Ingredients

¼ cup fresh lime juice
2 tablespoons honey
1 teaspoon white sugar
1 teaspoon Dijon mustard
½ teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ cup olive oil
¼ cup canola oil

Steps:

Blend lime juice, honey, sugar, mustard, garlic powder, salt, black pepper, and cumin in a blender; stream olive oil and canola oil into the juice mixture while blending to emulsify the oil into the juice.

Ingredients

Salad
2 1/2 cups chopped romaine lettuce
1 can (15.5 oz) black beans, rinsed and well drained
3/4 cup chopped seeded tomato
3/4 cup chopped peeled jicama
3/4 cup fresh corn kernels, uncooked (or frozen or canned)
3/4 cup thinly sliced radishes
Half a ripe avocado, diced
1 red bell pepper, chopped
1/4 cup crumbled reduced-fat feta cheese
Honey-Lime Dressing
1/4 cup fresh lime juice
1/4 cup olive oil
2 tbsp honey
2 tbsp finely chopped fresh cilantro
1 garlic clove, peeled and minced
1 tsp chopped jalapeño pepper (use canned for less heat)

Steps:

Toss all salad ingredients in a large bowl. In separate bowl, mix dressing ingredients. Pour dressing over mixture and toss again. Season with salt and pepper to taste.

This lovely light dressing is great over fruit salad or mixed greens. I like to sprinkle my greens with a little sesame seed. You can also add a pinch of cayenne to the dressing for a little heat, or maybe a little ginger depending on your taste.

1/4 cup lime juice (about 2 limes)
1 tablespoon canola oil
2 tablespoons honey
1/4 teaspoon cinnamon (allspice or cardamom work too)
1/8 teaspoon paprika

Steps:

I like to mix my salad dressings in a glass jar with a lid.
Combine all ingredients and shake well to combine.
Chill.
Shake again before serving.
