the recipe on the Quaker Oats box with 1/2 less sugar and using EVOO instead of butter (no one will ever know until you tell them!) it is quick and easy to just smear the batter into a pan for bar cookies. can reduce oil to 2/3 cup. can soak raisins in bourbon for a more sophisticated taste. can substitute ground walnuts for 1/2 of flour base!

Steps:
- Preheat oven to 350.
- Beat together olive oil and sugars.
- Add eggs and vanilla; beat well.
- combine flour, soda, cinnamon and salt. Add to liquid and mix well.
- Stir in oats and raisins and mix well again.
- Drop by teaspoonfuls onto greased cookie sheet.
- Bake 10-12 minutes or until golden brown.
- Cool 1 minute on cookie sheet and then remove to wire rack.
- Makes 4 dozen.
- for bar cookies: bake 20-30 minutes in ungreased 13x9 inch baking pan (reduce heat to 325 degrees for a glass pan).

These little cookies are almost too healthy to even call a cookie! More like a nutritional supplement!!!

- 1.In a large bowl, mix all the dry ingredients together.
- 2.In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
- 3.Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
- 4.COOL the mix for 20 minutes in the fridge.
- 5.Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
- 6.Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
- 7.Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.
GLUTEN FREE OATMEAL RAISIN COOKIES
I have to give credit to Chelle_N for this recipe. I took a punt and replaced the flour in her recipe #99839 with gluten free flour and they turned out just great, and my kids love them. I have included the GF flour recipe first (first 4 ingredients). I didn't use as much sugar as her recipe said to use, and I left out the raisins 'cause my kids don't like them. They make for a reasonably healthy biscuit.

- Preheat oven to 375 F (190 C).
- In large bowl, cream together butter and sugars until smooth.
- Beat in the eggs and vanilla until fluffy.
- Stir together four, baking soda, cinnamon and salt.
- Gradually beat into butter mixture.
- Stir in oats and raisins.
- Place teaspoonfuls on cookie sheet. They will spread a little.
- Bake 8-10 minutes or until golden brown.
- Place on rack to cool.

- Preheat oven to 350 degrees. In a blender, process 1 1/2 cups oats into a fine meal. Whisk together ground oats, cornstarch, cinnamon, baking powder, and salt.
- In a large bowl, using a mixer, beat butter and sugars until light and fluffy. Beat in eggs and vanilla. With mixer on low, gradually add oat mixture, beating until combined. Fold in chocolate chips, raisins, and remaining 3 cups oats.
- In batches, drop dough in 2-tablespoonful mounds onto a parchment-lined baking sheet, 2 inches apart. Bake until cookies are golden brown at edges, 15 to 18 minutes. Let cool on sheet on a wire rack 2 minutes, then transfer to rack and let cool completely.
- Store in an airtight container, at room temperature, up to 5 days, or in freezer, up to 1 month.

- In a large bowl, whisk together almond flour, oats, baking soda, salt, and pumpkin pie spice. In a second bowl, whisk together olive oil, honey, egg, cashew butter, and vanilla.
- Pour 1/2 of liquid mixture into dry and stir a few times, then pour remaining in and whisk lightly until no dry streaks remain. Fold in raisins.
- Using a cookie dough scoop, scoop and put onto a parchment lined baking sheet. Bake for 11 minutes. Let cool on cookie sheet for 6-7 minutes. Really. :) They're quite tender when warm, but will firm up. Place cookies onto cooling rack to finish cooling. Enjoy!
