CARAMELIZED HAM & SWISS BUNS
My next-door neighbor shared this recipe with me, and I simply cannot improve it! You can make it ahead and cook it quickly when company arrives. The combo of poppy seeds, ham and cheese, horseradish and brown sugar makes it so delicious. -Iris Weihemuller, Baxter, Minnesota

Steps:
- Arrange bottom halves of rolls in a greased 9x9-in. baking pan. Spread cut side of roll bottoms with horseradish sauce. Layer with ham and cheese; replace tops., In a small skillet, heat butter over medium-high heat. Add onion; cook and stir 1-2 minutes or until tender. Stir in remaining ingredients. Pour over rolls. Refrigerate, covered, several hours or overnight., Preheat oven to 350°. Bake, covered, 25 minutes. Bake, uncovered, 5-10 minutes longer or until golden brown.

HAM & CARAMELIZED ONION GRILLED CHEESE
Nothing says comfort to me like a grilled cheese sandwich. This is a delicious variation from the classic. Recipe from Family Circle.

Steps:
- Coat a medium-size nonstick skillet with nonstick cooking spray and place over medium heat.
- Add onion, sugar and salt to skillet; cover.
- Cook for 10 minutes, stirring occasionally, or until lightly browned; remove from heat.
- Stir together mustard, horseradish and honey; set aside.
- Spread 4 slices of bread evenly with mustard mixture, then layer 3 slices ham over each piece of bread.
- Place about 2 T onions on top of the ham, then place 1 slice cheese on top of the onions.
- Place 4 remaining bread slices over cheese.
- Spritz both sides of sandwich with nonstick cooking spray and cook in nonstick skillet over medium heat for 5-8 minutes or until cheese has melted, turning halfway through.
- Serve with mixed greens on the side, if desired.
HOT HAM N CHEESE
This recipe came from a dear aunt. They can be made ahead of time, so they're great snack after games. I wrap them individually in foil and keep them in the fridge. Then I just pop them in the oven when needed.-Linda Hartsell, Apple Creek, Ohio

Since I was dining alone tonight and had been in the kitchen baking all day, I threw this sammie together with what I had on hand in the refrigerator. It was heavenly!

Steps:
- Preheat oven to 425*.
- Place both slices of bread on a cookie sheet. On one, spread garlic herb cheese, sprinkle with cheddar. On the other slice, layer ham, caramelized onion and top with italian cheese blend. Leave sandsich open.
- Bake in oven for 5-7 minutes until cheese begins to bubble and all ingredients are heated through. *You could also use a panini press or do this sandwich grilled-cheese style. Just butter the outsides of bread or brush with olive oil. If doing in a skillet on the stovetop, I typically cook over med or med-low heat and put a lid over the sandwich so that everything gets heated and melty before the bread over-browns.
- Note: I used caramelized onions I'd made earlier by very thinly slicing 1/2 of a sweet maui onion and sauteeing in butter til brown, then added 1/8 t kosher salt and black pepper and 1 T brown sugar til glazed.

- To make the BBQ sauce, combine the BBQ sauce, pineapple juice, soy sauce, spicy curry powder, cinnamon and jalapeno, mix well and keep in the fridge until ready to use or up to two weeks.
- Heat a large skillet over medium-high heat and add 1 tablespoon butter. Add the onions and cook about 10 minutes, stirring frequently, until softened. At this point you want to slowly add the pineapple chunks and the pineapple juice, a little at a time, letting everything cook into the onions, slowly adding more until until you have added all the pineapple chunks and juice. Cook until the onions are caramelized to your liking and the pineapple juice has evaporated. Remove from the heat.
- Line a cookie sheet or 9x13 inch baking dish with tin foil. Place the bottom half of the rolls on the foil and brush each half with the melted butter. Add the ham, if desired drizzle the BBQ sauce over the ham. Now add the onions and then the swiss cheese and bacon. Place the top half of the rolls over the cheese. Brush the tops of the rolls with butter and sprinkle with poppy seeds. Now place another piece of foil over the sandwiches and seal the two pieces of foil together.
