1 package (12 ounces) broccoli coleslaw mix
1/3 cup sliced almonds
1/3 cup raisins
2 to 3 tablespoons honey
2 tablespoons olive oil
2 tablespoons orange juice
4 teaspoons grated orange zest
1/4 teaspoon salt

Steps:

  • In a large bowl, combine the coleslaw mix, almonds and raisins. In a small bowl, whisk the remaining ingredients. Pour over salad; toss to coat.

This incredible broccoli slaw recipe makes about 4 cups, which is about 8 servings. It comes together in about 5 minutes and is a total crowd pleaser! It's easily doubled or even tripled for a crowd. Number Of Ingredients 8

1 (12-ounce) package broccoli slaw* OR 4 cups shredded broccoli stems + 1 shredded carrot
OR 4 cups combo of shredded cabbage + broccoli slaw (or any slaw mix)
1/2 cup Veganaise (OR your favorite mayo)
1.5 tablespoons honey (OR white sugar)
1 tablespoon fresh lemon juice
1 tablespoon apple cider vinegar
1/4 teaspoon sea salt
a few spins freshly ground black pepper (about 1/8 teaspoon)

Steps:

  • In a medium mixing bowl, whisk together the dressing ingredients. I like to do this in the bowl I plan to serve this in.
  • Add the broccoli slaw mix and gently toss it all together. Be patient and give it a minute if the dressing doesn't look like enough (it is!)-the broccoli will start to release some water and it will all come together into a creamy slaw after a minute or so. Refrigerate until it's time to serve.
  • This slaw is best the day you make it, but it keeps well in the refrigerator (covered), up to 3 days. Cabbage-based slaw keeps in the refrigerator for about two days.

6 large green onions, cut into small pieces
1/2 c. basil leaves
1/3 c. light-tasting olive oil
3 T. honey
3 T. balsamic vinegar
1/4 c. apple cider vinegar
1/4 c. lime juice
1 t. salt
1 t. coarsely ground black pepper
1 medium red cabbage, cored
1 bag broccoli florets, with stems cut off and separated and florets in tiny pieces
1 large sweet red pepper, cut into 2" fine juliennes

Steps:

  • 1. In food processor fitted with metal blade, mince green onions and basil together. Add olive oil, honey, balsamic and apple cider vinegar, lime juice, salt, and pepper. Mix well in processor. Transfer to a large mixing bowl. 2. Using same processor work bowl fitted with thin slicing disk, slice up cabbage and broccoli stems. Transfer cabbage, sliced stems, florets, and red pepper to mixing bowl with dressing. Toss until slaw is well coated with dressing. 3. Chill 2 to 6 hr before serving. Before serving, toss well and adjust seasonings to taste.

  • To cook the quinoa: First, rinse the quinoa in a fine mesh colander under running water. In a medium-sized pot, combine the rinsed quinoa and 1 1/2 cups water. Bring the mixture to a gentle boil over medium heat, then reduce the heat to medium-low and gently simmer the quinoa until it has absorbed all of the water. Remove the quinoa from heat, cover the pot and let it rest for 5 minutes. Uncover the pot and fluff the quinoa with a fork. Set it aside to cool.
  • Meanwhile, toast the almonds: In a small skillet over medium heat, toast the almonds, stirring frequently, until they are fragrant and starting to turn golden on the edges, about 5 to 7 minutes. Transfer to a large serving bowl to cool.
  • To prepare the broccoli (if you’re not using prepared broccoli slaw), trim off any brown bits from the florets and stems, then slice the florets off the stems into manageable pieces. Use a paring knife to peel off the tough, woody perimeter of the broccoli stems and then discard those pieces. Now you can feed the broccoli florets through your food processor using the slicing blade, then switch to the grating blade to shred the stems. Alternatively, you can shred the broccoli with a mandoline or by hand with a sharp knife.
  • Combine all of the dressing ingredients in a liquid measuring cup and whisk until emulsified. The dressing should be pleasantly tangy and pack a punch. If it’s overwhelmingly acidic, add a little more honey to balance out the flavors. If it needs more kick, add a bit more mustard or lemon juice.
