Here's what you need: green cabbage, coarse salt, green onions, ginger, garlic, daikon radish, white rice, water, soy sauce, vegan sugar, gochugaru

2 lb green cabbage, savoy or napa
½ cup coarse salt
4 green onions
1 ginger, 2-inch (5 cm) piece
6 cloves garlic
¼ cup daikon radish
½ cup white rice
¼ cup water, plus more as needed
2 tablespoons soy sauce
1 tablespoon vegan sugar
1 tablespoon gochugaru

Steps:

  • Cut the head of cabbage in half lengthwise and slice off the ends. Quarter lengthwise, then slice crosswise into 2-inch (5 cm) pieces.
  • Place the cabbage and salt in a large bowl. Using your hands, massage the salt into the cabbage until it starts to soften a bit. Cover with a kitchen towel and let stand for 1-2 hours. Rinse the cabbage thoroughly under cold water, then let drain in a colander.
  • Meanwhile, chop the green onions into 1-inch (2 cm) pieces.
  • Peel the ginger and garlic.
  • Cut the daikon radish into matchsticks.
  • Combine the rice, water, garlic, ginger, and soy sauce in a mason jar or medium bowl. Use an immersion blender or standing blender to make a smooth paste. Mix in the sugar and gochugaru, starting with 1 tablespoon for a mild flavor and up to 5 tablespoons to make it spicier.
  • Gently squeeze any remaining water from the cabbage and transfer to a large bowl, along with the green onions and daikon. Toss to combine.
  • Add the seasoning paste to the bowl. Wearing gloves if you'd like to protect your hands from stings, stains, and smells, gently massage the paste into the vegetables until they are thoroughly coated.
  • Pack the kimchi into a large jar, pressing down until the seasoning paste rises to cover the vegetables and leaving at least 1 inch (2 ½ cm) of space at the top. Seal the jar with the lid.
  • Eat the kimchi right away or, to ferment, let the jar stand in a dark place at room temperature for 2-14 days. You may see bubbles inside and liquid may seep out of the jar; to be safe, place a bowl or plate under the jar to catch any overflow. Check the kimchi once a day. When it reaches your desired flavor, transfer the jar to the refrigerator. Eat right away, or let sit for another week or 2 for the flavors to deepen.

Can't get enough of BTS? Try one of Jimin's favorite foods: kimchi jjigae! Kimchi has been known to have many nutritional benefits and the spicy, tangy, savory flavors (the longer the kimchi is aged, the better!) will warm your soul on any day. If you're short on time, you can substitute chicken broth for the anchovy and kelp broth.

2 cups water
4 dried anchovies
1 dried kelp
1 teaspoon vegetable oil
¼ medium white onion, thinly sliced
4 cloves garlic, thinly sliced
3 oz pork belly, cut into 1 (2.54 cm)
¾ cup kimchi, drained and chopped into bite-sized pieces, juices reserved
1 teaspoon korean chile flakes, gochugaru
½ teaspoon sugar
sea salt, to taste
8 oz firm tofu, cut into 1/2 in (1.2 cm)
2 shiitake mushrooms, stems removed, thinly sliced
1 green onion, chopped
½ teaspoon sesame oil
white rice, steamed, for serving (optional)

Steps:

  • Make the anchovy and kelp broth: In a medium pot, combine the water, dried anchovies, and kelp. Bring to a low boil, then reduce the heat to medium low, cover, and simmer for 25 minutes. Strain the broth and discard the solids. Set the broth aside until ready to use.
  • Make the kimchi jjigae: Heat the vegetable oil in a medium pot over high heat. Add the onion, garlic, and pork belly and cook until the onions soften and the pork is lightly browned, about 5 minutes.
  • Add the drained, chopped kimchi and cook for 2-3 minutes, until slightly darkened.
  • Add the Korean chile flakes, sugar, salt, reserved kimchi juice, and anchovy and kelp broth and stir well to combine.
  • Lay the tofu and mushrooms on top of the soup and gently stir to submerge in the broth (do not break up the tofu). Cover the pot, reduce the heat to low, and simmer for 30 minutes. Remove the pot from the heat and season the soup with more salt to taste.
  • Ladle the soup into bowls and top with the green onion and sesame oil. Serve with white rice, if desired.
  • Enjoy!

  • SALT THE CABBAGE (6-8 hours): Reserve 1-2 outer leaves of the napa cabbage and refrigerate for later use (wrap in plastic). Cut the remaining cabbage and place it in a large bowl with the salt and toss. Add enough cool water to cover the cabbage and stir until salt is dissolved. Keep the cabbage submerged with a plate over the bowl and let stand at room temperature 6-8 hours (giving a stir midway through if possible) or overnight.
  • Drain the cabbage, saving the brine. Rinse the cabbage (not excessively, just a little quick rinse), drain, squeeze out any excess water, or blot with paper towels, and place it back in the bowl, adding the daikon radish and scallions.
  • Make the PASTE: Place the ginger, garlic, shallot, red pepper flakes, fish sauce (or alternatives) and sugar in your food processor. Add optional rice powder (see notes!) Process until well combined, pulsing, until it becomes a thick paste.
  • MASSAGE: Scoop the paste over the cabbage and using tongs or gloves, mix and massage the vegetables and the red pepper mixture together really well, until well coated.

  • Quarter cabbage and chop laterally into about 2 inch pieces. Place cabbage in an extra large bowl or pot. Combine salt with 2 cups of lukewarm water, stir to dissolve salt. Pour salt water over the cabbage and add remaining 4 cups, stir to mix. If you can, place a plate or circular baking dish of sorts on top to submerge the cabbage (I used a pie dish), place something with a good amount of weight on top to hold down if necessary (it’s not completely necessary but will help to evenly wilt the cabbage). Give cabbage a good mix every now and then. Let soak for 2 hours, up to 12 if you like. I found that 2 – 4 hours was enough and didn’t see much change between the two times.
  • While cabbage is soaking, combine apple, onion, ginger and garlic in food processor/blender and process until fairly smooth.
  • In a small bowl, mix the chili pepper with a small amount of water to make a wet paste. You can just as easily blend it with the apple/onion mixture adding a couple tablespoons of water as well.
  • Once cabbage is ready, drain water, reserving 1/2 cup, and rinse well. Place cabbage back in large bowl, combine with the scallions, apple/onion mixture and chili paste. Mix well to coat all pieces. Either use your hands (with gloves on pref to protect from the chili pepper) or simply use wooden spoons to toss everything.

  • In a mixing bowl dissolve salt in the water. Scatter the cabbage slices in a shallow bowl and pour the salted water over and toss. Let the cabbage soak for 1 hour. turn the cabbages over and continue to soak for another 1-1.5hr. When done, the stem part of cabbage slice should be bendable without breaking. Rinse the cabbages 3 times and let them drain well. Set aside.
  • Meanwhile, place pumpkin, mushroom, and sea kelp in a medium sauce pot and pour water just to barely cover them. Bring them to boil and let it simmer for 20 minutes. Cool and discard the vegetables reserving the liquid stock. Reserve 1/2 cup of stock to use, and freeze the rest of stock for later use.
  • In a blender put potatoes, onion, persimmon, garlic, ginger and pour in the 1/2 cup of stock. Process them until smooth. Add diced fresh red chilies and pulse to chop them into small pieces.
