HOMEMADE HONEY GRAHAMS
The way my boys eat them, I would spend a fortune on honey graham crackers at the grocery store. So I decided to make a homemade version that is less processed-and less expensive. These are wonderful, although they still don't last long. -Crystal Jo Bruns, Iliff, Colorado

Steps:
- Whisk together first 8 ingredients; cut in butter until crumbly. In another bowl, whisk together honey and water; gradually add to dry ingredients, tossing with a fork until dough holds together when pressed., Divide dough in half. Shape each into a disk; cover and refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to an 8-in. square. Using a knife or fluted pastry wheel, cut each into sixteen 2-in. squares. If desired, prick holes with a fork. Place 1 in. apart on parchment-lined baking sheets. , Bake until edges are light brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

As a busy health-care professional and mom, one of the most meaningful gifts I give to the people I love is my time and skills in the kitchen. - Preheat oven to 350°. Combine eggs, oil, honey and vanilla; beat until smooth. In another bowl, whisk next 7 ingredients for 30 seconds. Stir flour mixture into egg mixture just until combined. Add carrots; mix well., Pour batter into a lightly greased 9x5-in. loaf pan; bake until a toothpick inserted in center of loaf comes out clean, about 1 hour. Cool 10 minutes before removing to a wire rack.

- 1. In medium bowl combine crumbs, flour, sugar, baking powder and salt. Set aside.2. In large bowl combine egg, milk, oil and vanilla. Add graham mixture, stirring until just combined. Stir in pecans.3. Line twelve 2 1/2-inch muffin cups with paper bake cups or spray with cooking spray. Fill each 2/3 full. Bake at 375°F about 15 minutes or until toothpick inserted near center comes out clean. Cool in pan for 10 minutes. Remove from pan. Cool completely or serve warm.

BANANA HONEY NUT LOAF
This recipe is from Family Circle. Honey browns very quickly so tent loaf with foil if you see it getting too dark.

Steps:
- Heat oven to 350 degrees F; coat a 9x5x3-inch loaf pan with nonstick cooking spray.
- Make topping: In a medium-size bowl, blend together flour and butter with your fingertips.
- Stir in nuts, honey and salt, then work mixture together with your hands to make crumbs (mixture will be very moist); set aside.
- In large bowl, prepare banana loaf; whisk together flour, baking powder, salt, baking soda and nutmeg.
- Make a well in the center of the dry ingredients.
- In medium-size bowl, whisk eggs, honey, oil, mashed banana and vanilla.
- Pour into well in flour mixture and stir until just combined.
- Stir in nuts and transfer batter to prepared pan.
- Sprinkle with topping.
- Bake loaf at 350 degrees for 55 minutes.
- Cool in pan on wire rack for 20 minutes, then remove from pan directly to rack and cool completely.

- Combine yeast, 1/2 cup warm water, and sugar in a 2-cup glass measuring cup; let stand 5 minutes.
- Beat yeast mixture, 1 1/2 cups whole wheat flour, and next 4 ingredients at medium speed with an electric mixer until blended. Stir in remaining 1 1/2 cups wheat flour. Add bread flour, 1 cup at a time, beating after each addition. Let stand 15 minutes.
- Turn dough out onto a lightly floured surface, and knead 5 to 10 minutes or until smooth and elastic. Place in a well-greased bowl, turning to grease top.
- Cover and let rise in a warm place (85°), free from drafts, 1 hour or until doubled in bulk. Punch dough down, and divide into 2 equal portions. Shape each portion into a loaf; place loaves into 2 greased 9- x 5-inch loafpans.
