I love peppermint patties and coffee, but I don't drink, so I came up with this easy cuppa joe from the staples I had on hand.

8 ounces brewed coffee
2 tablespoons powdered cocoa mix
1/2 teaspoon peppermint extract
2 teaspoons sugar
2 ounces skim milk

Steps:

  • Put all dry ingredients in bottom of mug and pour in hot coffee.
  • Stir to dissolve sugar and cocoa mix.
  • Add in extract and milk and stir again.

1 cup coffee, brewed strong, then cooled
1/2 cup cream
1 tablespoon light chocolate syrup
2 tablespoons sugar substitute (recipe gives sucralose-based)
1 cup ice cube

Steps:

  • Combine all ingredients in a blender & process for about 30 seconds or until smooth.
  • Pour into 2 glasses & enjoy.

Iced Nutty Irishman Coffee Frappe (Non-Alcoholic and Diabetic) image

A non-alcohol and sugar-free variation on a classic coffee drink. Adapted from Torani website. Prep time does not include cooling time for coffee. I make extra morning coffee during the summer and keep it in the fridge for iced drinks. You can garnish this with whipped cream if desired, but that will change the sugars and calories.

1 1/2 tablespoons sugar-free hazelnut syrup (Torani)
1 cup strong brewed coffee (refrigerated until cool)
1/4 cup nonfat milk
1 cup ice cube

Steps:

  • Place all ingredients in blender and blend until smooth. Pour into glass and enjoy. (may be poured over more ice if desired).

This is my own creation. I had a couple bags of Community Coffee and decided to create a drink. I was inspired by the Spanish coffee, and wanted to go with a rum base due to the fact that "Creole" style in general is very prevalent in the caribbean. And seeing that New Orleans is very Creole in of itself and has many wide influences from the Caribbean, I figured this recipe would come close authentic wise. Plus is DELICIOUS!

3/4 ounce Bacardi 151 rum
1 1/4 ounces coconut rum
1 1/4 ounces Godiva original chocolate liqueur
4 ounces strong chicory coffee (Like community coffee, french market or CDM)
1 dash cinnamon
sugar, for rim
1 dash cocoa powder
2 tablespoons whipped cream (optional)

Steps:

  • Coat the rim of a 8oz glass mug with sugar (wet edges with sweetened lime juice or water and then dip into container of sugar).
  • Add the 151 rum and light on fire with match or long tipped candle lighter. gently swirl lit rum around the glass to caramelize the sugar on the rim. Add dash of cinnamon to firey rum to toast.
  • Immediately add coconut rum, chocolate liquor and chicory coffee.
  • Garnish with whipped cream and top with dash of coco powder.
  • Serve immediately.
