Number Of Ingredients 18

4 large red bell peppers, seeded, deveined, and halved lengthwise
1/2 lb ground pork
2 sweet Italian sausage links, casings removed
0.5 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix
1 (16 ounce) bag frozen spinach, thawed and squeezed dry
1 teaspoon lemon juice
3 garlic cloves, crushed
1 cup half-and-half cream
1 pint cherry tomatoes, halved
1/2 cup parmesan cheese
8 slices fresh mozzarella cheese
1/4 cup macaroni noodles, cooked according to package directions to firm stage
1 tablespoon butter
1 tablespoon olive oil
2 tablespoons all-purpose flour
3/4 cup half-and-half cream
1/2 teaspoon salt
1 1/2 cups parmesan cheese, grated

Steps:

  • Preheat oven to 375°F.
  • In a large skillet, cook pork and sausage, crumbling as it cooks until meat is no longer pink and beginning to brown. Drain fat. Add ½ c water, half & half, spinach, ½ package of Hidden Valley Origianl Ranch Seasoning Mix, 2 cloves of the crushed garlic, 1 tsp lemon juice and cook over medium heat 4 minutes. Toss halved tomatoes with remaining garlic clove - set aside. Make Béchamel and stir in cooked macaroni noodles.
  • Add 1 Tbsp olive oil to a 13 X 9 glass baking dish and swirl to coat. Place pepper halves cut side up in baking dish and brush cavity of peppers w/Olive oil. Spoon meat mixture into the pepper halves, dividing evenly amongst the 8 halves. Top meat mixture with halved cherry tomatoes with garlic and any accumulated juices, dividing evenly between pepper halves. Spoon Béchamel/noodle mixture over tomatoes, again dividing equally. Bake at 375? F for 45 minutes. Top each stuffed pepper half with 1 slice of fresh mozzarella and continue baking until cheese melts 5-10 minutes.
  • Béchamel Sauce:.
  • • 1 Tbsp butter.
  • • 1 Tbsp olive oil.
  • • 2 Tbsp all-purpose flour.
  • • ¾ c half & half.
  • • ½ teaspoons salt.
  • • ¼ c parmesan cheese, grated.
  • Directions.
  • In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 4 minutes.
  • Meanwhile, heat the half & half in a separate pan until just about to boil. Add the hot milk to the butter mixture, whisking continuously until very smooth. Bring to a boil. Cook 10 minutes, stirring constantly, then remove from heat. Season with salt and stir in parmesan; set aside until ready to use.

Ready, Set, Cook! Hidden Valley Contest Entry. I love to make panini sandwiches for my family. The kids especially like this one because of the crunchy ranch topping on the outside. It make it very special. In fact it was so good they didn't seem to notice I slipped a "green" veggie (spinach) in there. I am always careful when cooking the panini, however, because if the heat is too high it will burn. I also love to use my panini maker that I got for Christmas but it doesn't get as much of a crunch as a regular pan does.

3 tablespoons olive oil, divided
1 small onion, sliced thin
1 red bell pepper, sliced thin
3 tablespoons shallots, diced
2 (8 ounce) boneless skinless chicken breasts
1/2 teaspoon salt, divided
1/8 teaspoon pepper
4 teaspoons Hidden Valley Original Ranch Seasoning Mix
1 cup mayonnaise
1/2 cup parmesan cheese, shredded
1 cup breadcrumbs (can use Panko- Japanese bread crumbs)
8 slices sourdough bread or 8 slices country style Italian bread, 1/2-inch thick
1 (6 ounce) package fresh spinach
4 ounces mozzarella cheese, shredded
2 tablespoons butter, room temperature

Steps:

  • Heat a nonstick skillet over medium-low heat. Add 1 tablespoons olive oil and onions; sauté for 10 minutes. Add bell peppers and shallots; cook another 5 minutes or until soft. Remove cooked onion/bell peppers to a bowl and cook chicken (see next step).
  • In the mean time cut each chicken breast in half. Place each piece between two pieces of plastic wrap and pound gently to ¼-inch thickness. Season each piece with salt and pepper. Add another tablespoon olive oil to skillet from above and cook 2-3 minutes on one side; flip over and cook another 2-3 minutes or until completely cooked through. Remove from heat and set aside.
  • In a small bowl combine Ranch mix and mayonnaise. Place breadcrumbs and Parmesan cheese on a pie plate. Take a piece of bread and spread a generous amount of mayonnaise/Ranch mixture on one side of each 8 pieces of bread. Dip the mayo/Ranch side of the bread into the bread crumb mixture, pressing to adhere. Place mayo side down onto a clean cookie sheet and top each of 4 slices with 1 tablespoons cheese, ¼ of the spinach, the cooked chicken, and a layer of cooked onion mixture. Top each with the remaining Mozzarella cheese and top with the other piece of bread (mayo mixture facing out).
  • Reheat the nonstick skillet over medium-high heat and add 1 Tablespoon butter. Place the sandwiches in the pan and place a foil lined heavy cast iron pan on top. Gently press and cook about 2-4 minutes per side. Repeat with remaining sandwiches. Cut in half and serve immediately.
  • Makes 4 servings.

1 1/2 lbs ground pork
4 poblano peppers
2 tablespoons ground cumin
1 tablespoon cayenne pepper
1 tablespoon chili powder
salt, to taste
1 tablespoon ground black pepper
2 shallots, minced
1/2 cup chopped green onion
1 (4 1/2 ounce) can green chilies
1/2 cup frozen corn, thawed
1 1/2 cups cooked rice
3/4 cup Hidden Valley® Original Ranch® Dressing
1/4 cup parmesan cheese
1/2 cup monterey jack cheese, plus additional for topping
1/2 cup plain fat free Greek yogurt
2 ripe avocados, seeded with flesh removed
2 teaspoons garlic powder
3 tablespoons chopped cilantro
2 tablespoons lemon juice
1/4 teaspoon ground cumin
1/3 cup Hidden Valley® Original Ranch® Dressing
1/8 teaspoon ground black pepper
1/4 teaspoon cayenne
salt

Steps:

  • Roast the poblano chiles over an open gas range or broil. Turn with tongs for even roasting, about 5 minutes each. Make sure you get the chiles blackened and blistered all over. Be careful not to overcook so they have shape to hold the stuffing when baking. Place poblanos in a sealed, gallon size plastic bag and cover with towel for about 15 minutes.
  • Meanwhile, cook ground pork until slightly browed. Add cumin, cayenne, chili powder, salt, pepper, shallots, green onions, green chilies and corn. Cook for additional minute. Cool slightly.
  • Preheat oven to 375 degrees. Mix the pork mixture with the rice. Add the HIDDEN VALLEY RANCH DRESSING and stir. Remove chilies from bag. Using a paring knife, gently rub the skin off of the flesh of each chile. Wipe the surface of the flesh with paper towels to remove the excess skin.
  • Slit each poblano lenghtwise. Stuff the pork and rice mixture into poblanos. Lay chilies in a 3x5 dish. Bake for about 35 minutes. Sprinkle with additional Monterey Jack cheese and heat for another 3 to 5 minutes, until cheese is melted. Serve with avocado ranch sauce.
  • For the sauce:.
  • Mash the avocados and mix in the rest of ingredients. Blend with a stick blender until smooth.

15 jalapeno peppers, halved and seeded
1 (8 ounce) package cream cheese
1 lb ground pork, crumbled, cooked and drained
1/2 cup parmesan cheese
1/4 cup Greek yogurt
1/4 cup finely chopped shallot
1 (1 ounce) package dry ranch dressing mix
1/2 cup cheddar cheese
2 tablespoons seasoned bread crumbs

Steps:

  • Cook chopped shallots and ground pork in large skillet, drain grease. Add cheeses and all other ingredients expect jalapenos and combine until well blended. Spoon mixture into pepper halves, fill completly. Bake for 20 minutes or until golden brown in a 350 degree oven.

16 ounces marinara sauce
1 lb ground chuck
1/2 lb ground pork
3/4 cup Italian seasoned breadcrumbs
1 shallot
1 egg
1/4 cup parmesan cheese
1/2 teaspoon salt
1 teaspoon dried parsley
1 teaspoon pepper
1 teaspoon oregano
1 teaspoon sweet basil
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder
6 ounces shredded mozzarella cheese
6 ounces cream cheese
3 slices bacon
1 (1 ounce) package Hidden Valley Original Ranch Seasoning Mix

Steps:

  • The marinara sauce may be purchased, but home made is better.
  • Preheat oven to 375°.
  • Put the sauce in a large saucier and turn the heat on low.
  • Chop the shallots, you want about 3/4 cup.
  • Grate the parmesean cheese.
  • Next make the meatballs by putting in a large bowl the chuck, pork, bread crumbs, shallots, egg, parmesean cheese, salt, parsley, pepper, oregano, sweet basil, red pepper and garlic powder in a big bowl.
  • Mix well.
  • Now make the filling.
  • Make sure the cream cheese is softened to room temperature.
  • Cook the bacon until crispy, drain on paper towels and crumble.
  • Next shred the mozarella,.
  • In a medium bowl put the mozarella, softened cream cheese, crumbled bacon, and hidden Valley Original Ranch Seasoning Mix.
  • Whip together with an electric mixer.
  • Il want to have about 1/4 cup of meat mixture per meatball, but what ever size you like is just fine.
  • Scoop out 1/4 cup meatball mixture, flattento a disc in the palm of your hand.
  • Spoon in the middle of the disc about 2 teaspoons of cheese mixture.
  • Form the meat disc around the cheese filling and repeat until all ingredients are used up.
  • Place the meatballs on a cookie sheet and bake for about 20 minutes or until browned, add to sauce and simmer for 15 minutes or so.
