My husband and some of his buddies are trying to eat healthier at work, so I had to come up with some sort of side that would be mostly empty calories for my husband. - 1. I did this in 2 batches, as it's a pot full until greens wilt. Place 1/2 cup broth in large stock pot, 1/2 the mushrooms, spinach, kale, onion and spices...Over medium heat, simmer until greens are wilted and onions and mushrooms are tender. Taste and season more if needed. Repeat or if you have a very large pot, you could make it all at once. It will shrink down to not near as much as you think it will be. I got about 12 - 1 cup servings. Can be stored in refrigerator and heated as needed.

CREAMED LACINATO KALE
This preparation is classic for a reason. Obviously, spinach is the usual green recruited for this dish, but I love using tender kale in its place. You can make in advance, then simply warm with the breadcrumbs and top with lemon juice just before serving. This should have a baked feeling, so the oven time is important to achieve the classic "steakhouse side dish" effect.

- Preheat the oven to 350 degrees F.
- Heat 1 tablespoon oil in a large braiser over high heat. When the oil begins to smoke, add half the kale to the pan. Season with salt and cook, stirring, until the leaves take on a deep green hue and lose 50 to 75 percent of their volume, 2 to 3 minutes. Transfer the kale to a large bowl with the spinach. Repeat with the remaining oil and kale, adding it to the bowl as done.
- Return the braiser to high heat and add the cream. Simmer the cream until it reduces to about 1 3/4 cups, about 5 minutes. Add the cream to the greens and stir to combine. Add the Parmesan, Gruyere, Worcestershire, chile flakes, nutmeg, lemon zest and juice and salt to taste. Return the greens to the braiser and top with the panko and a drizzle of oil. Bake until warmed, 12 to 15 minutes.
DAWN'S KALE SIDE DISH
A mixture of kale and spinach are cooked with onions and garlic, and then tossed with toasted cashews. Goes excellent with fish or chicken.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Combine the cashews and 1 tablespoon olive oil in a bowl; toss to coat the cashews in the oil. Spread onto a baking sheet.
- Toast the cashews in the preheated oven until golden brown and fragrant, shaking the baking sheet occasionally, 5 to 10 minutes. Watch carefully so they don't burn. Set aside.
- Heat the 2 tablespoons olive oil in a skillet. Cook and stir the onion in the hot oil until the onion softens, about 5 minutes. Stir the garlic into the onion, and cook for 1 minute more before stirring the kale into the onion and garlic mixture. Place a cover on the skillet and cook, stirring occasionally, until the kale softens, about 7 minutes. Stir the spinach into the mixture, season with the sea salt and white pepper, and continue cooking until the spinach wilts, about 3 minutes. Toss the cashews with the mixture to serve.

- Steam It. Steaming kale is a wonderfully gentle way to handle this tough green. Cut the kale as you want to serve it, set it in a colander or steamer over a pot of boiling shallow water, cover and cook until the kale is tender (about 5 to 10 minutes).
- Toss It in Salads. Kale salads can, indeed, be delicious. For those who like to chew a lot, just treat chopped kale like lettuce. If you find raw kale a bit too intense, give the leaves a nice massage first.
- Put It in a Smoothie. A handful or two of kale adds tons of nutrients to a smoothie. Green smoothies offer many flavor possibilities and you can take the bite out of kale with sweet fruits like avocado, blueberry, mango, and pear.
