Five Spice Baked Ribs with a Sticky Honey Sesame Sauce image

Categories     main-dish

Time 1h10m

Yield 6 to 8 servings

Number Of Ingredients 15

1 star anise
1 teaspoon fennel seeds
A few Szechuan peppercorns
1 tablespoon five-spice powder
Kosher salt
2 1/2 pounds pork spare ribs
3/4 cup soy sauce
2 tablespoons olive oil
2 tablespoons honey
1 to 2 small red chilies, seeded and finely sliced
1 to 2 cloves garlic, peeled and finely chopped
Zest of 1 lime
3 tablespoons sesame seeds, optional
1/2 bunch scallions, chopped
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet or large roasting pan with aluminum foil.
  • Using a mortar and pestle or an electric spice mill, crush the star anise, fennel seeds and Szechuan peppercorns. Stir in the five-spice powder and 2 teaspoons salt. Put the ribs into a bowl and sprinkle over the spice mixture. I like to get my hands in and rub everything in. Place the ribs in one layer on the baking sheet or roasting pan. Put them in the oven and cook for 45 minutes.
  • Meanwhile, make the glaze. In a small pot stir together the soy sauce, olive oil, honey, chilies, garlic, lime zest and sesame seeds, if using.
  • When the ribs have cooked for 45 minutes, remove them from the oven and brush them with half the glaze. Sprinkle over the scallions and season well with salt and pepper. Return the ribs to the oven for 15 minutes. Bring the remaining glaze to a boil and remove it from the heat.
  • To serve, cut the ribs and pile them onto a big platter. Serve with the remaining glaze as a dipping sauce. I like to serve this with a large green salad and put everything in the middle of the table so everyone can help themselves.

Yummy tender ribs! This marinade also goes well with chicken or other cuts of pork. Prep time does not include marinating time.

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 8

1/4 cup honey
1/2 cup ketjap manis (a thick sweet soy sauce)
2 teaspoons sesame oil
2 star anise
1 tablespoon sesame seeds, toasted
2 teaspoons grated fresh ginger
1 clove crushed garlic
4 pork spare rib racks (1.5kg)

Steps:

  • Combine all the ingredients (except ribs) in a bowl.
  • Pour 2/3 into a large shallow dish or zip-lock bag with the ribs.
  • Refrigerate remaining marinade until needed for basting.
  • Marinate for 3 hours or overnight, turning meat occasionally.
  • Preheat the oven to 140-160°C.
  • Remove the meat from marinade and discard marinade.
  • Line two baking dishes with foil (prevents marinade from burning onto dishes, making clean-up a lot easier).
  • Place a wire rack (such as a cake cooling rack) into each dish.
  • Place the ribs in a single layer on racks.
  • Roast for about 45 minutes, turning halfway and basting with remaining marinade until ribs are well browned and cooked through.

SESAME PORK RIBS

Sesame Pork Ribs image

This is adapted from a recipe by Michelle in CA, from another board. It is easy to put together even if the list of ingredients looks long. You can double the recipe and freeze half of it. If you do that, don't sprinkle the sesame seeds or green onions on until you are ready to serve it. It can be reheated in the crock pot or thawed overnight and reheated in the oven or stovetop.

Time 6h20m

Yield 6 serving(s)

Number Of Ingredients 18

1/2 cup packed brown sugar
1/4 cup soy sauce
1/4 cup ketchup or 1/4 cup barbecue sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
2 tablespoons honey
1 tablespoon cider or 1 tablespoon white wine vinegar
1 1/2 garlic cloves, minced (or more)
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes (or more)
2 1/2 lbs country-style pork ribs
1/2 medium onion, sliced
1 tablespoon cornstarch, dissolved in 2
1 1/2 teaspoons water
1 tablespoon sesame seeds, toasted
6 thinly sliced green onions
1/2 bunch chopped fresh cilantro leaves (optional)

Steps:

  • In a large bowl, combine the first eleven ingredients. Add the pork and turn to coat.
  • Place the onion in a 5-qt slow cooker; arrange pork on top.
  • Cover and cook on low for 5-6 hours or until meat is tender.
  • Strain sauce out into a small pot and heat to boiling. Add cornstarch slurry and stir until thickened; about 1 - 2 minutes.
  • Pour sauce back into slow cooker and combine.
  • Place pork on a serving platter; sprinkle with sesame seeds, green onions and chopped fresh cilantro leaves.
  • You can also remove the meat from the bones and serve it in flour tortillas with a little hoisin sauce, sort of a faux moo shu pork.
