ROASTED HONEY MUSTARD CHICKEN

Roasted Honey Mustard Chicken image

I love a good roasted chicken, and this one is easy and delicious. After a quick prep, the marinade does its magic in the fridge until time for roasting. It's fun to dress the dish up by season based on whatever vegetables are fresh at the market. -Kara Brook, Owings Mills, Maryland

HONEY MUSTARD ROAST CHICKEN

Honey Mustard Roast Chicken image

Here's a delicious recipe for roast chicken using one of my all-time favorite poultry techniques...spatchcocking! This method of cooking allows the chicken to sit flat as it roasts, ensuring that everything cooks evenly so the breast meat ends up just as juicy and succulent as the dark meat. The honey mustard marinade adds incredible flavor and works overtime as a sweet and tangy basting and serving sauce. Serve with roasted potatoes and Brussels sprouts, if desired.

Time 5h30m

Yield 4

Number Of Ingredients 10

½ cup yellow mustard
¼ cup honey
¼ cup seasoned rice wine vinegar
2 teaspoons Sriracha
1 teaspoon smoked paprika
1 teaspoon freshly ground black pepper
3 teaspoons kosher salt, plus more as needed
1 (4.5 pound) whole chicken
¼ cup chicken stock, or as needed
2 tablespoons chopped green onions, or to taste

Steps:

  • Mix mustard, honey, vinegar, Sriracha, paprika, pepper, and salt in a very large bowl until combined.
  • Place chicken, breast-side down, on a work surface. Starting at the tailbone, cut along either side of the backbone with scissors or a knife, cutting as close to the bone as possible. Discard the backbone and trim any excess fat or skin from the chicken.
  • Find the cartilage where the wishbone comes together and forms a "v" and make 1 shallow cut with a knife through the cartilage. Press down on either side to flatten the chicken and expose the breastbone, making another cut in the cartilage if necessary. Run your fingers along the breastbone until the rest of the cartilage pulls away. Make a few shallow cuts into the legs, thighs, and wings to ensure even cooking.
  • Transfer chicken into the bowl of marinade and toss until well coated. Marinate, breast-side down, in the refrigerator, 4 to 12 hours.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Transfer chicken, skin-side up, to the prepared baking sheet. Season with salt. Reserve marinade for basting.
  • Cook in the center of the preheated oven until chicken starts to darken in spots, 35 to 40 minutes.
  • While the chicken is roasting, transfer excess marinade into a small saucepan. Add chicken stock to thin the sauce a bit and bring to a boil. Remove from the heat.
  • Baste chicken with sauce and continue to roast, basting again if desired, until no longer pink at the bone and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).
  • Remove chicken from the oven and brush any rendered fat and accumulated juices from the pan onto the chicken.
  • Transfer chicken to a serving platter and garnish with green onions. Slice and serve, spooning any remaining sauce over top.

  • Pound chicken to 1/2-inch thickness on a work surface; season with 1/4 teaspoon salt and ground black pepper to taste.

HONEY-MUSTARD ROAST CHICKEN WITH BUBBLE & SQUEAK

Honey-mustard roast chicken with bubble & squeak image

Try a twist on the traditional roast chicken with a honey-mustard glaze and bubble & squeak to use up leftover mash

Provided by Good Food team

Categories     Dinner, Main course

Time 2h10m

Number Of Ingredients 10

3 onions , each cut into 6 wedges
6 carrots , cut into large chunks
1 tbsp olive oil
1.6kg whole free-range chicken
3 tbsp soft butter
1 small pointed or Savoy cabbage , around 200g, finely shredded
4 spring onions , sliced
500g leftover mashed potatoes
1 heaped tbsp Dijon mustard
1 tbsp clear honey

Steps:

  • Heat oven to 200C/180C fan/gas 6. Boil the onions and carrots for 4 mins. Drain, then toss with the oil in a roasting tin. Sit the chicken in the middle, smear with 1 tbsp butter and season everything well. Roast for 1½ hrs, giving the veg a stir once or twice during cooking.
  • Meanwhile, cook the cabbage and spring onions in 1 tbsp butter in a pan until tender. Stir into the mash, season, then shape into 4 cakes. Set aside.
  • When time is up, check the chicken is cooked through. If it is, mix the mustard and honey, drizzle over the chicken and roast for 5 mins more. Remove and allow to rest.
  • Meanwhile, melt the remaining 1 tbsp butter in a non-stick frying pan. Fry the cakes for 4-5 mins or each side until golden and hot.
  • If you like, remove one whole breast and one leg from the chicken to be cooled, covered and chilled to use in Winter cobb salad the next day (see 'Goes well with'). Carve the rest of the chicken and serve with the cooking juices, veg and bubble & squeak.

  • One of the ways I make my roast chicken recipes stay new and interesting, is by incorporating new flavors and sauces. In this recipe, I show you how to make a Honey Mustard Roast Chicken, that is super flavorful and super easy to make. Honey and mustard is a natural combination, that works really well with the blank canvas that chicken is. Plus, for this recipe, we roast the chicken slowly in the oven, and the honey mustard, forms a glaze that helps crisp up the skin, making it absolutely delicious, while also penetrating into the meat itself. Once the chicken is cooked and resting, I show you to make a quick pan sauce, using the same mustard, that will bring all the flavors together, and won’t take any more than 10 minutes. Hope you enjoy this chicken recipe as much as I do! Recipe Overview & Keys to Success To make the best Honey Mustard Roast Chicken, just follow these few cooking techniques:
  • Just because you are glazing the chicken, doesn’t mean you don’t need to season the chicken. Honey and mustard, are not salt and pepper, so don’t forgot to season Honey is sugar. And sugar caramelizes (which is good) quickly, and burns (which is bad) almost as quickly. You can’t put the glaze on the chicken at the start of the process or it will burn...but you need to give it some time to bake on and caramelize. The sweet spot is about 20 - 30 minutes in the oven, so you'll want to drizzel it on after about 40 or so minutes, or at an internal temp of 125/130. If you find the glaze not cooked enough when the chicken is done, just use the broiler to crisp it up quickly at the end. Too browned, cover with foil. Like all my roast chickens, I like to use a brine. I also like to cook the chicken at high heat (400 degrees). At that temp, it will take between 1 – 1 1/2 hours to get to an internal temp of 155 which is what you want before removing from the oven. You gotta let the chicken rest.
  • 1 whole roasting chicken (about 5 – 8 lbs) 3 tablespoons cup of honey 3 tablespoons cup of dijon mustard Dash of cayenne pepper 1/2 chicken stock 1 tablespoon mustard for the sauce 2 tablespoons butter
