MOCHA CREAM

A tasty coffee flavored whipped cream perfect for fillings and/or frostings.

2 cups heavy whipping cream
2 tablespoons white sugar
1 tablespoon instant coffee powder
1 tablespoon boiling water

Steps:

  • Beat whipping cream and sugar together in mixing bowl until stiff. Dissolve coffee granules in boiling water. Cool. Add to whipped cream and beat in. Makes enough to frost and fill one 8 or 9 inch 2 layer cake. Keep Mocha Cream refrigerated.

The inspiration for the whipped cream came from Bon Appetit December 2002 issue. I've changed the measurements to my own taste. This whipped cream is delicious on anything with apples such as pie, cobbler and apple bread (see recipe 76946 for a great combo). Also would be nice on top of hot chocolate or coffee!

2 cups heavy cream
1/4 cup sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon vanilla extract

Steps:

  • Pour heavy cream into chilled glass bowl (I use a small but deep glass bowl).
  • Beat on high speed.
  • Slowly add sugar, cinnamon and vanilla.
  • Continue beating until stiff peaks form.
  • Tip: When making whipped cream I dampen a paper towel with vinegar and wipe the inside of a glass bowl with it.
  • Continue to wipe until dry and place inside freezer with beaters or whisk.
  • Leave in freezer for 10 minutes to chill then use to make whipped cream.

1 1/2 cups milk
1 teaspoon grated orange zest (1 orange)
5 extra-large egg yolks, at room temperature
1/2 cup sugar
2 tablespoons sifted cornstarch
1/2 teaspoon pure vanilla extract
1/2 teaspoon Grand Marnier liqueur
1 tablespoon unsalted butter
1 tablespoon heavy cream

Steps:

  • Combine the milk and orange zest in a medium stainless-steel saucepan over medium heat and bring almost to a boil. Remove from the heat.
  • Beat the egg yolks and sugar on medium-high speed in the bowl of an electric mixer fitted with the paddle attachment until pale and thick, about 5 minutes. With the mixer on low speed, sprinkle on the cornstarch. Beat on medium-low speed until combined, scraping down the bowl with a rubber spatula.
  • With the mixer on low speed, slowly pour the hot milk mixture into the egg mixture. Pour the mixture back into the pan. Cook over low heat, stirring constantly, until the mixture thickens, 5 to 7 minutes. (Pay attention because it will thicken and then quickly become orange scrambled eggs!)
  • Immediately, pour the mixture through a fine sieve into a large bowl. Stir in the vanilla, Grand Marnier, butter, and heavy cream. Place plastic wrap directly on the custard and refrigerate until cold.

  • In a small mug or coffee cup, mix the cocoa and Sweet'N Low together. Add a few tablespoons of the coffee and stir until the cocoa is completely dissolved. Pour in the remaining coffee.
  • Foam the milk. Spoon a generous amount over the hot mocha. Garnish with a pinch of cocoa powder, if desired.

1/3 cup sugar
2 cups strong coffee
1 cup light cream (or Half&Half)

  • Heat milk and chocolate in a heavy saucepan, stirring until smooth.
  • Add sugar and salt; bring to a boil, turn heat back and let simmer for 5 minutes, stirring.

  • Using a vegetable peeler, remove the peel from the orange in strips, being careful not to remove the white pith. In a large saucepan combine the peel and hot coffee. Let stand over medium-low heat for 5 minutes. Remove and discard orange peel.
  • Meanwhile, in a small bowl whisk together cocoa powder, brown sugar, and cinnamon. Whisk cocoa mixture into hot coffee until well combined. Stir in cream. If desired, use an immersion blender to froth the coffee mixture. Ladle coffee mixture into six coffee mugs. Top each serving with a spoonful of Whipped Honey-Orange Topping.
