Number Of Ingredients 15

1 tablespoon olive oil
1 cup chopped onions
1 cup chopped red bell peppers
1 tablespoon minced garlic
2 teaspoons coarse salt
1 tablespoon plus 1 teaspoon Emeril's Original Essence
1 pound cream cheese, at room temperature
1 cup mayonnaise
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon minced scallions
1 tablespoon fresh lemon juice
1 pound lump crabmeat, picked through for shells and cartilage
1/2 cup saltine or butter cracker crumbs
2 tablespoons unsalted butter, melted
Toast points or crackers, for serving

Steps:

  • Preheat oven to 350 degrees.
  • Heat olive oil in a large skillet over medium heat. Add onions, bell peppers, garlic, 1 teaspoon salt, and 1 teaspoon Essence. Cook, stirring, until vegetables are soft, 2 to 3 minutes. Remove from heat and set vegetables aside.
  • Place cream cheese, mayonnaise, parsley, scallions, lemon juice, remaining teaspoon salt, and remaining tablespoon Essence in the bowl of a food processor; process until smooth. Transfer mixture to a large bowl; fold in cooked vegetables and crabmeat. Transfer to a 2-quart baking dish.
  • In a small bowl, mix together breadcrumbs and melted butter; stir to combine. Spread breadcrumb mixture over crabmeat mixture and bake until hot and bubbly, about 30 minutes.
  • Serve with toast points or crackers.

8 tablespoons (1 stick) unsalted butter
1 medium onion, finely chopped
2 garlic cloves, minced
6 tablespoons all-purpose flour
1 1/2 cups milk
1/4 teaspoon cayenne pepper
2 teaspoons dry mustard
4 ounces sharp white cheddar cheese, shredded (1 cup)
2 tablespoons fresh lemon juice, plus freshly grated zest of 1 lemon
2 teaspoons Worcestershire sauce
10 ounces lump crabmeat, picked over
2 tablespoons coarsely chopped fresh flat-leaf parsley
Coarse salt and freshly ground pepper
1 loaf rustic bread (about 1 pound), trimmed of crust and torn into 1-inch pieces (4 to 5 cups)
Baguette slices, toasted, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. Melt 6 tablespoons butter in a medium saucepan over medium heat. Add onion and garlic; cook, stirring occasionally, until soft, about 4 minutes. Whisk in flour; cook, whisking constantly, 4 minutes. Continue to whisk; pour in milk in a slow, steady stream. Simmer over medium heat, whisking, until thickened, about 4 minutes. Stir in cayenne and mustard. Gradually whisk in cheese; whisk until melted.
  • Remove from heat. Stir in lemon juice, zest, and Worcestershire. Stir in crabmeat and parsley. Season with salt and pepper. Transfer to a 1-quart ovenproof dish.
  • Melt remaining 2 tablespoons butter; stir into bread pieces. Season with salt and pepper. Arrange bread mixture over crab dip. Bake until heated through and golden brown, 25 to 30 minutes. Let stand at room temperature 10 minutes. Serve with baguette slices.

8 ounces creme fraiche
6 ounces Jarlsberg, Swiss, or cheddar cheese, grated (1 1/2 cups)
4 1/2 teaspoons prepared horseradish
2 scallions, trimmed and thinly sliced (about 1/4 cup), plus more for serving
2 cloves garlic, minced (2 teaspoons)
1/2 teaspoon sweet paprika
2 tablespoons unbleached all-purpose flour
12 oysters, shucked, liquor reserved (about 1/4 cup)
1 pound fresh lump crabmeat, preferably Chesapeake blue, drained and picked over
Kosher salt
Assorted crudites or crackers, for serving

Steps:

  • Preheat oven to 450 degrees. Butter a 1 1/2-quart baking dish or 10-inch ovenproof skillet. In a large bowl, combine creme fraiche, cheese, horseradish, scallions, garlic, paprika, flour, and oyster liquor. Gently fold in crabmeat; season lightly with salt. Transfer to prepared dish, making 12 small divots in mixture with the back of a spoon. Press an oyster into each.
  • Bake until hot, bubbling, and golden, 20 to 25 minutes. Serve hot, with crudites or crackers.

6 ounces extra-sharp yellow cheddar cheese, grated (about 2 cups)
1/2 cup plus 2 tablespoons mayonnaise
8 ounces crab meat, picked over
1/4 cup chopped pimiento (from a 4-ounce jar)
1/4 cup sliced scallions (from about 3 scallions)
1 tablespoon plus 1 teaspoon fresh lemon juice, plus more to taste
1/2 teaspoon coarse salt
Hot sauce
1 1/2 cups torn rustic bread (from 1 loaf, crust trimmed)
Endive leaves, cucumber spears, and celery sticks, for serving

Steps:

  • Preheat oven to 375 degrees. Mash cream cheese in a bowl until very soft. Add cheddar and 1/2 cup mayonnaise and stir to combine. Stir in crab, pimiento, scallions, lemon juice, salt, and hot sauce to taste. Spoon mixture into two 14-ounce baking dishes, dividing evenly.
  • Stir together torn bread and remaining 2 tablespoons mayonnaise. Top spread with bread mixture, dividing evenly. Bake on a baking sheet until golden brown and bubbling, about 25 minutes. Serve immediately with vegetables.

2 cups crabmeat
1 cup sour cream
1 (8 ounce) package cream cheese, softened
1 cup buttermilk
1 cup mayonnaise
1 cup shredded Monterey Jack cheese
1 cup white Cheddar cheese
½ cup capers, drained
2 (8 ounce) cans artichoke hearts, drained and chopped
2 tablespoons minced garlic
½ teaspoon ground black pepper, or to taste
½ teaspoon dried dill, or to taste
¼ cup grated Parmesan cheese
½ teaspoon Old Bay Seasoning TM, or to taste
1 (8 ounce) round loaf sourdough bread

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch square baking pan.
  • In a large bowl, combine crabmeat, sour cream, cream cheese, buttermilk, mayonnaise, Monterey Jack cheese, Cheddar cheese, capers, artichoke hearts, garlic, black pepper and dill. Stir until well mixed. Spoon dip into prepared baking pan. Sprinkle with Parmesan cheese and Old Bay Seasoning TM.
  • Bake in preheated oven until top is crusty, about 15 to 20 minutes.
  • Cut the top off the loaf of bread. Hollow out the loaf and cube the top and the removed pieces so that they may be used for dipping. Spoon hot dip into hollow bread loaf. Serve immediately with bread pieces for dipping.
