EASY ORANGE CRANBERRY GLAZE
A good, easy, yummy glaze that can be used on chicken or turkey. I came up with this a few years ago for Thanksgiving, to change up the old boring turkey. Everyone loved it. There was no left-over turkey that year.

Steps:
- Mix together the orange juice, brown sugar, and cranberry sauce in a saucepan, stirring to dissolve the sugar. Bring the mixture to a boil, drop in the cinnamon stick, and reduce heat to a simmer. Cook, stirring frequently, until the cranberry sauce is melted and the glaze is hot and bubbling, about 10 minutes.
- To use: brush the glaze all over a roasted turkey during the last 45 minutes of cooking. Return the turkey to the oven and bake for 10 to 15 minutes to set the glaze. Repeat several more times before the end of cooking time.

This is not your typical glaze for baked ham, the cranberries give it a slightly sweet/sour flavor, and a festive color.

- Heat slowly, until smooth, beating with a wire whisk or rotary beater.
- Spoon over ham at last 1/2 hour of baking.

Steps:
- Cake: Preheat oven to 350F with shelf in middle of oven.
- Butter and flour 3-quart bundt cake pan.
- In large bowl of electric mixer, cream butter; add sugar, a little at a time, until light and fluffy; add eggs, one at a time, beating well after each.
- Sift flour, baking powder, baking soda, ginger and salt; add to creamed mixture alternately with buttermilk (begin and end with flour); fold in cranberries; spoon batter into prepared cake pan; smooth the top.
- Bake 1-1/4 hours or until tester comes out clean; cool on rack 10 minutes; turn out; allow to cool completely.
- Glaze: In heavy saucepan, over moderate heat, cook sugar and water; stir and wash down crystals on side of pan with brush dipped in water; add cranberries; bring to a boil; boil, undisturbed, until mixture reaches 250F;.
- strain through fine sieve, pressing hard on solids;.
- allow to cool slightly; brush on cake.

- Combine all ingredients in small saucepan over medium heat. Bring to a boil. Continue to gently boil for 5 to 7 minutes, stirring occasionally. Cool before serving. May be stored refrigerated up to 2 weeks. Serving Suggestions: Delicious as a cranberry side dish or as a glaze over turkey or pork. Also makes a nice turkey sandwich spread.

Steps:
- Place fresh cranberries and water in a medium saucepan over medium heat.
- Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
- Cook until cranberries begin to burst, about 10 minutes.
- Stir in sugar and reduce heat to low. Continue cooking 5 minutes, or until sugar has dissolved. Remove from heat and allow to cool. Discard spice bag. Chill in the refrigerator 8 hours, or overnight, before serving.

Found in an old Cooking Light magazine. I am finally getting to more of my recipe cutouts I've made in the past and entering them here. This is perfect for holidays and takes the old standby holiday ham and makes it extra special for family and friends.

Steps:
- Preheat oven to 325°F.
- Place ham on a broiler pan lined with foil. Insert meat thermometer into the thickest portion of the ham. Bake at 325 for 1 hour.
- Score outside of ham in a diamond pattern.
- Combine cranberry sauce, sugar, and mustard and brush over the ham.
- Bake an additional 35 minutes or until thermometer registers 140°F.
- Transfer ham to a platter; let stand 10 minutes before slicing.
