Four 6-ounce skin-on salmon fillet portions, at room temperature
1/4 cup honey
Kosher salt and freshly ground black pepper
Zest of 1 lemon plus 8 thin lemon slices, seeds removed
2 tablespoons BBQ, sriracha or everything bagel seasoning
1/2 cup basil pesto, chilled

Steps:

  • For the salmon: Brush each salmon fillet on the fleshy side with the honey. Coat using the following instructions for one of the following flavors.
  • For the lemon pepper: Season with a sprinkle of salt, then add plenty of freshly ground black pepper. Sprinkle with the lemon zest and top each salmon portion with 2 lemon slices.
  • For the BBQ, sriracha or everything bagel seasoning: Sprinkle the seasoning evenly on each salmon portion.
  • For the pesto: Add the pesto on top of the honey and gently spread without pushing the honey over the edge (having the pesto chilled will help here).
  • Preheat a grill or the oven to 325 to 350 degrees F. Place the salmon on the grill on a piece of aluminum foil or on a pan lined with nonstick aluminum foil on the center rack of the oven. Grill or bake until preferred doneness, 10 to 15 minutes for medium. Remove and rest for a minute or two before serving.

I got this recipe from a friend and, as a new cook, it is easy to make and delicious to boot! Even when I make this recipe with fewer pieces of salmon (2 small salmon filets), I still make the same amount of honey glaze, because it is so delicious and I prefer having more sauce rather than not enough.

⅓ cup honey
⅓ cup thinly sliced green onions
2 tablespoons soy sauce
2 teaspoons sesame seeds
1 teaspoon minced garlic
1 teaspoon minced onion
¾ teaspoon ground ginger
½ teaspoon crushed red pepper flakes, or more to taste
½ teaspoon red pepper flakes, or more to taste
4 salmon fillets

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix honey, green onions, soy sauce, sesame seeds, garlic, onion, ginger, and red pepper flakes in a small bowl until blended.
  • Place salmon in single layer in a 9x13-inch baking dish. Spoon honey mixture evenly on top of salmon; the mixture will run off, but try to coat the fish with a thin layer all over.
  • Roast salmon in the preheated oven, basting salmon with the sauce at least once, until fish flakes easily with a fork, about 20 minutes.

4 (3 -4 ounce) salmon fillets
1/2 cup ponzu sauce
2 tablespoons honey
1 teaspoon minced fresh ginger
1 teaspoon minced fresh garlic
sesame seeds

Steps:

  • Place salmon in a large plastic bag.
  • Mix together marinade ingredients in a small bowl and pour over salmon.
  • Let marinade for at least 2 hours and up to 5 hours.
  • Move oven rack to highest position.
  • Heat broiler on high for about 4-5 minutes.
  • Dry off salmon fillets with paper towels and place on baking sheet.
  • Broil for 6-9 minutes depending on how well you like your salmon cooked.
  • Sprinkle with sesame seeds, serve with you desired side, and enjoy!

Oh, and that honey-lime drizzle at the end is to die for - no one will judge you for slurping it down! Baking the salmon at a high heat not only quickens the cooking time, but also helps to crisp up the honey glaze and spice mixture that coats the fish.

Nonstick cooking spray, optional
Four 6-ounce portions skin-on salmon fillets
1/4 cup honey
Zest and juice of 1 lime
1 tablespoon light brown sugar
1/2 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil. Spray the foil with cooking spray if you plan on eating the salmon skin. (If you do not plan on eating the skin, you can skip this step.) Place the salmon fillets, skin-side down, onto the prepared baking sheet.
  • Whisk together the honey, lime zest, and juice in a small bowl. Remove 2 tablespoons of the mixture to another small bowl and set aside. Brush the remaining honey-lime mixture over top of the salmon fillets.
  • Combine the brown sugar, cumin, paprika, garlic, 2 teaspoons salt and a few grinds of pepper in a medium bowl. Press the brown sugar mixture all over the salmon (about 1 heaping teaspoon on each portion). Crimp all 4 sides of the foil to create a border around the salmon to help collect the juices so they don't spread and burn. Bake until the glaze is shiny and turning golden in some spots, and the salmon is firm and flakes easily when pressed, 10 to 12 minutes.
  • Drizzle the reserved honey-lime mixture over top of the salmon just before serving.

1/4 cup packed cilantro leaves
2 scallions
2 teaspoons vegetable oil
1 teaspoon grated ginger
Kosher salt and freshly ground pepper
4 center cut skin-on wild salmon fillets, about 6 ounces each
2 teaspoons fresh lime juice
2 teaspoons low-sodium soy sauce
2 teaspoons honey
1/4 teaspoon black sesame seeds
1 1/3 cups cooked edamame
Lime wedges, optional garnish

Steps:

  • Preheat the grill over medium-high direct heat. Oil the grill grates. Finely chop the cilantro and scallion and mix in the oil and ginger. Season with salt and pepper.
  • Cut two 3-inch long slits through the skin lengthwise on the bottom of the salmon fillets, going about halfway into the salmon. Evenly stuff the slits with the herb mixture. Season the fish with salt and pepper.
  • Stir together the lime juice, soy and honey until smooth. Place the salmon, skin side up, on the grill and cook until well marked, 3 to 4 minutes. Turn the salmon and continue to cook, brushing the tops with the sauce, until the fish is cooked through, about another 3 to 4 minutes. Transfer to a serving plate and sprinkle the tops with the sesame seeds. Serve with edamame and lime wedges.
  • Broiler directions: Position an oven rack so that a baking sheet set on the rack is about 4-inches below the heat source. Preheat the broiler. Prepare the salmon as above and place the fillets, skin down, on a foil lined baking sheet coated with cooking spray. Broil, basting 3 to 4 times with the sauce, until just cooked through, about 6 to 7 minutes.

2 tablespoons freshly squeezed or bottled yuzu juice
1 tablespoon yellow miso
1 tablespoon soy sauce
2 tablespoons maple syrup
2 heads baby bok choy, trimmed and sliced lengthwise
1 skinless center-cut wild salmon fillet (2 pounds)
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 425 degrees. Cut a square of parchment about three times larger than salmon fillet.
  • In a small bowl, whisk together yuzu juice, miso, soy sauce, and maple syrup.
  • Lay parchment on a sheet pan. Arrange bok choy on right half of parchment, leaving a 2-inch border uncovered on all sides. Place salmon on top of bok choy, drizzle with yuzu mixture, then sprinkle with sesame seeds.
  • Take left side of parchment and fold it over salmon. Pleat edges together to form a parcel, sealing fish tightly in packet. Check to make sure there are no gaps along edges.
  • Place in oven and bake 25 minutes. Salmon should be cooked through and just tender at center.
  • Remove from oven and let rest a few minutes. Cut packet open, divide salmon and bok choy among plates, and drizzle with some cooking juices.

4 (6 ounce) skinless salmon fillet
1 teaspoon fine sea salt
2 tablespoons vegetable oil
1 grapefruit
1 orange
1 lime
1/4 cup sugar
1/4 cup soy sauce
1/4 cup rice vinegar

Steps:

  • For the sauce:.
  • Use a zester to remove the colorful outer rind from the grapefruit, the orange and the lime; save the zest on the side.
  • If you don't have a zester, use a vegetable peeler to remove the rind, then cut it into julienne strips with a sharp knife.
  • Juice the fruits and combine the juices.
  • Put the sugar in a dry pan over medium-high heat and swirl the pan until the sugar has begun to dissolve; it will be caramel-colored.
  • Pour in the fruit juice and step back because the mixture will boil and steam rapidly before settling into a steady boil.
  • Boil for about 2 minutes, swirling the pan now and then to dissolve the caramelized sugar.
  • When the caramelized sugar has dissolved, add the soy sauce and vinegar.
  • Drop in half of the citrus zest that was set aside before the fruits were juiced and continue boiling the sauce for 2 or 3 minutes, or until it is slightly thickened.
  • The zest may be left in or strained out.
  • Serve the sauce warm or at room temperature.
  • For the Salmon: Rinse the salmon fillets, pat them dry and sprinkle with the sea salt.
  • Put a large, nonstick skillet over medium-high heat and allow the pan to preheat for 1 minute.
  • Put the oil in the pan; it should be almost smoking-hot.
  • Put the salmon skinned-side-up into the pan and allow the salmon to cook undisturbed for 4 to 5 minutes or until a crisp brown crust has formed on the underside of the fish.
  • Turn the fillets and cook 5 minutes longer or until fish is just cooked through.
  • Make a puddle of ponzu sauce in the center of four plates and plant the pan-seared fish fillets on top.
  • Garnish the fish with reserved zest from a grapefruit, an orange and a lime.
