TERIYAKI MEATLOAF

1 tablespoon sesame oil, plus more for greasing
2 cups panko breadcrumbs
1 cup milk
Kosher salt and freshly ground black pepper
2 pounds ground beef
4 large eggs
1/2 cup soy sauce
1/4 cup freshly toasted sesame seeds
1 tablespoon mirin
1 tablespoon fish sauce
1 cup plus 2 tablespoons teriyaki sauce
1 cup furikake
4 tablespoons unsalted butter

Steps:

  • Preheat the oven to 400 degrees F. Grease two 2-quart rectangular baking dishes with some sesame oil.
  • In a small bowl, add the panko and milk and sprinkle with salt and pepper so all the panko has a chance at absorbing. In another bowl, add the meat, eggs, soy sauce, sesame seeds, mirin, fish sauce, 1 cup teriyaki sauce and 1 tablespoon sesame oil. Add the panko mixture and gently fold everything together. This is where a lot of folks mess up. DO NOT OVERMIX. Just combine gently. Split the meat mixture between the 2 prepared baking dishes, spreading evenly from edge to edge. Bake for 45 minutes.
  • Top the meatloaves with the furikake and set aside to cool slightly. Meanwhile, add the butter to a small saucepan and heat until browned, about 2 minutes. Stir in the remaining 2 tablespoons teriyaki. Slice the meatloaves and top each slice with the teriyaki butter sauce.

I don't make your traditional dry, flavorless meatloaf, blah. I like food with wonderful aroma and delicious melt in your mouth flavor. My whole family loves this recipe. I usually make homemade mashed potatoes, a creamy mac and cheese, and garlic green beans to go with it, oh and some dinner rolls. Enjoy!!!

MEATLOAF INGREDIENTS:
2 lb ground beef
2 pkg townhouse crackers crumbled
3 eggs
1/4 c teriyaki sauce
1 1/2 tsp mustard, spicy brown
2 tsp seasonal salt (i use mccormicks due to it is not completely salt)
1 onion, chopped
1/2 c ketchup
1/4 c worcestershire sauce
1 tsp garlic powder
HOMEMADE BARBEQUE SAUCE ~
2 Tbsp brown sugar, lightly packed (heaping tablespoons)
1 1/2 c ketchup
1 1/2 Tbsp mustard, spicy brown
1/4 c worcestershire sauce
1/4 c teriyaki sauce

Steps:

  • 1. Preheat oven to 300 degree's. Use non-stick cooking spray and coat a deep dish baking pan. Mix all meatloaf ingredients thoroughly by hand (make sure hands are clean, or you can wear gloves if you had prefer to). If it is too dry or too stiff add a little more ketchup, teriyaki, spicy brown mustard, and Worcestershire. (I usually just add a little at a time so as to not over do it).
  • 2. Place meatloaf in baking pan, I usually shape it to form something similuar to a football but not completely, and about 2-3 inches thick throughout, place in preheated oven and let cook about 1 1/2 hours, checking it periodically in between due to some ovens tend to cook faster or slower than others.
  • 3. While meatloaf is cooking you can mix up and set aside the homemade barbeque sauce for it. Combine all sauce ingredients, whisking well to help break up the brown sugar. Taste test the sauce, if it taste to sugary, add more ketchup and the other ingredients until it is perfect for your taste. Set aside till meatloaf is almost done. Also get ready any side dishes you plan to have with it. Early prep of some items makes it easier to get it all done at the same time.
  • 4. About 1/2 hour before meatloaf is done, remove from the oven and drain off any grease or fat that has cooked out of the meat, spread the barbeque sauce across the top of the meatloaf. Place back in the oven for the remaining 30 minutes.
  • 5. Prepare the sides that you like to have or use the ones I described. Hope you and your family enjoy it.

HAWAIIAN BEEF TERIYAKI STIR-FRY BOWL

1 cup water
¼ cup pineapple juice
5 tablespoons brown sugar
1 tablespoon tamari
1 clove garlic, grated
½ teaspoon ginger paste
⅛ teaspoon onion powder
1 tablespoon tapioca flour
1 (8 ounce) thinly sliced carne asada (beef steak)
1 tablespoon grapeseed oil
1 pinch red pepper flakes
1 red bell pepper, cut into strips
1 green bell pepper, cut into strips
1 small yellow onion, quartered and sliced
2 medium (blank)s carrots, sliced diagonally
14 ounces refrigerated chow mein noodles
1 teaspoon everything bagel seasoning
1 tablespoon chopped green onion, or to taste

Steps:

  • Mix water, pineapple juice, brown sugar, tamari, garlic, ginger paste, and onion powder together in a resealable zip-top bag. Reserve 1/2 cup marinade, add tapioca flour to reserved marinade and set aside. Cut beef into 1-inch pieces; add to the marinade in the bag, seal the bag, and refrigerate for 45 minutes.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil; add red pepper flakes and sirloin pieces, discarding marinade. Saute until browned, 5 to 7 minutes.
  • Place bell peppers, onion, and carrots in a steamer bucket. Place bucket on top of meat. Hit Cancel.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Carefully remove vegetable bucket. Set aside.
  • Switch to Saute function and add noodles. Pour in the reserved marinade with tapioca; stir until sauce is thickened. Add in vegetables. Toss to combine. Serve immediately in bowls; top with everything bagel seasoning and garnish with green onion.

Steps:

  • In bowl, combine beef, egg, breadcrumbs, ginger, garlic, soy sauce and 1/2 tsp. oil. On foil-lined baking sheet, shape into loaf. Drizzle with half the teriyaki sauce and bake at 375 degrees , 20 minutes. In bowl, toss beans with remaining oil; season. Top meat loaf with remaining teriyaki sauce and surround with beans. Bake until meat loaf edges are browned and beans are tender, 20 minutes.

So I have a new item on my stockpile list: Crushed Pineapple. That way, I can make this any time I want. Because I will be making it often. I'm always trying out new recipes and mix-n-match concepts with the food that I have on hand and what's on sale at the grocery store. We have a very small "regular rotation" of recipes because of this...but this meatloaf is being added to the regular rotation. I'm so glad that I doubled this recipe...I doubled it so that I could make a regular loaf pan of meatloaf, and muffin tin meatloaves as well. Huge. Huge. Huge hit! The leftovers went into the freezer and made for quick and easy lunches. Below you'll find the doubled recipe...cut it all in half if you just wish to make 1 meal's worth. (But I highly recommend making extra to freeze!) (NOTE: I tagged this recipe as Gluten Free...just sub the regular bread crumbs for gluten free bread crumbs.)

1 (12 ounce) can crushed pineapple, drain well (reserve the juice)
1 cup breadcrumbs or 1 cup gluten free breadcrumbs
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 cup pineapple juice
2/3 cup ketchup
2/3 cup brown sugar
green beans (optional)
corn (optional)
French fries (optional)
mashed potatoes and gravy (optional)
baked beans (optional)

Steps:

  • Preheat oven to 375°F.
  • In a large mixing bowl, combine the ground beef, eggs, drained pineapple, bread crumbs, salt, and pepper. Add half of the mixture to a 9 x 5-inch loaf pan, and the other half divided into 12 muffin tins. (Or put the other half into another 9 x 5-inch loaf pan.).
  • Bake in the preheated oven for 1 hour.
  • Meanwhile, whisk together 1/2 cup of the reserved pineapple juice with the ketchup and brown sugar. After 1 hour of cooking, pour the sauce over the top of the meatloaf and mini-loaves and bake for another 10-15 minutes.
  • Prepare preferred side dishes.
  • Serve Hawaiina Meatloaf with sides.
  • TO FREEZE: Let come to room temperature, slice into meal size slices, and then place into plastic freezer baggies and place flat into the freezer. Reheat in the microwave when you wish to serve again.

1 tablespoon minced garlic

1/2 lb ground pork
1 egg
3 tablespoons teriyaki sauce
4 pieces toast (torn in small pieces)
6 slices bacon
3 rings pineapple

Steps:

  • pre-heat your oven to 325 degrees.
  • dice veggies.
  • heat a large skillet on med-high and add olive oil, onion, mushrooms & garlic stirring every few minutes for 10 minutes, let cool.
  • get a big mixing bowl and add meats, egg, toast, pineapple and teriyaki sauce; add sautéed veggies once cool and mix thoroughly.
  • in the middle of a big casserole dish form mixture into a loaf shape leaving room on all sides & patting to make sure that the loaf is packed nicely.
  • top with bacon slices and bake for 1 hour 15 minutes or until brown.
  • you can top with pineapple rings.

  • Combine all meat loaf ingredients.

  • Pour off any grease, top with 1/4 cup glaze and bake 5 minutes.
  • Let sit 5-10 minutes before slicing and serve with remaining glaze.
  • Glaze: Combine cornstarch and water.
  • Add remaining ingredients to a small sauce pan and bring to a boil.
  • Add the cornstarch mixture and stir until thickened.
