HAZELNUT COCONUT BALLS (SERBIAN RAFAELO KUGLICE)
I almost hesitated putting "coconut" in the title, because I do not like coconut myself. In fact, no one in my family does. But these cookies are quite a treat. So easy to make, and each one has a toasted hazelnut in the center of the coconut ball. What a great, tasty combination! Try them. You won't be disappointed.

Steps:
- If you haven't purchased toasted, peeled hazelnuts, bake in 300 degree oven until the skin (peel) starts to fall off. If all of the peels do not come off entirely, that is OK.
- Make a thick syrup by cooking the water, butter, unsweetened coconut (2 1/2 cups) and sugar.
- Add the powdered milk to this mixture. Mix well, so that there are no lumps.
- Allow two hours to cool. (To speed up this process, I pop this in the refrigerator).
- Around each toasted hazelnut, put a little of the cooled mixture, forming them into balls, so that the hazelnut is in the center.
- Roll each ball in the remaining coconut.
- Recipe makes 60 - 100 balls, depending on the size.

I'm not exactly a "coconut" person, but when I had one at a friend's house, let me tell you,I became one pretty quickly! Not only is this double delish,they are only 112 calories and no fat!! I became one pretty quickly! Get your ingredients ready so you can launch a few of these on the 4th of July! I always take my things out of the original boxes, etc. for creating space in my kitchen, so I don't have the net weight, but I do have one more envelope left. The individual packet is 8.55oz. each. I will check on the box when I go to the store and make the proper adjustments. Once you've made and tried one or two of these, you're not going to care about ounces! lol

- Fill a martini shaker halfway with ice (preferably crushed). Combine cocoa with 2 oz. hot water, and mix well. Then add 2 oz. cold water, and pour the mixture into the martini shaker. Add the vodka, syrup and Reddi-Wip, and cover the top of the shaker. Shake for about a minute, or until trhe liquid is cold. Then strain into 2 martini glasses. Enjoy!

- Soften coconut - you can use the microwave, or a double boiler, or submerge your container in hot water. In a very warm house it might be soft enough already!
- Stir in peppermint extract and cocoa powder until thoroughly mixed. Taste as you go - I didn't measure how much I used so this is an estimate.
- Pour into candy molds, mini muffin tins, ice cube trays, very small cups, or whatever else you need to get the shape you'd like.
- Refrigerate or freeze until solid, and store in the refrigerator.

Steps:
- Blend with mixer margarine, milk and sugar.
- Stir in coconut by hands but leave about 50 grams for decorating.
- Refrigerate for 20 minutes.
- Make balls of dough and roll them over left coconut.
- If you like, you can place pealed hazelnut in center of each ball.

The kids gave it this title because I think they were surprised they like it so much. I use a fork, but have extra taco chips around for scooping.

- Preheat oven to 350 degrees.
- Cook beef and add taco seasoning.
- Mix both cans of refried beans with the jar of salsa, set aside.
- Layer the bottom of a 13" x 9" (lasagna) pan with taco chips.
- Place the cooked ground beef on top of the taco chip layer.
- Add any remaining liquid to the bean and salsa mixture, mix together.
- Place this mixture over the ground beef.
- Cover with aluminum foil and bake for 30-40 minutes in preheated oven.
- Uncover, crumble taco chips and cheese over the top and bake for another 5-10 minutes.
- Enjoy!

These light and airy balls of hazelnuts are just like the Ferrero Rocher chocolates but without the chocolate. I know that will offend some people - no chocolate, huh! These are good neverless.

Steps:
- Using a blender or coffee grinder, reduce the hazelnuts to dust or very fine pieces.
- Lightly grease cookie sheet(s). Preheat oven to 300°F.
- Beat the egg whites until frothy.
- Add about 2 tablespoons of the sugar to the egg whites, whipping well after each addition.
- Once all the sugar is added, continue beating the meringue until stiff peaks are formed.
- Fold the hazelnut dust into the mixture and tehn make balls of the mixture that are about 1/2 inch in diameter. Place on the cookie sheets.
- Bake at 300F for 25 minute When done, remove from cookie sheet to cooling rack with spatula.

- Pour the remaining milk into a pot and bring to boil on medium. As it starts to boil, bring the temperature down to the lowest setting, and add in the pudding mixture. Mix thoroughly and frequently until pudding forms (about 10 minutes). Turn heat off and let cool.
- When pudding is lukewarm, cut the butter up and add in. Follow this up with 7 ounces of shredded coconut flour (flakes). Continue stirring everything until you get one smooth, thick, sticky mass. Transfer to fridge and cool down completely (30 minutes).
- Pour 4 ounces of shredded coconut in a bowl. Take Raffaello mass out of the fridge and form balls the size of a golf ball or smaller (smaller are better). Put an almond into each ball, and then dip each in shredded coconut.
