1 large sweet onion, chopped
1/4 cup butter, cubed
3/4 pound sliced fresh mushrooms
3 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon dill weed
3/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 can (14-1/2 ounces) chicken broth
1 cup 2% milk
1 tablespoon soy sauce
1/2 cup sour cream
2 teaspoons lemon juice

Steps:

  • In a large saucepan, saute onion in butter for 2 minutes. Add mushrooms; cook until mushrooms are tender, 4-5 minutes longer. , Stir in the flour, paprika, dill, salt and pepper until blended. Gradually stir in the broth, milk and soy sauce. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat; cover and simmer for 15 minutes., Just before serving, stir in sour cream and lemon juice (do not boil).

A hearty and comforting Hungarian Mushroom soup that's sure to fill you right up. A dollop of sour cream is what takes this soup over the top. Loaded with all the warm and cozy vibes!

Number Of Ingredients 13

4 tablespoons of salted butter
1 ½ cups white onions, chopped
1 lb. mushrooms, sliced (use crimini, button, etc.)
2 teaspoons dried dill weed
1 teaspoon EACH: dried thyme AND dried mushroom powder (optional)
1 tablespoon EACH: sweet paprika AND lemon juice
2 cloves garlic, grated
2 ½ cups low sodium chicken stock (or vegetable)
2 tablespoons low sodium soy sauce
3 tablespoons all-purpose flour
1 cup half and half (or whole milk)
⅓ cup room-temperature creme fraiche (or sour cream)
3 tablespoons chopped parsley

Steps:

  • SAUTE: In a dutch oven or soup pot, saute the onions and mushrooms in the butter over medium heat for 5 minutes. Then, season with dill, thyme, and paprika and allow the mushrooms and onions to continue cooking for an additional 7-10 minutes, stirring often. Sprinkle the grated garlic and mushroom powder 30 seconds before the mushrooms are done.
  • WHISK: Then, slowly pour in the chicken stock, soy sauce, and lemon juice and scrape the bottom of the pot to loosen anything that might be stuck on. Allow the soup to gain a simmer and then let cook and reduce for 5 minutes. While the soup is reducing, whisk together the milk and flour in a small bowl until smooth (you can also just shake it all in a mason jar.) Then pour the mixture into the soup and continue to cook the soup for 8-10 minutes, or until the soup thickens, stirring as required.
  • FINISH: Remove the soup from heat. Stir the soup while you add in the sour cream slowly and allow for it to mix. Sprinkle with parsley to finish and serve warm with grilled bread rubbed with a clove of cut garlic!

HUNGARIAN CREAM OF MUSHROOM SOUP

(I have to write this down before I forget it!) A super soup that just takes time, but not much effort. Makes excellent use of left-over standing or prime-rib bones and bits.

Number Of Ingredients 14

1 1/2-3 lbs beef bones (from leftover standing or prime-rib bones with lots of meat left on them)
5 cups beef stock (see first step!)
6 cups water
1 cut-up onion
1 1/2 cups baby carrots
3 celery ribs (old is fine)
3 cups heavy cream
1/2 tablespoon penzey's prime rib dry rub seasonings
1/2 tablespoon penzey's half-sharp Hungarian paprika
1/2 cup butter
1/2 cup Wondra Flour
1 (8 ounce) can mushrooms
2 cups shredded or diced standing beef roast or 2 cups prime rib roast
salt and pepper

Steps:

  • Boil bones in 6 cups water with one cut-up onion, 1-1/2 cups baby carrots, 3 ribs of celery,salt and pepper.
  • Simmer for 3-4 hours.
  • Strain and save veggies and beef that's fallen off the bone.
  • Puree vegetables and boiled beef bits.
  • Chill stock and remove hardened fat.
  • Melt butter in a 4-6 quart pot.
  • Combine Penzey's Prime Rib Rub, Penzey's Hunarian Half-Sharp Paprika, & Wondra flour. Add to butter to make a roux, stirring with a whisk.
  • Brown over medium/low heat for 10 to 12 minutes, or until nutty aroma is achieved. Add your 5 cups beef stock.
  • Move heat to medium, and bring to a gentle boil. When slightly thickened, add cream, diced or shredded beef, mushrooms, and reserved pureed vegetables/beef from when you boiled the beef stock earlier.
  • Add salt (and lots of pepper!) to taste.
  • Serve with a nice, crusty French loaf!

My family loves soup and this is one of their favorites. It has lots of flavor and is fairly quick to make. It's primarily a mushroom soup but derives a lot of its flavor from other ingredients.

4 tablespoons unsalted butter
2 cups chopped onions
1 pound fresh mushrooms, sliced
2 teaspoons dried dill weed
1 tablespoon paprika
1 tablespoon soy sauce
2 cups chicken broth
1 cup milk
3 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper to taste
2 teaspoons lemon juice
¼ cup chopped fresh parsley
½ cup sour cream

Steps:

  • Melt the butter in a large pot over medium heat. Saute the onions in the butter for 5 minutes. Add the mushrooms and saute for 5 more minutes. Stir in the dill, paprika, soy sauce and broth. Reduce heat to low, cover, and simmer for 15 minutes.
  • In a separate small bowl, whisk the milk and flour together. Pour this into the soup and stir well to blend. Cover and simmer for 15 more minutes, stirring occasionally.
  • Finally, stir in the salt, ground black pepper, lemon juice, parsley and sour cream. Mix together and allow to heat through over low heat, about 3 to 5 minutes. Do not boil. Serve immediately.

1 pound butter
6 cups yellow onion
10 pounds mushrooms, chopped
1 cup dill
1 cup paprika
2 cups tamari
2 gallons water
2 pounds butter
6 cups flour
1 gallon milk
1.75 gallons sour cream
1 tablespoons salt
1 tablespoons pepper

Steps:

  • Melt butter. Add onions, and saute until wilted. Add mushrooms, saute until juice is rendered out.
  • Add dill, paprika, and mix well.
  • Add tamari, water, bring to a boil and reduce to a simmer.
  • In a large stockpot, make roux using butter and flour, cook 10 minutes. Drain some water from soup and beat into roux in stockpot until smooth. IMPORTANT- you will get flour lumps if you try to skip this step!
  • Add water-smoothed roux to kettle. Add milk and simmer until it thickens again, coating back of spoon. Turn off heat, beat in sour cream until well blended, then beat in salt and pepper.

10 pounds mushrooms
1 cup dill, chopped
1 cup paprika
2 cups tamari
2 gallon water
2 pounds butter
6 cups flour
1 gallon milk
1.75 gallons sour cream
1 tablespoon salt
1 tablespoon pepper

Steps:

  • Melt 1 pound of butter. Add onion, and saute until wilted. Add mushrooms, saute until juices are released. Add dill, paprika, and mix well. Add tamari, water, bring to a boil and reduce to a simmer. In a large stockpot, make roux using 2 pounds butter and flour, cook 10 minutes. Drain some water from soup and beat into roux in stockpot until smooth. IMPORTANT- you will get flour lumps if you try to skip this step! Add water-smoothed roux to kettle. 2 teaspoons lemon juice, -fresh

Steps:

  • Saute onions in 2 Tbsp stock, salt lightly.
  • A few minutes later, add mushrooms, 1 tsp dill, 1/2 cup stock or water, soy sauce, and paprika.
  • Cover and simmer 15 minutes.
  • Melt butter in large saucepan.
  • Whisk in flour and cook, whisking, a few minutes.
  • Add milk and cook, stirring frequently, over low heat about 10 minutes - until thick.
  • Stir in mushroom mixture and remaining stock.
  • Cover and simmer 10-15 minutes.
  • Just before serving, add salt, pepper, lemon juice, sour cream, and, if desired, extra dill (1 tsp).
  • Serve garnished with parsley.
