Healthier fish and chips image

Shallow frying the fish and baking rather than frying the chips makes our skinny fish and chips lighter so you can enjoy this delicious British takeaway classic without feeling too guilty. An easy, healthier way to enjoy a taste of British seaside!

4 medium potatoes, cut into thick wedges
sunflower oil
½ tsp paprika
100g white breadcrumbs
½ lemon, finely zested
2 tbsp plain flour
1 medium egg, beaten
4 x 125g sustainably sourced thick white fish fillets
to serve lemon wedges

Steps:

  • Heat the oven to 200C/fan oven 180C/gas 6. Toss the potato with 1 tbsp oil, paprika and some seasoning. Put on a baking tray and cook for 30 minutes, turning once, until golden and tender.
  • Mix the breadcrumbs and lemon zest, season then tip onto a plate. Put the flour on another plate and the egg in a shallow bowl.
  • Dust the fish in the flour, dip in egg, then coat in breadcrumbs. Heat 1 tbsp oil in a large non-stick frying pan and fry the fish for 2 minutes on each side until it is crisp and golden brown. Transfer the to a baking tray and cook on a shelf above the chips for 8-10 minutes depending on thickness. Serve with chips and lemon wedges.

Healthy fish and chips is a lightened up version of a Friday night fish supper. The flavour packed crumb coating is a great alternative to batter.

200g firm white fish
30g whole almonds
30g wholemeal breadcrumbs
½ bunch parsley
1 clove garlic, crushed
15g grated Parmesan
1 beaten egg, seasoned

Steps:

  • Heat oven to 200ºC/400ºF/Gas 6. To make the chips, peel the sweet and regular potatoes and cut into finger sized chips. Arrange the chips on a baking tray and drizzle with 2 tbsp olive oil, season well with salt and pepper, then roast for 20 mins until crispy.
  • Meanwhile, blitz the almonds in a small food processor, until roughly ground, then combine with the breadcrumbs, parsley, garlic, Parmesan and beaten egg.
  • Spread the bread topping over the fish fillet and bake in the hot oven for 15 mins. Pop under the grill for a few mins if the topping needs to crisp up a little more.
  • Serve the cooked fish with the chips and your choice of ketchup, mayo, or tartare sauce.

450g potatoes , peeled and cut into chips
1 tbsp olive oil , plus a little extra for brushing
2 white fish fillets about 140g/5oz each
grated zest and juice 1 lemon
small handful of parsley leaves, chopped
1 tbsp capers , chopped
2 heaped tbsp 0% Greek yogurt
lemon wedge, to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Toss chips in oil. Spread over a baking sheet in an even layer, bake for 40 mins until browned and crisp. Put the fish in a shallow dish, brush lightly with oil, salt and pepper. Sprinkle with half the lemon juice, bake for 12-15 mins. After 10 mins sprinkle over a little parsley and lemon zest to finish cooking.
  • Meanwhile, mix the capers, yogurt, remaining parsley and lemon juice together, set aside and season if you wish. To serve, divide the chips between plates, lift the fish onto the plates and serve with a spoonful of yogurt mix.

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Line a large rimmed baking sheet with foil and generously coat with nonstick spray. Set aside.
  • Add the buttermilk and 1 teaspoon of the OLD BAY to a large ziptop bag and mix to combine. Add the fish and tightly seal. Refrigerate for 20 minutes.
  • Meanwhile, cut the potatoes in half lengthwise. Then, cut each half into thirds, also lengthwise, so that you have 6 wedges total per potato. Place the potato wedges in a large bowl. Top with olive oil, garlic, and 2 teaspoons OLD BAY. Toss to coat, then spread in an even layer on the prepared baking sheet, discarding any liquid that collects at the bottom of the bowl.
  • Bake for 25 minutes, turning once halfway through. Remove from the oven and push the potatoes to the outside edges of the baking sheet.
