DILL PICKLE BREAD
Steps:
- Finely chop dill pickle. Blot pickle with a paper towel. Set aside.
- Proof yeast: Sprinkle yeast and 1 teaspoon of sugar over 1/2 cup of pickle juice (or pickle/water combo). Let sit for about 10 minutes until frothy.
- Pour into mixing bowl. Using a mixer fitted with flat paddle attachment, combine the yeast mixture with oil, 1 Tablespoon sugar, 2 cups flour, remaining pickle juice and salt. Slowly add remaining flour 1/4 cup at a time while mixing on low speed. Switch to dough hook knead on medium speed. Add in chopped dill pickle and dill weed. Continue kneading for 6-10 minutes or until dough is smooth and elastic. While kneading If you think the dough is too moist, add additional flour (a tablespoon at a time). If the dough is looking dry add warm water (a tablespoon at a time).
- Transfer to a greased bowl and let rise until doubled, about 1 hour. Punch down dough. Form loaf into a round shape and place in greased dutch oven covered with lid to rise. Let rise again for about 30 minutes. Meanwhile, preheat oven to 450 degrees.
- While covered place in the oven and bake for 20 minutes. Remove the lid at that time and return the pot to the oven for another 10-15 minutes. Internal temperature should be about 200 degrees. Gently shake the loaf onto a cooling rack. Cool for about 30 minutes before cutting
- *Alternate method:
- Bread Machine: Place all ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select dough setting and press start. Add pickle during the 'add in' cycle. Check the dough. It should form a nice smooth ball. If you think the dough is too moist, add additional flour (a tablespoon at a time). If the dough is looking dry add warm water (a tablespoon at a time).
- When dough cycle has finished, remove dough from pan and turn out onto a lightly oiled surface. Form dough into an oval, cover and let rest for 10 minutes.
- After resting, turn dough bottom side up and press to flatten. Fold dough into an envelope by folding the top 1/3 of the way to the bottom. Then fold the bottom a 1/3 of the way over the top. Then press dough with the palm of your hand to make an indentation down the center of the dough and fold the top completely to the bottom, sealing the seam with the palm of your hand.
- Place on a baking pan dusted with cornmeal or baking pan lined with a silicone mat. Cover and place in a warm spot to rise for approximately 20 minutes. Preheat oven to 400 degrees F. Bake for 20 to 25 minutes or until nicely browned.

I'm not sure where this recipe came from but it's one that my mom made all the time when I was growing up. It's now a regular at my house and it gets excellent reviews from everyone I've served it to...and the best part is the kids love it too!

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
- Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Cut each cucumber lengthwise into six spears. In a large bowl, combine cucumbers, dill and garlic; set aside. , In a Dutch oven, combine remaining ingredients. Bring to a boil; cook and stir just until sugar is dissolved. Pour over cucumber mixture; cool., Transfer to jars if desired and cover tightly. Refrigerate for at least 24 hours. I've used dill in breads and just love the flavor, but one day while preparing hamburgers, I wondered if I could use actual pickles. Here is my creation use dill pickle juice for half of the water for the deluxe version. Enjoy!

- Preheat oven to 350°. Line a 9"-x-5" loaf pan with parchment paper.
- In a large bowl, whisk together sour cream, vegetable oil, eggs, and sugar until smooth. Add flour, baking powder, salt, and pickle juice and stir until combined. Fold in chopped pickles, cheddar, and dill. Pour batter into loaf pan.
- Bake until the bread is golden and a toothpick inserted into the middle of the loaf comes out clean, 40 minutes. Cool completely before slicing.
GERRY'S MEATLOAF WITH DILL PICKLE SAUCE
Yet another of dad's recipes. This is a slightly different meatloaf, than what most people are familiar with. Excellent served with rice, potatoes or broad pasta & fresh peas.

- Preheat oven to 350°F.
- Lightly mix meats with onions, bread crumbs, pickles, egg, salt and pepper until well blended.
- Shape into a loaf and place in shallow pan.
- Combine pickle juice, chili sauce or ketchup, water, sugar and Worcestershire sauce.
- Pour over meatloaf and place in 350°F oven basting twice with sauce in pan for 40 minutes.
- Continue baking without basting for additional 30 - 35 minutes, until meatloaf is really glazed.
- Garnish with a pickle fan. Dad always served this with Brussels sprouts and tiny whole carrots.

- Preheat oven to 350°F.
- In large bowl, beat together eggs, breadcrumbs, milk, onions, oregano, basil, salt and pepper.
- Add ground beef and combine.
- Place half of ground beef mixture into bottom of roasting pan and mold into a loaf approximately 3 inches wide and 7 inches long.

ERYK'S DILL PICKLE MEATLOAF
When my son Eryk was a little boy, he used to ask me to make this at least once a week. He is now 22 and he still says it's his favorite meat loaf. I usually serve with baked potatoes and a green salad.

Found this recipe in a make your own groceries book. Since we haven't a clue what is in the lunchmeat we buy, this may help especially with knowing the sodium content. This recipe makes 2 loaves, one in which, you can make into a pickle and pimento loaf.

- 1. Ask your butcher to grind the meats together, or using a food processor to mix them well, but becareful not to puree the meat.
- 2. Place in large bowl and combine spices and rest of ingredients, using hands and distributing evenly with the meat
- 3. divide the loaf mixture into 2 equal size loaf pans. Using plastic wrap, push meat down into pans, all along edges to get all air out, to make it all tight. press down firmly. remove plastic wrap
- 4. Bake in 275 degree oven for 2 1/2 hours
- 5. Just before loaves are done, fill sink with ice and water, upon removal of oven sit pans in the sink for 20 to 30 minutes, cover the cooled loaves and refrigerate.
- 6. remove both loaves from their pans to slice and serve. wrap for either refrigerator or freezer storage.
- 7. FOR PICKLE / PIMENTO LOAF: to one of the loaves before placing in baking pans, add : 1/2 cup drained piclle relish and a drained 4 oz jar of pimentos
