OLD FASHIONED FRENCH CANADIAN BAKED BEANS
This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

Steps:
- Cover beans with water and soak overnight.
- Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
- Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
- Mix together remaining ingredients (excluding beans and bacon).
- Add beans to bean pot (or any covered dish).
- Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
- Arrange bacon on top.
- Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
- Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

This recipe for Traditional Newfoundland Baked Beans have been made by many people throughout Newfoundland and Labrador for generations. They also have cooked their baked beans in a cast iron pot or ceramic pot, plus they made it over night in a wood burning stove. This recipe for baked beans I have recreated to take you back to those earlier days, by baking your beans in a cast iron pot and locking in the aroma you remember has a child. Slow baked in a cast iron pot to make these baked beans taste so delicious. I will share with you more delicious meals that will make you feel so good. - Pre-heat 325° bake for 3:30 to 4:00 hours, covered. 1. In a medium bowl with lid add 2 cups of white pea beans top with cold water then cover, 1/2 tsp sea salt, leave soaking over night. 2. When ready to start making baked beans, you will need a cast iron pot or ceramic pot with cover. ( Also you can cook these beans in your slow cooker ) 3. Start with chopping your onions and add to the bottom of your cast iron pot. 4. Next drain all water off beans then put beans in a medium boiler with cover and top with new cold water and boil for 1 1/2 hours on medium heat with cover part way opened. 5. When boiling have completed drain water into a container and keep for soup or your baking, then add the beans to your cast iron pot. 6. Then add 5 cups of cold water to your pot, in a small bowl mix together the remainder of your ingredients except your pork. 7. Mix together, then pour over onions and beans in pot, mix together then top with fat pork or bacon. 8. Put lid on bake pot then place in a 325° oven for 3:30 to 4:00 hours, check half way through the bake time add more water if needed then cover and continue baking. 9. This is a serving for eight people if you like more double recipe. Bake beans can take a long time to make, I reduced bake time by adding a extra hour on the boiling process. 10. When baked beans are done remove from heat, serve hot or cold. If you would like to bottle them just follow the canning process. Always label and date your bottles before storing them.
HOLLY'S BAKED BEANS
These beans are so simple to make, and if anybody looks at my recipes they will see that I stick to easy cooking. I have been making these baked beans for years, and gradually have tweaked the recipe to satisfy my families taste. My husband isn't crazy about a lot of onions, so I don't use them in the beans. We love sweet beans. Just like any recipe in the universe, you can add or subtract to suit your taste. These beans are fresh Maine beans that we bought at the farmers market. They are cooking in the oven right now and they smell soooo good!!!

- First you need to soak the beans overnight in cold water. Then turn the stove on and slowly boil until the skins start to peel off the beans. I usually take a spoon full and blow on them.
- drain the beans
- Cut the salt pork into about 4 or 5 slices, and put in the bottom of the bean pot. Pour the beans in over the salt pork.
- In a saucepan put 3 cups of cold water. Add the mustard, molasses and brown sugar to the pan. Cook until hot and pour over the beans in the pot.
- Put the pot into the oven at 300 degrees and cook for about 8 hours. Depending on your oven, they might be done sooner than that. This is my bean pot that I got as a wedding gift 33 1/2 years ago.
- Periodically throughout the cooking process you will have to check the beans to make sure there is enough water. I leave a small pan on the stove and boil water before I add it to the beans. At the end of the cooking process I stop adding water because I want the liquid to be a bit thick. Also taste the beans at times to see how they are doing. You can tell when they're done.
- When my beans are done, I add more brown sugar. This is of course optional. Like I said above my family likes sweet beans. You can leave the beans on the stove with the cover on and they'll stay warm for quite awhile. You can also put them back in the oven to heat through again. Here is the finished product. They are perfectly browned, sweet and delicious. I make Annette's 7-up biscuits, which were delicious, and served them with the beans.

- Soak navy beans overnight in a large bowl with enough water by several inches. Drain and place beans into a large Dutch oven or heavy pot with 6 cups water, baking soda, and bay leaf. Bring to a boil, reduce heat to medium, and boil for 10 minutes. Drain, saving bean-cooking liquid.
- Preheat oven to 300 degrees F (150 degrees C).
- Transfer beans into clean Dutch oven and stir bacon, onion, molasses, brown sugar, dry mustard, salt, and black pepper into beans. Pour enough of the hot reserved bean liquid in to cover beans; stir.
- Cover Dutch oven and bake in preheated oven for 1 hour. Check liquid level and add more of the reserved bean liquid to bring liquid up to cover beans. Return to oven and continue baking until beans are tender and almost all the liquid has been absorbed, about 1 hour.
- Raise oven heat to 350; bake beans uncovered in oven until top develops a flavorful crust, 20 to 30 more minutes.
