SOFT HONEY COOKIES
These old-fashioned honey cookies have a subtle honey-cinnamon flavor and a tender texture. This recipe has been a favorite in my family for years and now it can be one at your house, too. -Rochelle Friedman, Brooklyn, New York

Steps:
- In a small bowl, beat sugar and oil until blended. Beat in egg; beat in honey and vanilla. Combine flour, baking powder, cinnamon and salt; gradually add to sugar mixture and mix well (dough will be stiff). Cover and refrigerate for at least 2 hours., Preheat oven to 350°. Drop dough by tablespoonfuls 2 in. apart onto a greased baking sheet. Bake until bottoms are lightly browned, 8-10 minutes. Cool for 1 minute before removing from pan to a wire rack. Store in an airtight container.

OLD GERMAN HONEY COOKIES
I got this recipe from my grandmother who got it from her grandmother. She had to translate it and then figure out measurements. The original recipe called for "enough flour to make a dough". Thankfully grandma knew what kind of dough.

Steps:
- In a saucepan over low heat, melt together sugar, shortening and honey. Let cool.
- Mix together eggs, vanilla, baking soda and ginger. Gradually add to cooled honey mixture.
- Slowly add 4 cups of flour to mixture. Stir until well blended. Drop by teaspoonfuls onto cookie sheets about 2 inches apart. Bake at 350 degrees F (180 degrees C) until golden (about 12-15 minutes).

HONEY BISCUITS (COOKIES)
This is my Mum's recipe for traditional Xmas biscuits. Usually given as presents. They are a 'Barossa Deutsch' recipe, which means they started as a German recipe, brought over with the settlers of South Australia's Barossa Valley, and have been adapted over the years. Makes a large quantity, but last for months in a sealed container.

Steps:
- In a very large bowl thoroughly combine all ingredients except flour.
- Gradually stir in flour until you get a stiff mix that is neither dry nor sticky. Quantity of flour will vary every batch.
- Cover bowl with lid or plastic wrap and set aside overnight.
- Next day. Preheat oven to moderate (180 degrees Celsius). Now, either roll out and cut out shapes or roll into balls. Press halved, skinned almonds onto balls. Either way, allow enough room between biscuits for slight spreading.
- Baking time will vary depending on thickness of biscuit. The biscuit will have a nice golden colour when done and still be soft. Allow to set for a couple of minutes on tray before putting onto a wire rack to cool. A thin biscuit will be crisp whilst a 'ball' will be softer.
UKRAINIAN CHRISTMAS HONEY COOKIES MEDIANYKY
These Christmas cookies are a perennial favorite. They may be rolled out and cut into rounds, stars, or crescents. Often they are hung on the lower branches of the Christmas tree as treats for the younger children.

Steps:
- Sift together flour, spices, powdered sugar, and baking powder. Note: powdered sugar sometimes called icing sugar, confectioners' sugar or XXX sugar, all the same thing.
- Add eggs, honey, and orange peel to make a stiff dough.
- On a floured work surface, roll out dough about 1/2 inch thick.
- Cut shapes with cookie cutter, place on nonstick baking sheet, and brush with glaze.
- Place 1/2 almond in the middle of each, sprinkle with coarse sugar, and bake in preheated 350 degrees oven until done, about 15 minutes.
- Cool on racks.
- Store in tightly covered tins.
