Yield 2 horseshoes (14 servings each).

Number Of Ingredients 5

1 package (10 ounces) large marshmallows
3 tablespoons butter, cubed
5 cups crushed pretzels
1 cup semisweet chocolate chips
1/2 cup butterscotch chips

Steps:

  • Place two 5-in.-diameter bowls upside down in the center of two 9-in. round pans; coat bowls and pans with cooking spray., In a large microwave-safe bowl, melt marshmallows and butter on high for 1 minute. Stir in pretzels. Quickly add chips; stir gently until coated. Divide mixture in half. Press one portion evenly into one prepared pan. Shape into a horseshoe by forming mixture around bowl, leaving a 4-in. opening at one end. Repeat with remaining mixture. Cool for 15 minutes. , Remove bowls. Run a knife around edges of pans to loosen. Invert each onto a serving platter. Reshape horseshoes by gently spreading sides apart to elongate if necessary. Cool completely.

Hearty meat and potato lovers in your family will be happy to indulge in the Horseshoe Sandwich. Our recipe used the classic ham steak, but hamburger patties are a popular alternative. 3 cups frozen French-fried potatoes
CHEESE SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground mustard
1/8 teaspoon pepper
3/4 cup 2% milk
1 cup shredded white cheddar cheese
1/4 cup beer, room temperature
3/4 teaspoon Worcestershire sauce
ASSEMBLY:
1 fully cooked boneless ham steak (1 pound), cut into 4 pieces
4 slices Texas toast or other white bread, toasted
Paprika

Steps:

  • Cook potatoes according to package directions. Meanwhile, in a small saucepan, melt butter over medium heat. Stir in flour, salt, mustard and pepper until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 2 minutes or until thickened. , Reduce heat to medium-low. Stir in cheese until blended. Stir in beer and Worcestershire sauce; heat through., Heat a large skillet over medium-high heat. Add ham; cook 1-2 minutes on each side or until lightly browned and heated through. , To serve, place two toasts on each of two serving plates; top with ham, fries and cheese sauce. Sprinkle with paprika.

Every time we visit Springfield, Illinois we have to eat one of their famous horseshoes. The cheese sauce is a little different depending on where you stop to eat, seems everyone has their own way of making it. But we love them all. If you only use one slice of bread and one hamburger patty it is called a ponyshoe. This recipe can also be made with chicken tenders in place of the hamburger patties.

1 (9 ounce) bag frozen french fries
1 pound ground beef
4 slices bread, toasted
½ cup butter
¼ cup all-purpose flour
2 cups half-and-half
2 cups shredded Cheddar cheese
salt and ground black pepper to taste
hot sauce to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spread french fries out on a baking sheet. Bake for 20 minutes in the preheated oven, or until golden brown.
  • Meanwhile, divide the ground beef into four equal parts and form into patties. Fry the patties in a large skillet over medium-high heat until well done, about 4 minutes per side.
  • Melt the butter in a saucepan over medium heat and whisk in the flour. Cook while stirring constantly for 4 minutes to cook out the flavor of raw flour. Gradually whisk in the half-and-half so that no lumps form. Bring to a simmer then remove from the heat and add the cheese; stir until melted. Season with salt, pepper, and hot sauce to taste.
  • Place 2 slices of toasted bread onto 2 dinner plates and top each slice with a hamburger patty. Top each patty with cooked french fries. Pour the cheese sauce on top of everything and serve immediately.

Made famous in our state capital, at Springfield's old Leland Hotel (although everyone wants to say THEY invented it). The secret is the cheese sauce! I miss them when I travel, they're popular in all the restaurants here in Illinois.

Number Of Ingredients 10

CHEESE SAUCE
1/2 lb butter
1 Tbsp salt
1/4 to 1/2 lb flour
1/4 tsp cayenne pepper
1/4 tsp dry mustard
1 qt plus 1 cup milk
3 Tbsp worcestershire sauce
2 1/2 to 3 lb shredded cheddar cheese
1 pt beer, warm

Steps:

  • 1. Melt butter in stockpot and add flour to make a rue. Add milk. Add Cheese and rest of ingredients exept the beer. Stir the cheese sauce constantly, careful not to burn. Add the beer just before serving.
  • 2. TO SERVE: Toast 2 pieces of Texas Toast bread. On each slice, put on meat of your choice ( a hamburger patty on each slice, shaved ham, turkey, roast beef or anything you can think of). Pile onto the meat and plate the freshly made french fries (I prefer more narrow crinkle cut). Pour the cheese sauce over the "shoe" and serve it right away!
  • 3. * A "Ponyshoe" is half the serving, using one piece of toast.

World Famous Horseshoe Sandwich image

"Horseshoes" are a Springfield, Illinois original, first created by the chef at the "The Red Coach" for his luncheon clientèle. The story goes that he had a lot of extra cheese sauce left over one day and decided to throw it over the "chopped steak" and gravy sandwiches the patrons were always ordering. He added some shoestring potatoes on top, and a sensation was born! This recipe is a update of the original (which called for a whole cup of flour!) and your family will positively beg for more. Don't skimp on the cheese sauce. If your appetite is smaller, cut this in half. Then you have what we call around here, a "pony shoe"!

1 1/2 lbs ground beef
1 (28 ounce) package frozen french fries (or homemade)
6 pieces Texas toast thick bread or 6 pieces other thick bread
1/4 cup butter
1/2 cup flour
4 cups milk
2 lbs Velveeta cheese or 1 1/2 lbs sharp cheddar cheese
1 (12 ounce) can evaporated milk
2 -3 teaspoons Worcestershire sauce
2 -3 dashes hot sauce
salt and pepper (taste before adding)

Steps:

  • SANDWICH PART: Form 6 hamburgers and season to taste.
  • Cook them, trying to keep them as evenly flat as you can.
  • Keep warm.
  • Begin to fry french fries.
  • Keep warm.
  • Toast bread until crisp.
  • SAUCE: Melt the butter in a heavy saucepan.
  • Stir in the flour.
  • Cook, stirring, 5 minutes.
  • Gradually stir in the 4 cups milk.
  • Stir and cook until thick.
  • Transfer to a large microwave-safe bowl.
  • Whisk in the evaporated milk until smooth.
  • Add the cut up Velveeta (OR Cheddar).
  • Microwave for 6 minutes.
  • Take out and stir.
  • Add the Worcestershire and hot pepper sauce.
  • Microwave for another 3 minutes or so, or until the sauce is smooth and hot.
  • Take out and taste for Worcestershire and hot sauce.
  • Place spoon you were stirring with on a clean plate, away from the stove.
  • If mixture seems to harden too fast upon cooling, add a bit more milk.
  • Note: I know this seems like a lot of cheese sauce and you may cut it down if you wish, but the cheese sauce is the main attraction here.
  • It is hard to have "too much"!
  • Assembly is in this order: toast, hamburger, lots of cheese sauce and french fries.
  • I promise, you'll have no leftovers.
