¼ teaspoon salt

2 cups romaine lettuce, chopped
¼ cup red onion, sliced
¼ cup cherry tomato, halved
¼ cup avocado, diced
1 rotisserie chicken breast, sliced
1 egg, hard boiled and sliced

Steps:

  • In a small bowl, add mustard, honey, olive oil, lemon juice, salt, pepper, and garlic powder. Stir until combined.
  • In a large bowl, add lettuce, onion, tomatoes, avocado, and chicken.
  • Drizzle with honey mustard dressing and toss until evenly coated.
  • Serve with hard-boiled egg.

2 tablespoons olive oil
⅓ cup honey
3 tablespoons stone ground mustard
2 tablespoons dijon mustard
½ lemon
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
4 chicken thighs, skinless and boneless
1 head romaine lettuce, chopped
1 cup cherry tomato, halved
¼ red onion, thinly sliced
1 avocado, sliced
1 hard-boiled egg, sliced
¼ cup cooked bacon, diced

Steps:

  • In a small bowl, add the olive oil, honey, stone ground mustard, Dijon mustard, lemon, garlic, salt, and pepper. Whisk until smooth.
  • Remove ½ of the marinade and refrigerate to use as a dressing.
  • Add chicken thighs to remaining marinade and let it marinate for two hours.
  • Add a teaspoon of olive oil to a nonstick pan. Sear chicken on each side until golden, crispy, and cooked through. Set aside and allow to rest.
  • Put lettuce in a large bowl, add tomatoes, red onions, avocado slices, and hard-boiled egg.
  • Slice chicken into strips and place in the salad.
  • Add the remaining marinade to the salad and toss.
  • Sprinkle bacon on top.
  • Enjoy!

1 cup sweet potato, diced
1 cup red potato, diced
1 cup red onion, chopped
1 cup brussel sprout, quartered
1 cup green beans, chopped
1 cup carrot, chopped
olive oil, to taste
salt, to taste
pepper, to taste
½ tablespoon dried thyme
1 tablespoon fresh rosemary, chopped
¼ cup dijon mustard
¼ cup honey
3 cloves garlic, minced
4 chicken thighs

Steps:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Place the sweet potato, red potato, red onion, Brussels sprouts, green beans, and carrots on the baking sheet in separate piles.
  • Drizzle everything with olive oil, then sprinkle with salt, pepper, thyme, and rosemary. Rub the seasoning into the vegetables until evenly coated and spread flat on the baking sheet, keeping the vegetables separate. Set aside.
  • In a small bowl, combine the mustard, honey, garlic, salt, and pepper, and whisk until smooth. Set aside.
  • Place the chicken thighs skin-side down in a greased cast-iron skillet. Season with salt and pepper, then brush generously with the honey-mustard sauce. Flip the chicken thighs over and repeat, seasoning with salt and pepper, then brushing with the rest of the honey-mustard sauce.
  • Place the vegetables and the chicken in the oven on separate racks. Bake for 30 minutes or until chicken reaches an internal temperature of 165°F (75°C) . (Optional: Remove the vegetables once cooked and broil the chicken for 1-2 minutes, or until the skin crisps up.)
  • Let everything cool, then distribute into resealable containers, mixing up the combination of vegetables so that you get something a little different each day.
  • Cover and refrigerate for up to 4 days.

¼ cup dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
2 teaspoons salt
1 teaspoon pepper
4 boneless, skinless chicken thighs
¼ cup bacon, chopped
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
¼ red onion, sliced
1 avocado, pitted and sliced

Steps:

  • In a small bowl or liquid measuring cup, mix the honey, mustard, oil, garlic, salt, and pepper.
  • Place the chicken thighs in a dish and pour the marinade over the chicken, reserving half for later.
  • Flip the chicken thighs over, fully covering them in the marinade.
  • Cover the dish with plastic wrap and refrigerate for 30 minutes to an hour.
  • Heat a large skillet over medium heat, and place the chicken thighs in the pan.
  • Cook for five minutes on each side, or until the chicken is cooked through.
  • Remove the chicken and set aside.
  • Wipe the pan clean and place back on the heat.
  • Add the chopped bacon to the pan and cook until crispy, about ten minutes.

  • Add three tablespoons of water to the reserved marinade and stir to combine.

2 cups seedless red grapes, halved
2 cups diced apples
½ cup chopped celery
½ cup chopped walnuts
½ cup mayonnaise

Steps:

  • Combine chicken, grapes, apples, celery, and walnuts in a large bowl. Combine mayonnaise, honey, and Dijon mustard in a small bowl, stirring well. Gently stir into chicken mixture. Cover and chill.

3/4 cup Dijon honey mustard salad dressing
1/3 cup chicken broth
1/3 cup half-and-half cream
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup all-purpose flour
4 boneless skinless chicken breast halves (6 ounces each)
3 tablespoons olive oil, divided
1/2 pound medium fresh mushrooms, thinly sliced
1 large sweet onion, halved and thinly sliced

Steps:

  • In a small bowl, combine the first 5 ingredients; set aside. Place flour in a shallow bowl. Add chicken, a few pieces at a time, and toss to coat; shake off excess. In a large skillet, heat 2 tablespoons oil over medium-high heat. Brown chicken on both sides. Remove from pan. Add mushrooms and onion to same pan; cook and stir until tender, 6-8 minutes., Add dressing mixture, stirring to loosen browned bits from pan. Return chicken to pan; bring to a boil. Reduce heat; simmer, uncovered, until a thermometer inserted in chicken reads 165°, 12-15 minutes longer.
