HOLIDAY OATMEAL COOKIE MIX
A jar of delicious cookie mix makes a great homemade gift, and these festive oatmeal cookies are particularly easy to mix up. Be sure to use old-fashioned (not quick-cooking) oats in this recipe for best texture. Package for gift giving with a ribbon and copy of the recipe.

Steps:
- For the mix:Whisk together flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
- Spoon into a 1-quart jar.
- Add the remaining mix ingredients in layers, pressing down lightly on each before adding the next. Seal jar.
- To prepare:Preheat oven to 350°F.
- Pour cookie mix into a large bowl and stir in egg and melted butter. Stir to combine.
- Drop cookie dough onto ungreased baking sheets by rounded tablespoons, leaving 2 inches between each cookie.
- Bake until edges are just golden, 10 to 12 minutes.
- Cool cookies on the baking sheets for 5 minutes and then transfer to wire racks to cool completely.

These cookies can also be given as a gift. To create a cookie kit, layer dry ingredients in a mason jar, cover the lid with gingham fabric, attach a wooden spoon and a copy of the recipe, and tie with raffia.

- Preheat oven to 350 degrees. On waxed paper, combine flour, baking soda and salt.
- In large bowl, with mixer on medium speed, beat butter and brown and granulated sugars until creamy, occasionally scraping bowl with spatula. Beat in egg and vanilla.
- Reduce speed to low; gradually beat in flour mixture just until blended, occasionally scraping bowl. With spoon, stir in oats, raisins and chocolate chips.
- Drop dough by heaping tablespoons, 2 inches apart, on ungreased large cookie sheet. Bake cookies 13-15 minutes or until tops are golden. Transfer cookies to wire racks to cool.
- Repeat with remaining dough. Store cookies in covered container at room temperature for up to 1 week or in freezer up to 3 months.

- Combine the first five ingredients; cut in shortening until crumbly. Add oats and mix well. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 5 batches (10 cups total). , To prepare cookies: In a bowl, combine 2 cups cookie mix, egg, milk and vanilla; mix well. Fold in chocolate chips and pecans if desired. Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until golden brown. Remove to wire racks to cool.

- Pulse oats in a food processor until finely ground; set aside. Combine flour, baking powder, baking soda and salt. , In a 1-qt. glass jar, layer oats, flour mixture, chips, almonds, coconut, brown sugar and granulated sugar, packing well between each layer. Cover and store in a cool, dry place for up to 6 months. Yield: 1 batch (about 4 cups total)., To prepare cookies: Preheat oven to 375°. Cream butter until light and fluffy. Beat in egg and vanilla. Add cookie mixture; blend well (mixture will be dry). Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until lightly browned, 10-15 minutes. Cool 2 minutes before removing to wire racks.
