- Mix pork, panko, onion, cilantro, and 1 1/2 teaspoons salt. Form into 12 balls. Chill 1 hour or up to overnight.
- Heat oil in a large skillet over medium-high. Add meatballs; cook turning occasionally until browned all over, about 7 minutes. Remove meatballs.
- Clean out skillet, return to medium-high. In a small bowl, whisk together pineapple juice, vinegar, cornstarch, and cayenne. Add to skillet; bring to a gentle boil. Return meatballs to pot, cook, turning a few times, until sauce is reduced and meatballs are cooked through, about 5 minutes. Remove from heat. Add pineapple chunks; toss to coat. Serve with cilantro and serrano pepper.

Steps:
- Drain pineapple, saving juice.
- Add enough water to juice to measure 1 and 1/4 cups. Set aside.
- Place pineapple, sweet potatoes, and sausage in 8x8x2 inch casserole dish.
- Combine sugar, cornstarch, and salt in saucepan. Gradually add pineapple juice/water, and stir until blended.
- Cook, stirring constantly, on med/low heat until it thickens and comes to a boil.
- Boil for 1 minute, stirring constantly.
- Remove from heat and add butter until melted.
- Pour over sausage mixture in casserole dish.
- Cover and bake 35-40 minutes at 350°F.
- Serve over rice.

I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

- Bring rice and 2 cups water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a large, shallow baking sheet.
