If you love cheesecake and pumpkin pie, you wll love this healthy, high protein version. My whole family loves this one! This is great around the holidays. Who said eating right had to be boring? Make sure you use Pumpkin PUREE, NOT pie filling since that has added sugar.

2 cups low-fat ricotta cheese
1 (15 ounce) can pumpkin puree (NOT pie filling)
1/2 cup sugar-free maple syrup
5 tablespoons Splenda granular, sugar substitute
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
3/4 cup vanilla protein powder
1 reduced fat graham cracker crust
1 cup Cool Whip Free (fat free, sugar free)

Steps:

  • preheat oven to 400f degrees.
  • in large bowl combine ricotta cheese, pumpkin, maple syrup, splenda, pumpkin pie spice, vanilla, and protein powder. mix well.
  • pour mixture into pie shell and smooth out with spoon or spatula
  • bake for 30 to 40 minutes until filling is set.
  • let cool for 15 minutes. Refrigerate for a least 2 hours before serving.
  • serve with a tbsp of the cool whip and enjoy!

Pumpkin, cream and cottage cheese, and protien powder make for a healthy, high protein delicious snack!

2 egg whites
5 ounces fat free cream cheese
2 scoops vanilla whey protein powder
1 cup fat-free cottage cheese
1 cup pumpkin puree
1/2 cup Splenda granular
1 teaspoon vanilla extract
nonstick cooking spray

Steps:

  • Preheat oven to 350 degrees.
  • In a blender, combine all ingredients and mix well.
  • Spray 8 mini-loaf tins with non-stick spray, and distribute batter evenly.
  • Bake for about 25-30 minutes.
  • When the bars are done, flip them out of the pan onto a sheet of foil, chill and store in the fridge.

  • In medium bowl combine graham cracker crumbs with melted butter and sugar; stir until thoroughly mixed. Press evenly into bottom of springform pan, use back of measuring cup to flatten. Bake for 8 minutes; remove from oven to cool before wrapping edges/bottom tightly in foil. Reduce oven temperature to 325ºF.
  • Meanwhile prepare the cheesecake filling; using paddle attachment of stand mixer or electric hand mixer, beat together cream cheese until smooth for about 2 minutes. Add in granulated sugar, greek yogurt, pumpkin and vanilla, beating again until completely smooth.
  • Add in eggs one at a time, mixing on low-medium speed. Then add in flour and pumpkin pie spice. Use large rubber spatula to scrape down the sides of the bowl as needed. Try not to overmix here. Stop mixing as soon as last egg is incorporated.
