Categories     bread     Breakfast     Snack

Time 1h5m

Number Of Ingredients 13

1/3 cup salted butter, softened
2 cups ripe peaches, diced
1/2 cup + a little extra turbinado sugar (can sub granulated sugar)
2 large eggs
1 tsp vanilla extract
1/3 cup whole milk (can sub dairy free milk)
1.5 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/4 cup powdered sugar
1-2 tsp whole milk

Steps:

  • Preheat oven to 350 degrees. Dice the peaches into small bite size peaches. You may peel them if you want, but I did not.
  • In a large bowl, using a hand mixer, beat the softened butter and 1/2 cup turbinado sugar until combined. To this, add in an egg one at a time, beating them in until combined. Add in the whole milk and vanilla extract and beat until combined. Lastly, gently stir in the freshly diced peaches with a wooden spoon.
  • Using a sifter, add in the all purpose flour, cinnamon, baking powder, baking soda and a pinch of salt. Mix gently to combine with the wooden spoon, making sure you don't overmix!
  • Grease a 9x5 loaf pan or add parchment paper. Gently add the bread mix into the loaf pan. On top, add a generous sprinkle of turbinado sugar to ensure that you have a crunchy topping!
  • Bake at 350 for 50-55 minutes or until a toothpick comes mostly clean (a few crumsb are okay). Let it cool in the pan for 3-5 minutes. Remove and place on a wire cooling rack.
  • Once the bread has fully cooled down, mix 1/4 cup of powdered sugar and a tsp of milk (or more if needed) to make your powdered sugar glaze. If it's too thick, add more milk. Too thin? Add more powdered sugar!
  • Generously drizzle the glaze on top of the bread and serve! Best with a dab of butter and a drizzle of honey! Enjoy!

PEACH AND WHITE CHOCOLATE BREAD PUDDING WITH SCHNAPPS WHISKEY SAUCE AND CHANTILLY CREAM

Peach and White Chocolate Bread Pudding with Schnapps Whiskey Sauce and Chantilly Cream image

Terry Thompson-Anderson, author of "Texas on a Plate," was a guest on Martha Stewart Living Radio (Sirius channel 112). He shared his recipe for peach and white chocolate bread pudding with schnapps whiskey sauce and Chantilly cream.

Categories     Food & Cooking     Dessert & Treats Recipes     Puddings & Custards     Bread Pudding Recipes

Number Of Ingredients 12

8 ounces white chocolate, cut into small chunks
2 cups half-and-half
1/2 cup unsalted butter, softened
12 teaspoons ground cinnamon
10 ounces day-old croissants, cut into 1/2-inch pieces
3 eggs
3/4 cups sugar
3 cups fresh Fredericksburg peaches, peeled and chopped into bite-size pieces
1/2 cup toasted chopped pecans
1 tablespoon vanilla extract
Peach Sauce
Chantilly Cream

Steps:

  • Preheat oven to 350 degrees. Butter a 13-by-9-inch baking dish; set aside. In a 2-quart saucepan, combine the white chocolate, half-and-half, cinnamon, and butter. Cook over medium-low heat, stirring often, until smooth. Remove from heat and set aside.
  • Place croissant pieces in a large bowl and stir in the white chocolate mixture, blending well and breaking up the croissants. In bowl of electric mix, combine eggs and sugar; beat at medium speed until thickened, about 7 minutes.
  • Add the peaches, pecans, and vanilla; beat just to blend. Fold egg mixture into the croissants, blending well. Turn out into prepared baking dish and bake in preheated oven for 45 to 55 minutes, or until a knife inserted in center comes out clean. Set aside to cool.
  • To serve, slice the warm pudding into squares. Place a portion of the peach sauce in the bottom of each serving bowl and set a square of pudding in the center. Top with a large dollop of Chantilly cream.

  • Lightly spray the insides of two smaller loaf pans - I use these 8" x 4" loaf pans with 3/4-pound capacity, which is a slightly smaller version than the regular 8" x 4" loaf pans with a 1-pound capacity. But this slightly smaller size is my favorite - I've been baking with them "forever". Set prepared pans aside.
  • In large mixing bowl, stir together flour, baking powder, cinnamon, and salt. In a medium mixing bowl, beat eggs. Stir in sugar, oil, and vanilla.
  • Add egg mixture to dry ingredients, stirring until just moistened, taking care to not over mix. Fold in nuts and 2 cups of the peaches. Spoon batter into the prepared pans - and then add remaining 1/4 c. peach pieces to top of batter, pressing them in just a bit. Bake for 55 to 60 minutes, or until a wooden toothpick inserted near the center of each loaf comes out just barely clean. My 3/4-pound capacity pans are slightly smaller than a regular 8" x 4" size with a 1-pound capacity, so you may need to adjust baking time according to your own pan size. Cool in the pans on wire racks for 10 minutes. Then loosen edges with a bread knife and remove loaves from pans. Cool completely on wire racks. Wrap and store overnight for easier slicing.
