In college, I spent some summers in New Mexico, where I fell in love with authentic Mexican chorizo. But having become very health-conscious, my husband and I have been trying to replicate that chorizo flavor in extra lean ground turkey. This recipe tastes just like the pork chorizo from our favorite taco trucks. Serve in tacos, burritos, quesadillas, omelets, or breakfast burritos. I suggest serving on corn tortillas, with chopped onion and cilantro garnish, and a squeeze of lime.

3 dried red chile peppers, or more to taste
2 tablespoons apple cider vinegar
2 tablespoons red chile powder
1 tablespoon water
1 tablespoon crushed dried oregano
2 teaspoons salt
2 large cloves garlic, minced
1 teaspoon cumin seeds
¾ teaspoon white sugar
½ teaspoon freshly ground black pepper
1 ¼ pounds extra-lean ground turkey breast
2 teaspoons olive oil
½ lime, juiced
¼ orange, juiced

Steps:

  • Pulse dried red chile peppers in a spice grinder until coarsely ground.
  • Combine ground chile peppers, apple cider vinegar, red chile powder, water, oregano, salt, garlic, cumin, sugar, and black pepper in a large bowl; mix well. Add turkey; mix until seasonings are well-incorporated.
  • Heat olive oil in a large skillet over medium-high heat. Add seasoned turkey; cook, stirring frequently to break up clumps, until no longer pink, 3 to 5 minutes. Stir in lime juice and orange juice. Continue cooking until browned, about 5 minutes more.

1 pound ground turkey
1 tablespoon apple cider vinegar
2 teaspoons chili powder
2 teaspoons smoked paprika

Steps:

1 pound lean ground turkey
4 links Mexican chorizo sausage, casings removed
4 cloves garlic, minced
¼ teaspoon onion powder
¼ teaspoon chipotle chile flakes
1 pinch ground black pepper
2 tablespoons buttery spread
4 slices pepperjack cheese
4 hamburger buns
¼ cup mayonnaise, divided
2 cups spring mix lettuce, divided
1 lime, juiced

Steps:

  • Combine ground turkey, chorizo, garlic, onion powder, chipotle flakes, and black pepper in a large bowl; mix with your hands until well-blended. Shape into 4 loosely-packed patties.
  • Heat a griddle or large skillet over medium heat until hot; grease with buttery spread. Place patties on the griddle; cook until browned, about 3 minutes. Reduce heat to medium-low; continue cooking for about 5 minutes. Flip patties and cook until browned on the second side, about 6 minutes.
  • Top each patty with a slice of pepperjack cheese. Cook until cheese is melted, about 1 minute more.
  • Toast hamburger buns in a toaster oven. Spread 1 1/2 teaspoon mayonnaise over each half. Place cooked patties over bottom buns. Top each patty with 1/2 cup spring mix lettuce. Sprinkle lime juice over lettuce. Cover with top buns.

This is the turkey chili I made to compete on fooduel.blogspot.com. It's not overbearingly spicy, with good texture and flavor. To thicken this chili, you can add double the amount of chorizo and stew the tomato sauce before adding it to the slow cooker.

½ yellow onion, diced
3 ½ ounces dry chorizo sausage, diced
1 yellow bell pepper, diced
1 red bell pepper, diced

1 (15 ounce) can black beans
1 (15 ounce) can baked beans (such as Bush's® Texas Ranchero)
1 (14.5 ounce) can Italian-style stewed tomatoes (such as Del Monte® Italian Recipe Stewed Tomatoes)
1 (14 ounce) can whole kernel corn
1 teaspoon hot pepper sauce (such as Tabasco®)

Steps:

  • Turn a slow cooker on High and add butter to melt.
  • Heat a medium pan over medium heat. Add chorizo and cook until fats begin to render, about 3 minutes. Add onion; cook and stir until browned, 5 to 7 minutes more. Add to the slow cooker. Stir in bell peppers, chile peppers, tomato sauce, black beans, baked beans, tomatoes, and corn. Add hot sauce, chili powder, and paprika.
  • Heat oil in the same pan over medium-high heat. Saute garlic in the pan until browned, about 1 minute. Add turkey; saute until browned and crumbly, 5 to 7 minutes. Drain the liquid from the pan and add to the slow cooker. Turn the slow cooker to Low and cook, stirring once every hour, until reduced, about 6 hours. Serve with a spoonful of sour cream and shredded Cheddar on top of each bowl.

TURKEY CHORIZO

I was looking to make a lighter version of chorizo with a strong garlic flavor. The original recipe calls for ground pork and not having in I used turkey and made a few additional changes and the result was very good. The Ancho chile will not add alot of heat. It adds a nice rich flavor. The heat can be adjusted to your liking by increasing the red pepper flakes.

1 teaspoon kosher salt
1 teaspoon black pepper, freshly ground
2 tablespoons dried ancho chile powder

Revised version of 'Janelle's Turkey Chorizo (Loose, Not Encased).' I have adjusted the spices and method to suit my tastes. My friends who eat chorizo often have told me the end result is very good and close to an original recipe.

2 dried red chile peppers
1 tablespoon dried Mexican oregano
2 teaspoons smoked salt
2 teaspoons ground cumin
¾ teaspoon white sugar
½ teaspoon multicolored peppercorns
2 cloves garlic
2 tablespoons New Mexico red chile powder
2 tablespoons smoked paprika
2 tablespoons apple cider vinegar
1 tablespoon water
1 ½ pounds ground turkey breast

Steps:

  • Place dried peppers in a mortar and grind into medium-sized pieces. Add oregano, salt, cumin, sugar, and peppercorns. Grind into a rough powder. Add garlic and continue to grind until a paste forms. Use a wooden spoon to mix the chile powder and paprika into the paste. Add the vinegar and water while stirring. Mix well.
  • Place ground turkey in a large bowl. Mix seasoning paste into turkey using your hands covered in clean rubber gloves. Allow mixture to rest in the refrigerator for at least 1 hour before using in your favorite recipe.

1 tablespoon canola oil
8 ounces Mexican or Spanish chorizo, casing removed and crumbled or chopped
1 1/4 pound ground turkey
Black pepper
1 large ear corn, scraped from the cob, cob reserved and broken in half
2 cups chicken stock
2 tablespoons pureed chipotle in adobo sauce, using peppers and sauce
1/4 teaspoon ground cinnamon
3 to 4 cloves garlic, chopped
1 large or medium onion, finely chopped
2 tablespoons tomato paste
One 14-ounce can red or black beans
A handful fresh cilantro leaves, chopped
1 lime
Crushed corn chips, such as Fritos, for garnish

Steps:

  • Heat the oil in soup pot or Dutch oven over medium-high heat. Add the chorizo and brown. Add the turkey and break up with a potato masher, then season with some black pepper. When the turkey is browned, add in the corn.
  • Place the reserved corncob in a small pot and add the stock and a little water to cover. Bring to a bubble and simmer.
  • To the meat and corn, add the chipotle puree, stirring until fragrant. Add the cinnamon, garlic and onions, and partially cover to soften, 5 minutes. Add the tomato paste and stir until fragrant, about 1 minute.
  • Remove the cob from the corn stock, then add the stock and beans to the chili, and stir to combine. Cool and store the chili for a make-ahead meal.
  • Reheat over medium heat, adding a little more stock or water if necessary.
  • To serve, top with cilantro and the juice of a wedge of lime and some crushed corn chips.
