Steps:
- Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
- Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
- Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
- Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
- Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.
ITALIAN HERO SANDWICH
Italian hero, sub, hoagie, grinder - this classic sandwich has many names, and every deli makes it differently. Its deliciousness lies in the proportion of rich-and-fatty ingredients to spicy-and-crunchy ones. For optimal structure and texture, start with crusty rolls with pillowy insides (or toast soft rolls). Use two to four types of cured meat for a range of umami, and plenty of lettuce and pickles to counterbalance them. Then assemble wisely: Shingle the meat and cheese across the rolls, then top with pickles, onions and dressed lettuce. Once put together, the wet ingredients are wrapped in meat so they're held in place and the bread doesn't get soggy. Wrap with parchment or wax paper for tidier eating and transporting.

Steps:
- Rinse the red onion under cold water, then transfer to a large bowl. Add the red wine vinegar, dried oregano and 1 teaspoon salt. Stir to combine and set aside.
- Arrange the rolls cut side up so they lie flat. Spread with a thin layer of mustard and/or mayonnaise, if using. Shingle the entire surface with the cheese, then the cured meats. Scatter an even layer of pickled peppers.
- Add the iceberg lettuce and olive oil to the onion-oregano mixture and toss until well coated. Season to taste with salt. Pile the lettuce on one side of the sandwich, then close the sandwich and press down lightly. If packing, wrap the sandwich tightly in parchment paper or foil, then cut in half crosswise. Sandwiches will keep for up to 4 hours refrigerated.
HOT HERO SANDWICHES
I love a great hero, and this did not disappoint. I like how this sandwich is heated, so the cheese gets nice and toasty. These would be great if you're having a crowd over. Or, if you're heading out for the night, make one for the hubby. All he'll have to do is heat it up. Easy peasy!

My friend Valerie is a gracious hostess. Of all the dishes she's shared over the years, this hero sandwich stands out. It's easy and colorful, and the marinated veggies give it all kinds of oomph. -Kelley Boyce, Tulsa, Oklahoma

- Best Grilled Cheese Sandwich Recipe. Even with all those fancy artisan breads and expensive cheeses, more often than not, I would much rather have a simple grilled cheese sandwich.
- Apple, Cheddar & Turkey Panini. For something special, this apple, cheddar, and turkey panini is such a simple yet delicious combo. The freshness of the apple with a nice mature cheddar is surprisingly pleasant.
- Hot Ham and Cheese Party Sandwiches. If you’re looking for a quick, warm, tasty little appetizer for your next gathering, this one’s for you. Using Hawaiian rolls will be a lifesaver here, as all you need to do is cut the whole pack in half (they come attached like one big loaf).
- Easy Tuna Melts. I’m not always the biggest fan of tuna melts, and I have to be in the right mood for them. But when they’re served in a tasty English muffin with lots of cheese and tomato slices on top, I’ll happily say yes to a bite!
- Grilled Chicken & Avocado Panini. Deli meat isn’t always the cheapest option for a week’s worth of lunches. So, I like to get whole chickens and roast them off.
- Ham, Apple, and Swiss Panini. Though similar to the recipe above, this panini is full of rich, salty ham flavors and a lovely, nutty Swiss cheese. There’s also a tasty mayo and mustard spread that adds a creamy touch of spice.
- Bacon and Eggs Breakfast Panini. Looking for a great way to bring breakfast on the go? How about a grilled panini full of scrambled eggs, crispy bacon, and lots of cheese?
- Homemade Sloppy Joes. Did anyone not grow up on these? They’re juicy, messy, and super easy to whip up! Ground beef will ensure these are beautiful and rich, but you could so easily use something more lean since the sauce is so intense.
- Louisville’s Historic Brown Hotel’s Original “Hot Brown” Sandwich. One night in Louisville, Kentucky, this open-faced sandwich was made as a cross between a Welsh Rarebit and a Croque Monsieur of sorts.
- Brie Grilled Cheese. You’ve probably tried baked brie in the past (if not, head to the kitchen right now)! Since you’ll usually eat that with a nice chunk of crusty bread, it makes sense that a brie grilled cheese would be just as tasty, right?
