1 1/4 cups water
2 tablespoons butter
1 (6.2-oz.) pkg. fast-cooking long-grain and wild rice mix (with seasoning packet)
1/2 cup pineapple preserves
1 lb. cooked kielbasa, halved lengthwise, cut into 1-inch slices
1 medium onion, finely chopped
1 medium green bell pepper, cut into 3/4-inch pieces
1 medium red bell pepper, cut into 3/4-inch pieces
1 (8-oz.) can pineapple chunks in unsweetened juice, undrained

Steps:

  • Heat oven to 375°F. In small saucepan, bring water and butter to a boil.
  • In ungreased 2 1/2-quart casserole, combine all ingredients including contents of seasoning packet and boiling water; mix well. Cover.
  • Bake at 375°F. for 40 to 45 minutes or until rice is tender. Let stand 10 minutes before serving.

I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

1 tablespoon vegetable oil, or more to taste
1 (16 ounce) package Polish sausage, or to taste, cut into 1-inch squares
1 large onion, thinly sliced
1 large green bell pepper, cut into 1-inch squares
¾ fresh pineapple - peeled, cored, and cut into chunks
2 tablespoons cornstarch
½ cup pineapple juice, or more to taste
⅓ cup packed brown sugar, or to taste
2 tablespoons cider vinegar
2 tablespoons soy sauce
2 teaspoons minced garlic

Steps:

  • Heat oil in a large skillet over medium heat. Cook and stir sausage, onion, and green bell pepper until vegetables start to become tender, about 8 minutes; add pineapple and cook, stirring occasionally, until the pineapple is hot, about 5 minutes more.
  • Beat pineapple juice and cornstarch together in a bowl using a whisk. Stir brown sugar, cider vinegar, soy sauce, and minced garlic with the pineapple juice until the sugar dissolves into the liquid; pour over the sausage mixture and cook until the sauce thickens, 5 to 8 minutes.

Everyone in Hawaii has their own version of fried rice. This is my own version of fried rice that the locals ate in Hawaii.

1 ½ cups uncooked jasmine rice
3 cups water
2 teaspoons canola oil
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
½ cup sliced Chinese sweet pork sausage (lup cheong)
3 eggs, beaten
2 tablespoons canola oil
1 (8 ounce) can pineapple chunks, drained
½ cup chopped green onion
3 tablespoons oyster sauce
½ teaspoon garlic powder

Steps:

  • Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let the rice cool completely.
  • Heat 2 teaspoons of oil in a skillet over medium heat, and brown the luncheon meat and sausage. Set aside, and pour the beaten eggs into the hot skillet. Scramble the eggs, and set aside.
  • Heat 2 tablespoons of oil in a large nonstick skillet over medium heat, and stir in the rice. Toss the rice with the hot oil until heated through and beginning to brown, about 2 minutes. Add the garlic powder, toss the rice for 1 more minute to develop the garlic taste, and stir in the luncheon meat, sausage, scrambled eggs, pineapple, and oyster sauce. Cook and stir until the oyster sauce coats the rice and other ingredients, 2 to 3 minutes, stir in the green onions, and serve.

1 lb ground pork sausage
5 eggs, beaten
3 tablespoons vegetable oil
1/2 head cabbage, cored and shredded
3 carrots, chopped
6 cups cooked white rice, cold
1/4 cup soy sauce (to taste)
1 (14 1/2 ounce) can bean sprouts, drained
1 (6 ounce) package frozen green peas, thawed
ground black pepper
3 green onions, chopped

Steps:

  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and remove sausage from the pan. In the same pan, using the remaining coating of grease from the sausage, scramble the eggs, stirring frequently until cooked through. Set aside.
  • Heat the oil in a very large skillet or electric skillet over medium-high heat. Stir fry the cabbage and carrots just until the cabbage has wilted. Add the cold rice, and fry, stirring so that there are no clumps.
  • Mix in the sausage and pour in some soy sauce. Stir in bean sprouts, peas, and eggs, mixing well so there are no big chunks of egg. Season with pepper, and stir in green onions just before removing from the heat.
  • Adjust soy sauce to taste, and serve.

  • Broiling is the healthier approach, allowing some of the fat to drain off and is an easy way to cook a large batch fairly easily. Watch closely because it goes from perfect to burned quickly. I would guess about 5 minutes on the first side and 3 minutes on the second side.
  • Crack the 8 eggs into a medium-size bowl. Add the soy sauce and milk or cream and whisk briskly. They will have just a tinge of brown in their color. If they are too brown, you've probably overdone the amount of soy and they will be too salty. The amount of soy I have suggested is a guideline, adjust to your liking.
