Turkey and Potato Bake image

Delicious way to use leftover turkey. Piping the potatoes around the casserole using a pastry bag fitted with a large star tip makes a wonderful presentation.

0.5 (7 5/8 ounce) package instant roasted garlic mashed potatoes
1 1/2 cups hot water
1/2 cup milk
2 tablespoons butter or 2 tablespoons margarine
4 medium green onions, sliced (1/4 cup)
2 cups chopped cooked turkey
1 (1 lb) bag frozen mixed vegetables, thawed and drained
1 (12 ounce) jar home-style turkey gravy
1/2 teaspoon poultry seasoning

Steps:

  • Heat oven to 350 degrees. Spray 2 quart casserole with cooking spray. Make mashed potatoes as directed on package using water, milk and butter. Stir in onions.
  • Heat turkey, vegetables, gravy and poultry seasoning to boiling in 2-quart saucepan over medium-high heat. Pour turkey mixture into casserole. Spoon or pipe potatoes with pastry bag around edges of casserole.
  • Bake uncovered about 30 minutes or until heated through and potatoes are light brown.

1 pound ground turkey
1 medium onion, chopped
1 shallot, finely chopped
3 garlic cloves, minced
1/4 cup tomato paste
1 medium sweet potato, peeled and cubed
1 cup chicken broth
2 teaspoons smoked paprika
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups chopped fresh kale
Dash crushed red pepper flakes
1 medium ripe avocado, peeled and sliced
Minced fresh mint, optional

Steps:

  • In a large skillet, cook turkey, onion, shallot and garlic over medium heat until turkey is no longer pink and vegetables are tender, 8-10 minutes, breaking up turkey into crumbles; drain. Add tomato paste; cook and stir 1 minute longer., Add sweet potato, broth, smoked paprika, salt and pepper. Bring to a boil; reduce heat. Simmer, covered, until sweet potatoes are tender, about 10 minutes, stirring occasionally. Add kale and red pepper flakes; cook and stir until kale is wilted, about 2 minutes. Serve with avocado and if desired, mint. Freeze option: Freeze cooled mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth or water if necessary. Serve with avocado and, if desired, mint.

This was made from Thanksgiving leftovers, and ingredients in my pantry. It's a family favorite and a hit at Pot lucks. With leftovers, it's a breeze, made from scratch ... it's work. Either way it's a hit and well worth the time. After a holiday meal half the work is done because you usually have the mashed potatoes, and turkey. When I make it from scratch, I usually use chicken rather than turkey. Prep times are from leftovers.

1 pound cooked turkey meat, shredded
1 onion, chopped
1 (14.5 ounce) can green beans, drained
1 (10.75 ounce) can condensed cream of mushroom soup
8 ounces cubed Cheddar cheese
8 ounces shredded Cheddar cheese
4 cups prepared mashed potatoes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place turkey in an even layer on the bottom of a 9x13 inch baking dish. Top with a layer of onion and a layer of green beans so that the turkey is no longer visible. Pour the condensed soup over the onion layer, then sprinkle with shredded cheese. Stir together the cubed cheese and mashed potatoes; spoon over the top of the casserole, and spread to cover.
  • Bake for 30 to 40 minutes in the preheated oven, until heated through.

Water, milk and butter called for on potato mix pouch
2 cups chopped cooked turkey
1 bag (12 oz) frozen mixed vegetables, thawed
1 jar (12 oz) home-style turkey gravy
1/4 teaspoon poultry seasoning

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray; set aside. Make mashed potatoes as directed on pouch using water, milk and butter.
  • In 2-quart saucepan, heat turkey, vegetables, gravy and poultry seasoning to boiling over medium-high heat, stirring occasionally. Pour turkey mixture into casserole. Spoon or pipe potatoes around edge of casserole.
  • Bake uncovered 35 to 40 minutes or until mixture bubbles around edge of casserole.
