eggs and Bisquick until smooth, about 15 seconds in blender on high or 1 minute with hand beater. Pour into pan over cheese.
- 6. Bake until knife inserted in center comes out clean, about 25-30 minutes. Sprinkle with a little more cheese and bake 3-5 minutes until cheese is melted. Cool at least 10-15 minutes, before serving.
- 7. Serve with chopped tomato, shredded lettuce , sour cream and black olives. Enjoy!
TORTILLA CASSEROLE (OAMC)
I went on a missions trip almost 13 years ago with Teen Missions International and this was one of the meals served. I made sure to come home with the recipe as it was a team favourite!

Steps:
- Fry ground beef and onions until meat is cooked through.
- Add taco seasoning and water and cook until thickened.
- Line the pan or casserole dish with 3 tortillas, then layer with 1/2 of the meat, 1/2 of the beans, 1/2 of the sour cream and 1/2 of the cheese.
- Repeat.
- If you like it spicy, then top it with some hot sauce or salsa.
- Bake at 350 until bubbly (about an hour).
- *OAMC directions: after baking, place in rigid container and seal with a lid (and plastic wrap if desired). Place in freezer. When ready to eat, thaw, place in baking dish, and reheat in 400 degree oven for 30 minutes.

LAWRY'S SOUR CREAM TORTILLA CASSEROLE
This recipe is an inexpensive but filling side dish that was served at Lawry's California Center before closing its doors. It's from "Dear S.O.S. Thirty Years of Recipe Requests to the Los Angeles Times". It isn't low cal by any means, but every dieter needs a day off once in a while--and this is a splurge that is worth every bite! Heck, I'll run an extra mile for this!

- Saute 1/2 cup onion until tender.
- Add tomatoes, seasoning mix, and chile salsa.
- Simmer 15 to 20 minutes.
- Set aside to cool.
- Fry tortillas lightly in small amount of oil, just until soft.
- Pour 1/2 cup sauce into bottom of 13x9-inch baking pan.
- Arrange layer of 4 tortillas over sauce (tortillas can overlap).
- Top with 1/3 of remaining sauce, 1/3 of remaining onions, and 1/3 of cheese.
- Repeat layering procedure twice.
- Combine sour cream and seasoned salt, spread over cheese to edge of pan.
- Sprinkle lightly with seasoned pepper.
- Bake at 325 degrees for 25 to 30 minutes.
- Cut into squares.

TORTILLA CASSEROLE
This is from my daughter in law, the grandkids love it and so do we, lots of taste, we pass the salsa to spoon over.

Steps:
- Heat oven to 350 degrees, spray large nonstick frypan with veggie spray, heat over high heat until hot.
- Add ground beef, brown 8-10 minutes , until thouroughly cooked, stirring constantly.
- Drain well, return beef to frypan.
- Add beans, tomatoes, chilles and chilli powder, mix well.
- Reduce heat, simmer 5 minutes.
- Meanwhile, spray 12 x 8 inch (2 quart) baking dish with veggie spray.
- Cut each tortilla in half, place 6 halves in bottom of sprayed baking dish, overlapping slightly.
- Spoon half of the beef mixture evenly over the tortillas.
- Spoon sour cream over beef mixture, spread evenly.
- Top with remaining six tortilla halves and remaining beef mixture.
- Cover tightly with foil.
- Bake at 350 degrees for 25 minutes.
- Remove from oven, sprinkle with cheese.
- Cover, let stand 3 minutes or until cheese is melted, sprinkle with cilantro.
MEXICAN TORTILLA CASSEROLE

- Preheat oven at 350 degrees F.
- Spray a spring form cake pan or casserole dish with cooking spray.
- Brown ground beef and onion and then drain the grease.
- Add taco seasonings and cook according to package directions. Heat refried beans to make for easier spreading.
- Lay 1 tortilla in bottom of baking dish and spread 1/3 of the refried beans on it. Top with 1/3 of the meat and sprinkle on some cheese.
- Add the 2nd tortilla and spread 1/2 the rice, 1/2 salsa, 1/2 the corn and a little cheese.
- Add the 3rd tortilla and spread 1/3 beans ,1/3meat, and a little cheese.
- Add the 4th tortilla and layer the remaining beans ,meat, corn, rice, salsa and cheese.
- Bake, covered with foil, for about 40 minutes. Uncover and bake 10-15 minutes longer. Let sit 5 minutes before cutting.
- After baking, top with sour cream, diced white onion and shredded lettuce, if desired.
