TACO TURKEY MEAT LOAF
After buying a supersized package of ground turkey, I made this spicy taco turkey meat loaf using what I had on hand. It's now become a family favorite! I serve it for tailgating parties and it's delicious the next day for sandwiches. —Holly Battiste, Barrington, New Jersey

- Preheat oven to 350°. In a large bowl, combine the first 10 ingredients. Add turkey; mix lightly but thoroughly. Shape into two 7-1/2 x 4-1/2-in. loaves. Place in a greased shallow baking pan., Bake 1 hour. Mix together topping ingredients; spread over loaves. Bake until a thermometer reads 165°, 10-15 minutes longer. Let stand 10 minutes before slicing., Freeze option: Bake meat loaves without sauce. Securely wrap and freeze cooled meat loaves in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaves and place in a greased shallow baking pan. Prepare topping as directed; spread over meat loaves. Reheat meat loaf in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°. Let stand 10 minutes before slicing.

TACO TURKEY MEATLOAF
Ground turkey makes this meatloaf lighter and healthier; cheese and taco seaoning make it delicious. From betterrecipes.com. Again altered even further for calorie and fat content. You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds.

Steps:
- Mix together eggs, taco seasoning, black pepper, onion, garlic, tomato sauce, brown rice, bread crumbs and cheese.
- Add turkey and mix until thoroughly combined.
- Grease sheet pan with Pam
- Form two loaves of meat mixture on pan.
- Top each loaf with tomato sauce and cheese.
- Bake at 375 degrees for 1 1/4 hour or until meat thermometer registers 165 degrees.
- Let rest for 5 minutes before slicing.
HEALTHY TURKEY MEATLOAF
I created this recipe for a tasty healthy moist turkey meatloaf. This recipe is made with salt free seasonings. There is so much flavor you do not even miss the salt. My husband loves this dish served with mashed potatoes, creamed spinach and turkey gravy. Hope you enjoy!

Steps:
- 1. Heat extra virgin olive oil in a saute pan over medium heat, add mushrooms and celery, saute for 3 minutes, add shallots and saute for an additional 2 minutes. Add chopped garlic, saute for an additional 1 minute, add spinach, season with salt free seasonings (be generous), and pepper, saute until spinach is wilted. Remove from heat and let cool completely.
- 2. Melt butter in a saute pan, add bread cubes and saute until toasted a little, season with salt free seasonings (be generous), garlic powder, and pepper. Remove from heat and let cool completely.
- 3. Blend milk and egg together and set aside.
- 4. In a mixing bowl add bread, milk and egg and mix well, add spinach mixture and stir,add turkey and mix thoroughly with hands, add cheese, mix and form into a loaf pan.
- 5. Bake at 375 degrees for 1 hour.

- 2. Heat olive oil in a medium skillet over medium heat. Add onion and sauté until tender and translucent, about 5 minutes. Stir in garlic and let cook an additional minute or two. Remove from heat and let cool completely.
- 3. In a large bowl, combine onion and garlic with 1/2 cup salsa, eggs, green chiles, cilantro, Worcestershire, chili powder, cumin, paprika, salt and pepper. Add ground turkey, tortilla chips, beans and corn. Use your hands to combine, mixing just until all the ingredients come together, taking care not to over mix (over-mixing will make your meatloaf tough).
- 4. Transfer half the meatloaf mixture to the prepared baking sheet. Pat into a loaf shape. Use your fingers to make a slight indentation going down the middle. Top with cheese. Top with remaining half of meatloaf mixture and shape into a loaf. Top with remaining salsa.
