HEART HEALTHY OATMEAL PANCAKES
A favorite of our son, Mr. Picky Eater himself!! I'm on a low sodium diet so I substitute the baking soda with no sodium baking soda (I use Ener-G) but be sure to double the amount.

Steps:
- Mix the rolled oats and buttermilk together in a large bowl; allow to soak 15 minutes.
- Whisk the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt together in a separate large bowl.
- Beat the eggs and milk together in a separate small bowl; mix into the soaked oats. Stir the flour mixture into the oat mixture. If the batter seems dry, add milk about 1 tablespoon at a time until the desired consistency is achieved.
- Grease a skillet or griddle and place over medium heat. Ladle about 1/2 cup of batter per pancake onto your preheated cooking surface. Cook until the pancake is lightly golden brown, about 2 minutes, flip, and continue cooking to brown other side, another 1-2 minutes.

HEART HEALTHY OATMEAL
This is something that I've done for years in order to perk up my oatmeal without adding calories. It takes a few minutes, but is worth it. I came up with the idea when I was tiring of the taste of plain oatmeal.

Steps:
- Heat a medium skillet--I use cast iron--until it is medium hot to very hot.
- Put all of the oatmeal that you will be cooking in the pan.
- Stir constantly over medium high heat until oatmeal is just this side of dark brown. This gives it a nutlike flavor -- without the nuts and without the calories.
- Cook as per box instructions.
- You may add other cinnamon & sugar and/or raisins, but mind the calories.
HEARTY OATMEAL PANCAKES
"My husband and I are trying to eat more oatmeal for its health benefits, but we get tired of having a bowlful every day." Kathy Thompson of Glendale, Kentucky explains. "These moist and fluffy pancakes give us the good grains that we need...and still taste like a treat. We love them with turkey bacon on Sunday morning."

HEALTHY OATMEAL PANCAKES
This recipe is all over the Internet! They are yummy, easy & most of all, really healthy yet delicious. I did change it up a little, but here's the link to the original recipe: http://www.bodybuilding.com/fun/stella13.htm. Serving size is an estimate; I divided the recipe by a third for a one person meal. Enjoy!!

Steps:
- Heat milk or water until hot (if using water-I just used hot tap water). Add oats & set aside
- Mix remaining dry ingredients & add to oatmeal mixture
- Fold in egg whites and mix until well blended. I use my stick blender for a smoother batter; but that is optional! The batter is thick; depending on how long the oats have soaked you may want to add a little water to thin it out.
- Cook on a nice hot griddle!
- There are variations listed on the link provided above--you can add nuts, blueberries or protein powder! I am a "topper-" I spread natural peanut butter on top, sliced bananas & sugar free syrup!

HEALTHY OATMEAL PANCAKES
These wholesomely delicious pancakes are my very favorite. I've been making them for years since finding this keeper recipe in The Low Cholesterol Olive Oil Cookbook (Schlesinger & Ernest) 1990.

Steps:
- Lightly oil an electric frypan or pancake griddle with no-stick cooking spray and heat.
- Whisk (wet ingredients) milk, oil, and eggs together; combine remaining (dry) ingredients and add them to the wet ingredients; stir to combine all.
- Pour 1/4 cup of batter at a time onto hot griddle to form 5-6" pancakes; cook until surface of pancakes is bubbled; flip pancakes over and cook until both sides are light golden brown.
- NOTES: The ratio of white flour to whole wheat flour can easily be varied (example: 1 cup white with 1/2 cup wheat flour) to suit your family's preference. Also, you may opt to use two whole eggs instead of fussing with egg whites. And for this recipe, your choice of either quick-cooking or regular old-fashioned oatmeal will work just fine.
