HOMEMADE MAPLE YOGURT RECIPE
Do you like Brown Cow® maple yogurt? Well, this is a very delicious homemade version that I created myself, after several frustrating attempts at getting homemade yogurt to taste like it's commercial gourmet counterparts! Trust me, after making this yogurt, you will never want to buy commercial yogurt again!

Steps:
- Heat milk in a small saucepan over medium heat until it begins to bubble. Stir powdered milk and sugar into the hot milk until dissolved. Remove from heat and let cool until an instant-read thermometer reads 110 degrees F (43 degrees C).
- Place yogurt in a bowl and add a small amount of warmed milk mixture; combine thoroughly. Pour yogurt mixture back into the saucepan with warmed milk in a thin stream, stirring constantly, until thoroughly blended. Add heavy cream and maple flavoring. Stir well to combine.
- Pour milk-cream mixture into 7 individual serving jars. Process in a yogurt maker, according to manufacturer's instructions, for 8 hours. Chill at least 3 hours before serving.

- Place milk in a large saucepan over medium-high heat; cook until it reaches 180 degrees, stirring occasionally to prevent scorching, 5 to 7 minutes. Let cool to 115 degrees.
- Whisk together 1 cup milk and the yogurt. Stir into remaining milk.
- Transfer to a 1-quart mason jar. Wrap jar (without lid) in 2 clean kitchen towels, completely covering sides and top. Let stand undisturbed in a warm place until yogurt has the consistency of custard, 4 to 5 hours.
- Refrigerate uncovered jar; when it's cool to the touch, about 30 minutes, screw on a tight-fitting lid.
EASY HOMEMADE YOGURT
This is a super-easy way someone taught me to make homemade yogurt that requires only 2 ingredients. Pay attention to the notes. Halve the recipe if this is your first time. Usually because store-bought yogurts have lots of additives first-time yogurts do not turn out perfectly. But save 1 cup and use it as base the next time and you will see how well it turns out.

- Pour the milk into a pot and bring to a boil, stirring occasionally to prevent sticking. Reduce heat and simmer, about 10 minutes; do not let it boil over.
- Remove pot from heat and allow to sit for 30 to 60 minutes. Dip your finger into the milk every once in a while to determine when you can leave your finger in the milk for 10 to 15 seconds without burning. Pour in the yogurt; there is no need to stir.
- Put the lid on the pot and carefully wrap a blanket around it. Place the wrapped pot in a slightly warm place where it will be undisturbed for 6 to 10 hours; overnight is best. Transfer to the refrigerator to allow the yogurt to continue to thicken.

MAPLE YOGURT
There's this yummy maple yogurt that appears in my local supermarket every fall. I considered it a rare treat...but knew there had to be a way to make it more cheaply since the little containers cost dearly, and if I want to enjoy it any time of the year. My version tastes even better and comes out with such a rich creamy texture! It's worth the overnight wait.

- Line a colander with paper towels or cheesecloth and spoon the yogurt in so all the whey strains off into a bowl. Leave it in the fridge overnight (or for at least 8 hours or so).
- Discard the whey and put the blob of strained yogurt into a mixing bowl. Add the vanilla and syrup.
- Whip it up with an electric mixer to beat all the air bubbles out, thoroughly beating all the ingredients together.
- Makes about 3-4 servings depending on how it's portioned. Doesn't last more than 2 or 3 servings in this house! Doubles nicely in bigger colanders, too!

MAPLE YOGURT
If in treatment, check with the RD or MD if probiotic foods are safe to eat. This recipe impresses people. It is very easy to transform plain yogurt by adding some fruit, or honey, a touch of vanilla or, as here, delicious maple syrup. It couldn't be simpler to do and gives complete control over the amount of sugar added. This is important to know. The popular commercial flavored yogurts are full of hidden sugars. A 6-ounce container of fruit yogurt has 25 grams of sugar, and although the 'light' versions have about half that, the manufacturers make up the difference with the artificial sweetener aspartame, plus there are the unpronounceable things added to stabilize it. With this delicious yogurt you'll know exactly what you're getting in it: real yogurt and real maple syrup, nothing else.
