Garlic Lemon Tuna Pasta image

Garlic Lemon Tuna Pasta is a 10-minute meal loaded with Mediterranean flavor. You can make it with basic pantry ingredients - a meal the family will love!

8 ounces spaghetti (or other pasta)
2 tablespoons olive oil
3 garlic cloves minced
2 pouches 2.6 ounces tuna in olive oil
1 tablespoon lemon juice (plus zest)
Salt & pepper to taste
2 tablespoons capers
2 tablespoons fresh parsley chopped (divided)
Grated parmesan (for serving)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, then drain the pasta. Return to the pot to keep warm.
  • In the wide pan, heat the olive oil at medium heat. Then add the garlic and cook until fragrant, about 30 seconds. Stir in the tuna, lemon juice and zest, salt and pepper, and heat through for 1 minute.
  • Add the pasta, capers and 1 tablespoon chopped parsley, and continue to stir until the spaghetti is well coated. Add as much of the reserved pasta water as needed to thin out the sauce.
  • Garnish with remaining parsley and serve warm.

1/4 cup butter
2 garlic cloves, chopped
2 lemons, zest of
2 cups fresh breadcrumbs
1/2 teaspoon salt
1 cup cream
1/4 cup fresh lemon juice
500 g fettuccine
500 g tomatoes, seeded and chopped
1 (8 ounce) can tuna
1/2 cup parmesan cheese, grated
1/2 teaspoon pepper

Steps:

  • Melt butter and add garlic, cook for several seconds.
  • add 1/2 the lemon zest and all the breadcrumbs and cook, stirring constantly over medium heat till golden and crisp.
  • remove from heat and add salt. transfer to a plate. wipe pan clean.
  • combine cream, remaining lemon zest, and lemon juice in pan. bring to the boil and simmer for 3 minutes or until slightly thickened. remove from heat.
  • cook pasta and drain.
  • add cooked pasta to the sauce and warm through.
  • add tomatoes, tuna, parmesan cheese, parsley and pepper to taste. heat through.
  • serve sprinkled with the lemon crispy crumbs and extra parmesan.

150g wholemeal penne
1 large leek (200g), halved, and thinly sliced
1 tsp olive oil
160g cherry tomatoes, preferably on the vine
198g can sweetcorn, drained
75g ricotta
160g can tuna in spring water, drained
handful of basil, chopped, plus a few whole leaves to serve

Steps:

  • Boil the penne with the leek in a large pan of salted water following pack instructions, until al dente.
  • Meanwhile, heat the oil in a large pan over a medium-high heat and fry the tomatoes for a few minutes, until they start to burst and soften. Add the sweetcorn and cook for 2-3 mins to heat through. Drain the pasta and leeks, reserving a little of the pasta water. Tip the drained pasta and leeks into the pan with the tomatoes, then toss through the ricotta and tuna.
  • Season with plenty of black pepper. If you want to loosen the consistency, stir in some of the reserved pasta water along with the chopped basil. Serve scattered with the whole basil leaves.

½ cup sundried tomato
1 lemon, juiced
10 oz tuna, canned, drained
salt, to taste
pepper, to taste
2 cups whole wheat pasta, cooked according to package instructions
2 cups fresh spinach

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds, until fragrant.
  • Add the sun-dried tomatoes and lemon juice and cook for 1-2 minutes, until fragrant.
  • Add the tuna, salt, and pepper, and mix until thoroughly combined.
  • Add the pasta and spinach and cook for about 1 minute, until spinach starts to wilt.
  • Remove the pasta from the heat and serve.
