POTATO SAUSAGE CASSEROLE

- Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

This hearty casserole has become one of my family's favorites. It's easy to make and a delicious way to use sausage. I make it for brunch and often take it to potlucks.

- In a large skillet, cook sausage over medium heat until no longer pink; drain. In a large bowl, combine the soup, milk, onion, salt and pepper. , In an ungreased 11x7-in. baking dish, layer half the potatoes, soup mixture and sausage; repeat layers. , Cover and bake at 350° for 1-1/2 hours or until potatoes are tender. - In a large microwave-safe bowl, combine potatoes, 1 tablespoon oil and salt. Microwave, covered, on high for 6-8 minutes or until tender, stirring every 2 minutes., Meanwhile, in a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; remove with a slotted spoon., In same skillet, heat remaining oil over medium-low heat. Add apple and carrot; cook, covered, 5-7 minutes or until carrot is just tender, stirring occasionally. Return sausage to pan. Stir in sweet potatoes and seasonings; cook, covered, 10-12 minutes or until carrot is tender.

- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

- Preheat oven to 375°F.
- Spray a 9in square baking pan with cooking spray.
- In a med skillet over med heat, cook sausage until no longer pink, about 5 minutes.
- Place on paper towels to drain.
- Spoon sausage into prepared pan.
- Top with pepper and garlic, sprinkle with 1/2 of oregano and onion flakes.
- Place potatoes in a single layer over pepper.
- Pour wine or broth over potatoes.
- Sprinkle with paprika and remaining oregano and onion.
- Bake until potatoes are tender, about 1 hour.

- Preheat oven to 400ºF and spray a 9x13-inch baking pan with cooking spray.
- Combine all ingredients except smoked sausage in a large zipper type plastic bag,mixing well.
- Place ingredients from bag into prepared pan,bake uncovered for 30 minutes.
- Add sausage to vegetables mixing well (if desired at this point feel free to add more seasonings).

- 1. Preheat oven to 400°F. Spray 9 x 13 baking dish with garlic mist nonstick cooking spray.
- 2. Combine potatoes, onion, carrots, butter, salt, Mama's Meatball seasoning, salt, garlic powder, thyme, and pepper in prepared baking dish; toss to coat. Bake 30 minutes.
- 3. While vegetables are baking, prepare the sausage in your preferred manner. Once cooked through, slice into 1/4: slices.

- Heat oven to 375°F. Grease 13x9-inch pan.
- Cook ground sausage in 10-inch skillet over medium heat until browned. Remove with slotted spoon onto paper towel to drain. Remove all but 2 tablespoons of the drippings from pan. Add diced onion, and cook until translucent but not browned. Add sliced mushrooms and salt, and cook until mushrooms are softened and onions are caramelized. Remove from heat.
- In medium bowl, stir Bisquick mix and water until soft dough forms. Drop half of the dough by spoonfuls into pan. Dough will not completely cover bottom of pan.
- Spoon half of the pizza sauce over dough; sprinkle with half of the cheese, and scatter with half of the sausage mixture. Repeat layers with the rest of the dough, sauce, cheese and sausage mixture.
- Bake 25 to 30 minutes or until golden. Serve immediately.
