1 lb unsalted butter, room temperature
1 1/2 cups sugar
3 cups white flour
2 cups shredded sweetened coconut
1 cup sesame seeds
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 300°F.
  • Line baking sheets with parchment paper.
  • In a bowl beat butter and sugar on medium speed with an electric mixer until light and fluffy, about 2 minutes.
  • Add flour 1/2 cup at a time, mixing on low speed until well combined.
  • With a wooden spoon or your hands, stir in coconut, sesame seeds, and pecans.
  • Divide dough into thirds.
  • Roll into logs about 1 1/2-inches in diameter.
  • Wrap each log in plastic, and refrigerate until very firm, about 2 hours.
  • Using a sharp knife, cut logs into 1/4-inch thick slices.
  • Transfer to prepared baking sheets, about 1 1/2 inches apart.
  • Bake until edges are golden, 20-30 minutes.
  • Transfer sheets to a wire rack to cool.
  • Cool for 5 minutes on baking sheets before transferring cookies to wire racks to cool completely.

A low sugar, subtle little cookie with added health benefits: sesame, coconut, sunflower seeds and oats make this treat good for you! The recipe for this cookie developed from an idea for coconut halvah which became a need for a tea time treat. Now it's a favourite. The preparation time does not include chilling times.

1/2 cup fresh coconut, grated
1/2 cup sunflower seeds, raw and ground
1/4 cup tahini
1/4 cup sesame seeds, toasted
1/4 cup honey
1/2 cup rolled oats
1/4 cup whole wheat flour
1 egg
1 pinch salt

Steps:

  • Mix together coconut, sunflower seeds, sesame seeds, oats and salt.
  • Add tahini, honey and egg.
  • Mix in flour to form a firm dough, adding more flour if needed.
  • Roll into a sausage shape, about 1 1/2 inches in diameter.
  • Place in fridge for 30 minutes, or place in freezer for 10 minutes.
  • Cut in thin slices (just less than a half inch) and place on baking tray.
  • Bake at 350 degrees for 15 - 20 minutes, until lightly browned.
  • Cool on wire tray.

These heavenly bars are inspired by a much heavier sweet that I used to make at the dawn of my cooking: Sesame Dream Bars, from "Diet for a Small Planet" by Frances Moore Lappé. Coarsely grind the sesame seeds by pulsing them a few times in a food processor. Do not overprocess or you'll get butter; some whole seeds are fine.

4 ounces (1 stick) unsalted butter
1/4 teaspoon salt
3 1/2 ounces (1/2 cup) raw brown sugar or organic sugar
6 ounces (1 1/2 cups) whole-wheat pastry flour, sifted
1 ounce (1/4 cup) whole-wheat pastry flour
1/2 teaspoon baking powder
2 eggs
1/2 cup mild honey, like clover
1 teaspoon vanilla extract
1 1/2 ounces (1/2 cup, firmly packed) unsweetened shredded coconut
1 to 2 ounces (1/4 to 1/2 cup) sesame seeds, coarsely ground

Steps:

  • Make the cookie base. Butter a 9-by-13-inch pan and line with parchment. Butter the parchment.
  • Cream the butter with the salt and sugar. Add the sifted flour and blend together. Using your hands, press out the dough over the bottom of the parchment-lined pan in an even layer. Using a fork, make holes all over the surface of the dough (this is called docking). Cover with plastic wrap and refrigerate for 30 minutes. Meanwhile, preheat the oven to 350 degrees Fahrenheit.
  • Bake the cookie base for 20 minutes, until it is just beginning to brown. Remove from the heat and cool for at least 5 minutes before topping.
  • Sift together the flour and baking powder. Beat the eggs with an electric mixer or whisk until light and thick. Add the honey and vanilla and beat until well blended. Add the flour and baking powder and beat to blend. Add the coconut and sesame seeds and stir together. Spread in an even layer over the cookie base, scraping out every last bit with a rubber spatula. Place in the oven and bake 20 minutes, until the surface is just beginning to color. Remove from the heat and allow to cool before cutting into squares.

I had similar cookies from a bake sale and they were delicious. This is an approximate replication - might work with only 2 sticks of butter - they are very buttery!

1 1/2 cup(s) shredded coconut
3/4 cup(s) sesame seeds
1/2 cup(s) finely chopped pecans

Steps:

  • Beat butter and sugar on medium speed until light and fluffy.
  • Add flour 1/2 cup at a time until well mixed.
  • On low speed, or by hand, mix in the sesame seeds, coconut and pecans.
  • Divide dough in thirds and roll into logs about 1 1/2 inches in diameter. You can roll the logs in colored sugar if you like. Wrap in waxed paper. Chill for about 2 hours.
  • Preheat oven to 300ºF. Cut each log into 1/4 inch slices. Place 1 1/2 inches apart on baking sheets lined with parchment paper.
  • Bake for 20-30 minutes until cookies are just barely starting to brown. Leave on cookie sheet for a couple minutes and then finish cooking on wire racks.
