CINNAMON DESSERT SAUCE
Good on cakes, apple pie or steamed puddings. Try it on pancakes or waffles, too. From the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

- Combine sugar, flour and salt.
- Add boiling water gradually, stirring constantly.
- Add butter and cook for five minutes, stirring occasionally, until thickened.
- Remove from heat and stir in cinnamon.

This is a tiny gift for my Chef Mommie. Can anything be easier than a recipe w/1 ingredient + water? I don't think so! I'm not the least bit ashamed to post this impossibly easy & yummy recipe. Steps:
- Put water & cinnamon candies in a small saucepan over med heat.
- When the candies begin to melt, reduce heat & simmer till candies are fully melted & a has sauce formed.
- Stir constantly & add water (or more candies) as desired, but don't get the sauce too thin.
- Done!
- NOTE: You can add 2 tbsp of real honey or a good maple syrup for a more syrup sauce -- or you can make a buttery version & melt the candies in butter over very low heat.
- SERVING OPTIONS: Add sweet cinnamon flavor to your hot tea, coffee, apple juice, oatmeal, rice pudding, yoghurt or favorite smoothie & butter cream icing -- Use pastry brush to add sauce to breads, cinnamon toast or French toast -- Drizzle over vanilla ice cream! -- Make a kid pleaser cheese ball or spread for graham crackers using cream cheese & crushed Nestles Crunch candy bars -- Mix w/cream cheese & drained crushed pineapple to put on a biscuit, bagel, English muffin or breakfast/dessert tortilla wrap & pinwheels -- Use as glaze for cakes -- Mix w/melted butter & add to your favorite apple crisp, pie or 1 of those prepare the nite before & bake French toast dishes -- Give as a food gift -- Take along on your next camping trip -- See what I mean? CINNAMON SAUCE FOR APPLE PIE
Cinnamon with apple pie is as American as the pie itself. When my mom makes an apple pie or cobbler, this sauce is like the ice cream--you're SUPPOSED to have this with it at my house. My pop can take it or leave it, but if I had to choose the ice cream or this, buh-bye ice cream!! I can eat this with a spoon, straight from the saucepot. Did I mention I'm a sauce freak?? LOL! Sometimes, I make it just to eat and I always have everything on hand. It's also good on vanilla ice cream, but I prefer the pie. I have been known to request this just because. GOTTA LOVE SAUCES of ANY KIND!

Steps:
- Combine the sugar and flour in a small bowl.
- In a small saucepan, stir together the sugar mix into the milk. Cook until thick.
- Remove from heat and add the vanilla, butter, and cinnamon.
- Use as desired. Leftovers keep well, covered, in the refrigerator. When reheating in the microwave, do it very low and very slow, stirring frequently to prevent clumping and curdling.

- Combine sugar, cornstarch, and cinnamon sticks in a medium saucepan.
- Gradually stir in evaporated milk.
- Cookover medium heat, stirring constantly, until mixture comes just to a boil and slightly thickens.

- Note: making caramel is something that needs your undivided attention. Make sure you have all your ingredients gathered before starting and that you are not distracted. Leaving the caramel alone at any point can cause it to burn.
- Place sugar in a heavy-bottomed medium sauce pot. Make sure the sides of the pot come up a little bit (that it’s not a shallow pan) because it will boil up when you add the cream later.
- Place the pan over medium-low heat. Cook stirring often, but being careful not to spread the sugar up the sides of the pan too much. The sugar will become a little bit liquidy, form clumps, then finally melt into a light amber liquid. Keep stirring until the liquid is amber in color. This will take about 7-12 minutes, depending on your pot and the heat of your stove. DO NOT LEAVE THE SUGAR ALONE, it will burn fast.
- Once the liquid turns amber, add the butter and stir until it’s melted. Add half of the heavy whipping cream, stir, then add the rest. It will bubble up as you add it to the mixture. Turn off the heat and then stir in the, cinnamon, vanilla, and salt, if using. Stir until smooth. You may need to whisk it to get out all the clumps.
