HERBED ROMAINE SALAD WITH STRAWBERRIES

Herbed Romaine Salad with Strawberries image

Strawberries go well with tender herbs like mint and tarragon. Tossed with toasted pistachios, creamy feta, romaine lettuce, and a very light honey-lemon dressing, the berries add bright notes to a refreshing salad.

Provided by wp

Time 30m

Yield Makes 6 servings as a first course; 4 servings as a lunch course

Number Of Ingredients 11

1/2 cup raw (unsalted) pistachios
10 to 12 oz. romaine lettuce hearts, cored and roughly chopped
1/3 cup fresh tarragon, torn into small pieces
1/3 cup fresh mint leaves, torn into small pieces
12 ounces strawberries, hulled and quartered lengthwise
1/4 cup fresh lemon juice
2 teaspoons minced shallot (about 1 medium)
2 teaspoons honey
1/8 teaspoon salt
3 tablespoons mild olive oil
6 ounces good-quality mild feta cheese (see Notes), cut into triangles

Steps:

  • Preheat oven to 350°. Spread pistachios on a large baking sheet and bake until very lightly toasted (they should still retain some green), 8 to 10 minutes. Remove from oven and cool to room temperature.
  • In a large bowl, toss together lettuce, tarragon, mint, and half of the strawberries. In a small bowl, whisk together lemon juice, shallot, honey, and salt. Drizzle in olive oil, whisking constantly, until mixture is emulsified. Drizzle dressing over lettuce mixture and toss well.
  • Divide lettuce mixture among plates, then top with remaining strawberries, toasted pistachios, and feta triangles.

Categories     Lettuce Salads

Time 15m

Number Of Ingredients 11

1 small head of romaine lettuce
2 oz monterey jack cheese, shredded
1/4 c sliced almonds
1 c sliced strawberries
DRESSING:
2 Tbsp red wine vinegar
3 Tbsp granulated sugar
1/2 small clove of garlic, minced finely
1 dash(es) white pepper
2 Tbsp vegetable oil
1/8 tsp paprika

Steps:

  • 1. Clean romaine lettuce, chop and pat dry, place in large bowl. Add cheese, almonds and strawberries. Toss gently.
  • 2. Combine all dressing ingredients using a little jar or small bowl and refrigerate. Right before you eat shake or blend completely. Pour over prepared lettuce, etc. using just enough to your liking. Enjoy!
  • 3. Options: Use mozzarella cheese instead of Monterey jack. Sunflower seeds in place of almonds. NOTE: use dressing the same day as it does not keep well.
  • 4. All kinds of leafy lettuces can be used in this recipe. Red Leaf Lettuce, Bibb Lettuce, and for gardeners the wonderful Black Seeded Simpson in summer are great. Try others and decide which you enjoy the best!

HERBED ROMAINE SALAD WITH STRAWBERRIES AND FETA

Herbed Romaine Salad With Strawberries and Feta image

Fresh orange mint replaced standard variety of garden mint for a little different twist to the salad. *Fresh herbs only*, please! I don't know any reason why you couldn't substitute other seasonal berries in this salad: raspberries, blackberries, etc. From calgiant.com.

STRAWBERRY TOSSED SALAD

Strawberry Tossed Salad image

Meet the Cook: One reason I particularly like this recipe is that it's so versatile. I've served the salad with poultry, ham and pork all throughout the year and even used it to add color to the table at Christmas. Recently, when I brought this for a dinner at church, one lady asked if she could take home the little that was left for her husband's lunch the next day - and he very rarely eats salad or fruit. Right now, my husband and I are in the middle of building our retirement home out in the country. We have four grown children and five grandchildren. -Patricia McNamara, Kansas City, Missouri
