CLASSIC HOT WINGS

Canola oil, for frying
24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

5 skinless, boneless chicken breasts, thinly sliced
½ cup mayonnaise
½ cup milk
½ cup hot pepper sauce (such as Frank's® RedHot)
2 tablespoons prepared yellow mustard
1 (1 ounce) package ranch dressing mix
1 (16 ounce) container sour cream
½ cup grated Parmesan cheese
2 tablespoons heavy whipping cream, or as needed

Steps:

  • Melt butter in a large saucepan over medium heat. Add chicken breasts; cook until no longer pink, 2 to 3 minutes per side. Stir in mayonnaise, milk, hot pepper sauce, mustard, and ranch dressing mix. Bring to a simmer; cook, stirring occasionally, until flavors combine, 10 to 15 minutes.
  • Stir sour cream and Parmesan cheese into the saucepan; bring to a simmer. Stir in heavy cream until sauce thickens to the consistency of gravy. Remove from heat; let stand before serving, about 5 minutes.

4 pounds whole chicken wings
Oil for deep-fat frying
1/4 cup butter
1/4 cup honey
1/4 cup barbecue sauce
4 to 6 tablespoons hot pepper sauce
3 tablespoons vinegar
3 tablespoons prepared mustard
1/4 teaspoon garlic salt
Celery and carrot sticks
Blue cheese or ranch salad dressing

Steps:

  • Cut wings into 3 sections; discard wing tip section. In a deep cast-iron or electric skillet, heat oil to 350°. Fry chicken wings, a few at a time, about 9 minutes or until golden. Drain on paper towels; place in a large bowl. , In a small saucepan, combine the next 7 ingredients; cook and stir 5-10 minutes. Pour over cooked wings; let stand 10 minutes. With a slotted spoon, remove wings from sauce and place them in a single layer on greased baking sheets. , Bake at 350° for 15 minutes. Serve hot with vegetable sticks and dressing for dipping.
