GERMAN RED HERRING SALAD (ROTER HERINGSSALAT)
Pickled herring, apples, onions, pickles and red beets are covered in a luscious creamy sauce with a beautiful pinkish-red hue.

- In a small bowl, whisk together the pickle juice, mustard, oil, vinegar, salt and sugar until emulsified and the salt and sugar are dissolved. Stir in the whipping cream, sour cream, mayonnaise, mustard and dill.
- Place the diced herring, apples, beets, onions, and pickles in a large bowl.Pour the dressing over the herring mixture and carefully stir until thoroughly combined. Add salt and pepper to taste. If the salad is thicker than you prefer, add a little whipping cream. If you prefer the dressing thicker, add more sour cream and/or mayonnaise.
- To serve, lay some slices of boiled egg over a mound of herring salad with a sprig of fresh dill. You can also add some onions sliced into rings. Place the potatoes next to the salad. Alternatively, spread the herring salad on crusty bread.Can serve 4 as a side or main dish or more people as an hors d'oeuvres.

HERRING IN OATMEAL
This is a recipe that we had a lot when we were kids, it was a very popular dish and very cheap. we had ours with boiled potatoes, and a spoonful of the lard it was cooked in. That's all changed now as the lard wasn't good for your arteries. but we did like it. I live in Scotland and we had a lot of scandinavian recipes, as the fishermen traveled far and wide, and herring was in abundance sadly today it's a diferent story it's in very short supply now, and very expensive. You can just use the one kind of oatmeal if you like.

Steps:
- Dip the herring into the flour and coat both sides.
- Beat the eggs with the milk. Mix together both types of oatmeal on a large flat plate.Dip the herring into the egg and milk mixture, then dip into the oatmeal mixture to coat.
- Heat the butter and oil in a frying pan until the butter starts to brown. Put the herring into the pan skin side first. Cook for a couple of minutes on each side. Serve flesh side up garnished with parsley and lemon.

- Marinate the onion: Dice the onion, add into a small bowl, mix with vinegar (the onion should be completely covered with vinegar). Leave for 15 minutes.
- Cook the potatoes and eggs: Peel the potatoes and cut into 1-1.5 inch/3 cm cubes. Add to a pot with boiling salted water. Cook the potatoes for 6 minutes, then add the eggs and cook for 8 more minutes. Drain.
- While the potatoes and eggs are cooking make the dressing: Strain the onion, reserve the vinegar and add it into a medium jar or small bowl. Add the rest of the ingredients for the sauce. Season with salt and pepper. Shake the jar thoroughly to mix the ingredients or whisk the ingredients in the bowl until combined.
- Stir the potatoes with the dressing: Transfer cooked potatoes into a large serving bowl and immediately pour in the sauce (potatoes should be still warm, they will absorb the sauce), stir the potatoes with the sauce.
