Hazelnut and Arugula Pesto image

Tweak the ingredients of classic pesto to try this arugula-hazelnut version.

Number Of Ingredients 8

1/3 cup lightly toasted hazelnuts
3 cups loosely packed arugula
1 teaspoon chopped garlic
Kosher salt
1/4 cup coarsely grated Parmesan
1/4 cup coarsely grated Pecorino-Romano
1/2 cup extra-virgin olive oil
1 teaspoon lemon zest

Steps:

  • Put the hazelnuts in a food processor and pulse until finely ground. Add the arugula, garlic and 1/4 teaspoon salt and pulse until finely chopped. Add the Parmesan and Pecorino-Romano and pulse to combine. With the food processor on, slowly pour in the oil and process until combined. Transfer to a bowl and stir in the lemon zest.

6 small carrots (8 ounces), peeled and coarsely chopped
1/2 cup toasted whole hazelnuts, plus 2 tablespoons, chopped, for serving
1 small clove garlic
1/2 cup grated Pecorino Romano (2 ounces)
Coarse salt
1/4 cup extra-virgin olive oil, plus more for drizzling
1 pound orecchiette

Steps:

  • Combine carrots, whole hazelnuts, garlic, and cheese in the bowl of a food processor; season with salt. Pulse until coarsely pureed. With motor running, slowly add oil, processing to a paste.
  • Bring a large pot of water to a boil; add salt. Cook pasta until al dente, according to package instructions. Drain; transfer pasta to a bowl. Add pesto and toss to coat evenly. Drizzle with oil, top with chopped hazelnuts, and serve immediately.

Number Of Ingredients 9

1 garlic clove, peeled
1/2 cup hazelnuts, toasted, husked (about 2 ounces)
1/2 cup coarsely chopped fresh basil
5 tablespoons extra-virgin olive oil, divided
1 1/2 cups whole-milk ricotta cheese (from one 15-ounce container)
3 tablespoons fresh lemon juice
1 1/2 teaspoons (packed) finely grated lemon peel
3 tablespoons freshly grated Pecorino Romano cheese
Fine sea salt

Steps:

  • With processor running, drop garlic clove into machine and blend until finely chopped. Add hazelnuts, basil, and 2 tablespoons olive oil; process until hazelnuts and basil are finely chopped. Add ricotta cheese, lemon juice, lemon peel, and remaining 3 tablespoons olive oil; process until well blended. Transfer mixture to small bowl and stir in Pecorino Romano cheese. Season to taste with sea salt and freshly ground black pepper. DO AHEAD Can be made 2 days ahead. Cover and refrigerate.

ARUGULA-BASIL PESTO WITH PINE NUTS, PARMESAN AND RICOTTA

1/3 cup pine nuts
1 1/2 cups arugula
1 1/2 cups basil
Kosher salt
1/2 cup grated parmesan cheese

1/4 to 1/2 cup ricotta cheese (optional)

Steps:

  • Toast the pine nuts in a dry skillet until lightly browned; let cool. Pulse in a food processor until finely ground.
  • Add the arugula, basil and 1/4 teaspoon salt and pulse until finely chopped.
  • Add the parmesan and pulse to combine.
  • Slowly pour in the olive oil, pulsing to incorporate. Transfer the pesto to a bowl and stir in the ricotta. You'll have about 1 cup pesto; use about 1/2 cup for 1 pound pasta.

350g tagliatelle
80g pack flat-leaf parsley
100g toasted hazelnut
50g parmesan (or vegetarian alternative), grated
zest and juice 1 lemon
100ml olive oil

Steps:

  • Cook the pasta in salted, boiling water according to pack instructions.
  • Put the parsley, hazelnuts, Parmesan and lemon zest and juice into a food processor and whizz to a paste. With the motor still running, gradually drizzle in the olive oil. Season, if you like, with salt and pepper.
  • Drain pasta, return to pan and stir in pesto. Divide pasta between serving bowls and serve.

3/4 cup fresh basil
1/4 cup fresh parsley
1 garlic clove
1/4 cup olive oil
1 cup ricotta cheese
1 lb fettuccine, cooked (or other pasta)
1 pint cherry tomatoes, stemmed and halved
parmesan cheese or romano cheese, grated

Steps:

  • In a food processor mince basil, garlic and parsley. Add oil through food tube and process for 10 seconds or until thick.
  • Add ricotta cheese and process using on/off turns until blended.
  • Pour pasta in serving dish and pour pesto over and then top with tomatoes.
  • Sprinkle with grated cheese.
  • Serve with grated cheese.
